Ingredients

1/4 cup butter, melted
2 tablespoons lemon juice
1 package (11.4 ounces) frozen breaded fish sticks
2 tablespoons mayonnaise
6 hot dog buns, split
Shredded lettuce, chopped onion and chopped tomatoes, optional

Steps:

In a shallow bowl, combine butter and lemon juice. Dip fish sticks in butter mixture. Place in a single layer in an ungreased baking pan., Bake at 400° for 15-18 minutes or until crispy. Spread mayonnaise on bottom of buns; add fish sticks. Top with lettuce, onion and tomato if desired. Replace bun tops.

This is an incredibly easy sandwich to make. I never thought of it before today when I was making my son some fish sticks, and he said he wanted it on a sandwich. Voila!

Ingredients

4 cooked frozen fish sticks
2 slices bread
2 slices cheese (I used pepper jack, but any flavor will do)
margarine or butter

Steps:

Cook 4 fish sticks according to the package directions.
Butter two slices of bread (like you would a grilled cheese).
Put the butter side down on a heated skillet.
Top each slice of bread with a slice of cheese.
When the bread starts to brown, put the fish sticks on top of one of the slices, and put the other slice on top of that, cheese side down (like a grilled cheese).
When the sandwich is browned to your liking, remove from skillet, let cool, then slice in half.
