SALT-BAKED FISH WITH LEMON-OLIVE RELISH

Salt-Baked Fish with Lemon-Olive Relish image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h50m

Yield 6 to 8 servings

Number Of Ingredients 9

2 2 1/2- to 3-pound whole red snappers, striped bass or black sea bass, scaled and gutted (fins and gills removed)
Freshly ground pepper
1 bunch fresh parsley
1/2 cup fennel seeds
2 3-pound boxes kosher salt (about 17 cups)
Grated zest of 2 lemons, plus 3 tablespoons lemon juice
3 cups egg whites (about 24 ounces)
1/3 cup Castelvetrano or other sweet green olives, pitted and finely chopped
1/2 cup extra-virgin olive oil

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 450 degrees F. Rinse the fish inside and out and pat dry with paper towels. Season inside and out with pepper. Finely chop 2 tablespoons parsley and set aside. Divide the remaining parsley between the fish cavities.
  • Toast the fennel seeds in a dry medium skillet over medium heat until golden, about 4 minutes. Grind the toasted fennel seeds in a spice grinder or with a mortar and pestle; transfer all but 1 tablespoon to an extra-large bowl. Add the salt and lemon zest, then stir in the egg whites until the mixture is the consistency of wet sand.
  • Pat a thin layer of the salt mixture, slightly larger than the shape of the fish, on each of 2 rimmed baking sheets. Put the fish on top of each salt pile, then cover completely with the remaining salt mixture, following the shape of the fish and patting down the salt mixture. Before the fish is fully encased, mark the thickest part of each fish behind the neck with a paring knife and make a small hole in the salt mixture (this is where you?ll insert a thermometer).
  • Bake the fish until the crusts are golden and a thermometer inserted into the marked spots registers 140 degrees F, 40 to 50 minutes. Remove from the oven and let stand 15 minutes.
  • Meanwhile, make the relish: Mix the olives with the olive oil, lemon juice, reserved 2 tablespoons parsley and 1 tablespoon ground fennel, 1 tablespoon water, 1/4 teaspoon salt and a few grinds of pepper. Set aside until ready to serve.
  • To remove the salt, crack the crusts all the way around the fish with a paring knife; discard the crusts. Slide a spatula under each end of the fish and transfer to a platter or cutting board. To serve, remove the top fillet of each fish with a butter knife or spoon; discard the skin. Pull off the bone; discard the bone and head. Remove the skin from the bottom fillet. Serve with the lemon-olive relish.

Sauce
3 large plum tomatoes
2 large red bell peppers
1 medium onion (unpeeled)
4 tablespoons olive oil, divided
1 dried ancho chile*
1/2 cup sliced almonds
1/4 cup extra-virgin olive oil
3 garlic cloves
2 tablespoons Sherry wine vinegar
1 slice wheat bread, toasted, cut into 1/2-inch cubes (about 1/2 cup)
1 teaspoon pimentón or other imported sweet paprika (see note below)
Fish
2 2-pound whole red snappers
6 pounds coarse kosher salt
3 cups water

Steps:

  • For sauce:

  • Peel and seed ancho chile, tomatoes, and bell peppers; place in blender. Peel onion; coarsely chop and add to blender.
  • Heat 1 tablespoon olive oil in small skillet over medium-high heat. Add almonds; sauté until lightly toasted, about 1 minute. Transfer to blender. Add 1/4 cup extra-virgin olive oil, garlic, vinegar, bread, and paprika to blender; blend to coarse puree. Transfer to bowl; season with salt. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before serving.)
  • For fish:
  • Preheat oven to 450°F. Place 1 fish in each of two 13x9x2-inch metal baking pans. Cover each fish with 3 pounds salt. Drizzle 1 1/2 cups water over salt in each pan. Using hands, pack salt over fish to cover completely.
  • Bake fish until thermometer inserted into center of fish registers 135°F, about 30 minutes. Gently rap salt crust with back of spoon to crack; carefully remove salt. Use pastry brush to remove any remaining salt. Carefully transfer whole fish to platter and serve with sauce.

ROASTED FISH WITH ROMESCO SALSA

Roasted Fish With Romesco Salsa image

Spanish romesco sauce is made by blending roasted red peppers, tomatoes, almonds, garlic, parsley and breadcrumbs into a smooth and smoky sauce. In this zippy weeknight recipe, the same ingredients are roughly diced to form a chunky and tangy salsa that's spooned over simply roasted fish. Good-quality red wine vinegar can be substituted for sherry in a pinch. The bread and almonds are added to the salsa at the last minute so they retain a bit of their crunch. Serve this dish with sautéed greens drizzled with olive oil, and couscous or rice if you want more a little more heft.

Categories     dinner, weekday, seafood, main course

Time 25m

Yield 4 servings

Number Of Ingredients 12

1 medium tomato, cored, seeded and cut into small dice
1/2 cup (drained) jarred roasted red peppers, cut into small dice
1 garlic clove, finely grated
Pinch of smoked or sweet paprika
2 teaspoons sherry vinegar (or good-quality red wine vinegar)
Olive oil, as needed
1/2 packed cup coarsely torn pieces of bread (about 1 ounce)
1/4 cup raw almonds, coarsely chopped
4 (6-ounce) skinless mild white fish fillets, such as cod or halibut
Kosher salt and black pepper
2 tablespoons chopped fresh parsley
Coarse sea salt, for serving

Steps:

  • Heat oven to 400 degrees. In a medium bowl, toss the tomato, peppers, garlic, paprika, vinegar and 1 tablespoon olive oil; set aside.
  • In a small skillet, heat 1 tablespoon olive oil over medium-high. When the oil is hot, add the torn bread and cook, tossing often, for 3 to 5 minutes, until toasted and golden brown. Transfer to a cutting board to cool, then coarsely chop the bread into pieces.
  • Carefully wipe out any crumbs from the pan with a paper towel, then add a splash of olive oil. Add the almonds and toast over medium heat, tossing occasionally, for about 3 minutes, or until golden brown. Transfer to the board with the bread and set aside to cool.
  • Pat the fish dry with a paper towel and place on a sheet pan or in a baking dish. Brush all over with olive oil and season generously with salt and pepper. Roast until the fish is cooked through and flakes easily with a fork, 10 to 12 minutes.
  • Add the bread, almonds and parsley to the tomato salsa and toss well. Spoon over the fish fillets, sprinkle with coarse sea salt and serve immediately.

ROCKFISH BAKED IN SALT

Rockfish Baked in Salt image

Provided by Food Network

Time 1h10m

Number Of Ingredients 8

1 rockfish, about 3 pounds, cleaned
3 slices fresh ginger
2 to 3 sheets nori (Japanese seaweed sheets)
4 pounds rock salt
1/2 cup dark soy sauce
1 lime, juiced
1 tablespoon grated fresh ginger
1 bunch (about 10) scallions trimmed and sliced thinly

Steps:

  • Preheat oven to 400 degrees. Rinse fish in cool water and dry. Tuck the slices of ginger into the cavity of the fish. Spread a layer of salt about 3/4-inch thick on the surface of a large baking sheet or other ovenproof container. Wrap fish entirely in the nori, set it on top of the salt, and then use remaining salt to bury the fish completely. Bake 30 to 40 minutes, until fish reaches an internal temperature of about 130 degrees (use an instant-read thermometer, and poke it through the salt crust into the fish). Remove from oven and let rest 5 to 10 minutes (fish will continue to cook). Meanwhile, mix together the soy sauce, lime juice, ginger, and about a tablespoon of the scallions. Carefully remove the fish from its salt bed, set it on a work surface, and remove nori wrap. Set fish on a serving platter, scatter the remaining scallions over the surface, and serve immediately with the sauce alongside.

FISH PARCELS WITH ROMESCO SAUCE & VEG

Fish parcels with romesco sauce & veg image

Romesco sauce is made from peppers, almonds, chilli and garlic. Team with white fish and a cauliflower and spring onion mix

Provided by Good Food team

Categories     Main course

Time 30m

Number Of Ingredients 13

2 firm white fish fillets (we used cod)
4 lemon slices
2 thyme sprigs
2 tbsp olive oil
½ cauliflower , cut into wedges
10 spring onions , ends trimmed, roots left intact
1 slice sourdough bread , torn into chunks
1 red chilli (deseeded if you don't like it too hot)
2 garlic cloves , sliced
10 blanched almonds
2 ready-roasted red peppers , from a jar
1 tomato , peeled (see tip, below)
½ tsp sherry vinegar

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put each fish fillet on a large piece of baking parchment and top each with a few slices of lemon and a sprig of thyme. Drizzle with 1 tsp of the oil and season. Fold over the top edges of each piece of parchment to make a seal, then scrunch up the ends like a sweet wrapper. Put the parcels on a baking sheet and bake in oven for 15 mins.
  • Meanwhile, steam the cauliflower for 4 mins, then add the spring onions for 3 mins more or until tender. Pat dry, then toss the veg in 2 tsp olive oil and season. In a large frying pan, toast the bread pieces in the remaining oil, then add the chilli and garlic, and cook for 1 min. Tip into a food processor with the nuts, peppers, tomato and vinegar, and pulse until you have a rough paste. Season and put to one side.
  • Wipe then heat the frying pan. Add the cauliflower wedges and spring onions, and cook for a few mins each side to brown. Serve alongside the fish and sauce.

SAUTEED FISH WITH ROMESCO SAUCE

Sauteed Fish With Romesco Sauce image

Use a firm, white fish for this, such as halibut, grouper, or red snapper. You could use tilapia, but it is a bit thin for this recipe. If you use that, please reduce the cooking time. The sauce is the star in this recipe! Romesco sauce is a nut and red pepper-based sauce from Tarragona, Catalonia, Spain.

BAKED SEA BASS WITH ROMESCO SAUCE

Baked sea bass with romesco sauce image

Cooking the fish on top of the veg is a simple way to add heaps of flavour

Provided by Cathryn Evans

Categories     Buffet, Dinner, Main course, Supper

Time 1h5m

Number Of Ingredients 11

4 red peppers , deseeded and cut into large chunks
2 yellow peppers , deseeded and cut into large chunks
2 large tomatoes , halved (choose on the vine for best flavour)
1 large red onion , cut into wedges
4 large garlic cloves
4 tbsp olive oil , plus extra for drizzling
2 x 1kg/2lb 4oz whole line-caught sea bass , scaled and gutted
2 lemons , thinly sliced
2 large handfuls fresh mixed herbs (such as rosemary and thyme)
2 tsp balsamic vinegar
50g whole hazelnut , toasted

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Tip all of the vegetables into a roasting tray with the unpeeled garlic cloves. Season, pour over 4 tbsp olive oil and toss together. Roast for 20 mins until starting to soften.
  • Pat the fish dry with kitchen paper, then slash the skin on both sides with a sharp knife. Season the inside of the fish, then stuff with the lemon slices and half of the herbs. Place on top of the veg, drizzle with more oil, scatter with the rest of the herbs, then roast for 20-25 mins. When the fish is cooked, the flesh will feel firmer and the dorsal fin (the large one on the back) will pull away easily.
  • Lift the fish and half of the vegetables onto a serving plate and cover with foil to keep warm. Spoon the rest of the vegetables and most of the juice from the roasting tray into a food processor. Add the vinegar and hazelnuts, blend until smooth, then check the seasoning. Serve the fish with the vegetables and sauce, lifting the fillets off the bone.

  • Preheat oven to 350º. Toast hazelnuts on a rimmed baking sheet, tossing once, until golden brown and fragrant, 7–10 minutes; let cool. Smash hazelnuts in a mortar and pestle until very coarsely ground. (Alternatively, you can crush using the bottom of a mug or small saucepan.) Transfer to a small bowl. Stir in 2 Tbsp. oil and season with salt; set aside.
  • Place a rack in upper third of oven and heat broiler. Broil peppers and tomatoes, skin side up, on a rimmed baking sheet, turning peppers occasionally, until charred all around and flesh is soft, 12–15 minutes.
  • Slip off tomato skins; discard. Transfer peppers to a medium bowl and cover with plastic wrap so they can steam a bit (this extends the cooking and also makes the charred peels easier to remove). Peel peppers (flesh should feel slippery) and discard seeds; coarsely chop. Transfer peppers and tomatoes to a mortar and pestle and smash, covering the mortar slightly with your hands to prevent juices from splattering everywhere, until mixture achieves a saucy consistency. (You can also do this by pulsing in a food processor.)
  • Transfer romesco sauce to a clean medium bowl. Add garlic, vinegar, paprika, cayenne, and remaining ¼ cup oil; season with salt and let sit 15 minutes.
