ROASTED YELLOW TOMATO SAUCE



Roasted Yellow Tomato Sauce image

Number Of Ingredients 7

3 pounds yellow tomatoes (see note, below)
3 shallots, cut into large dice or 1 onion, cut into large dice
6 cloves garlic
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Sugar to taste
2 tablespoons fresh basil, torn into bite-size pieces

Steps:

  • Preheat the oven to 425°, and line a sheet tray with parchment paper.
  • Place the tomatoes, shallots or onions, and garlic on the prepared sheet tray.
  • Toss with olive oil, and season with salt and pepper to taste.
  • Place the tray in the oven, and roast until the tomatoes are wilted and lightly golden brown in some spots, 25 to 30 minutes.
  • Transfer the roasted tomatoes and vegetables to a blender, and puree until smooth. Note: Strain the sauce through a sieve to remove any traces of skin, if you like.
  • Season the sauce with additional salt and pepper to taste, and add a pinch of sugar if needed.
  • Stir in the basil, and serve with your favorite pasta, poultry or seafood.
  • If using yellow cherry or grape tomatoes, keep them whole. If using larger tomatoes, cut them into a large dice.
  • You can easily increase this recipe as needed.

1 (46 ounce) can chilled tomato juice
2 cups fresh squeezed orange juice, chilled
1/2 cup fresh squeezed lime juice, chilled
1 teaspoon ground allspice
1 teaspoon ground cumin
1/2 teaspoon Tabasco sauce (optional)
salt and pepper (to taste)
lime slice (garnish)

Steps:

  • In a big pitcher, add the first 6 ingredients; stir to combine.
  • Taste and add salt and pepper if desired.
  • Pour into tall ice-filled glasses.
  • Garnish with a lime slice.

CAROLINA SUNRISE SAUCE

My inspiration for this sauce was based on a Carolina BBQ sauce, and I found that it works very well with lightly flavored white fish. Feel free to adjust the recipe porportions to meet your own preferences. Cooking is a Creative Sport.

1/2 cup onion, diced
1 tablespoon butter
1 tablespoon olive oil
1/8 cup honey
1/8 cup brown sugar
1/3 cup vinegar
1/8 cup rum
1/4 cup orange juice
1/4 teaspoon cumin
1/4 teaspoon ground cloves
1/2 teaspoon black pepper

Steps:

  • Melt the butter with the olive oil in a small sauce pan, saute the onions until they are translucent.
  • Add the remaining ingredients, and stir until the sauce thickens.
  • Serve warm over fish or chicken.

4 pounds tomatoes
salt to taste

Steps:

  • Preheat oven to 200 degrees F (95 degrees C).
  • Wash and halve tomatoes. Gently squeeze out the seeds. Place the tomatoes on a non-stick cookie sheet, and sprinkle with salt to taste.
  • Bake until tomatoes take on a leathery texture. This could literally take all day; smaller pieces will require less oven time.
