Steps:
- In a large pot place sugar, vanilla pod and the seeds into the figs, lemon juice, zest and meat of lemon. Do squeeze any juice from the peels into the sugar and figs.
- Stir to release juices it will be thick. Simmer over low heat stirring not to burn. Juices will come and when it does raise heat to high stirring most of the time.
- When it hits a rolling boil for 15 minutes all the time stirring add liquor cook 1 minute.
- Pour into sterile jars and process 10 minutes.
- Optional for those that like it smoother without chunks you can blend thee figs before adding to sugar or use an immersion blender while cooking.

Steps:
- Trim the figs and place in a saucepan with the lemon zest, juice and vanilla seeds. Spoon over the sugar, and mix.
- Steep for 2 hours, then cook on a low heat until the sugar dissolves.
- Once the sugar is dissolved, turn the heat up and boil rapidly until the jam reaches setting point.
- Remove the pan from the stove, and cool for 30 minutes before spooning into warm, sterilised jars.
- Pack each jar with a vanilla pod.

- Combine the quartered figs and lemon juice in a large, nonreactive bowl. Leave it to sit in the lemon juice for approximately 45 minutes at room temperature.
- After letting the figs marinate, pour the mixture into a large, heavy saucepan. Cook it over medium heat and stir in the vanilla extract and honey.
- Allow the vanilla-fig mixture to cook for about 50 to 55 minutes. Once the figs have become tender and the consistency has turned into a chunky jam, take the pan off the heat. Let it rest for about 5 to 10 minutes.
- Serve with your favorite crackers or bread toast or pour into an airtight container. Fig jams can be stored in the fridge for up to a week or canned in a cool, dark place for up to a year!

- Wash figs and trim stems before roughly chopping and adding to a large saucepan. I quartered my figs as I wanted there to be large chunks of fruit in the finished jam. If you prefer a smoother texture then chop your figs smaller.
