ROASTED FETA WITH HONEY



Roasted Feta With Honey image

A drizzle of honey and a blast of heat transform a standard block of crumbly feta into an unexpectedly luscious, creamy spread for pita and vegetables. This, with a hunk of crusty bread and a glass of chilled white wine, is the perfect warm weather supper. If you can't get your hands on thyme honey, the regular sort will do just fine.

Number Of Ingredients 6

1 8-ounce slab Greek feta, blotted dry
2 tablespoons extra-virgin olive oil
1 tablespoon Greek thyme honey, or other honey
Freshly ground black pepper
Greek-style pita bread, toasted and cut into wedges
Heirloom tomatoes, roasted beets, nuts or pickled vegetables (optional)

Steps:

  • Preheat the oven to 400 degrees. Select a small oven-to-table earthenware dish or a small ovenproof sauté pan lined with aluminum foil to help transfer the cheese to a plate after roasting. Place the feta in the dish and cover with the olive oil. Bake until the cheese is soft and springy to the touch but not melted, about 8 minutes.
  • Preheat the broiler. Heat the honey in the microwave or over a pan of simmering water until it is fluid enough to be spread with a pastry brush and then paint the surface of the feta with it. Broil until the top of the cheese browns and just starts to bubble. Season to taste with black pepper. Serve immediately with pita wedges and, if desired, sliced heirloom tomatoes, roasted beets, nuts or pickled vegetables.

This spread can be made, covered, and refrigerated up to 3 days before serving. For a flavorful dipper with the spread, cut pita bread in wedges, brush with olive oil, sprinkle with salt and thyme, then crisp in the oven.

1 cup crumbled feta (4 ounces)
0.5 cup toasted almonds, coarsely chopped
0.5 cup pitted dates, chopped
2 tablespoon fresh marjoram or 1 tablespoon fresh thyme, chopped
2 tablespoon coarsely chopped and/or sliced green olives
2 teaspoon finely shredded lemon peel
0.25 cup honey
0.25 teaspoon cayenne pepper
Toasted pita bread wedges
4 pita bread rounds
2 tablespoon extra-virgin olive oil
2 teaspoon finely chopped fresh thyme
0.25 teaspoon salt

Steps:

  • In a serving bowl gently stir together feta, almonds, dates, olives, and lemon peel. In a small microwave-safe bowl combine honey and cayenne. Warm in microwave for 15 seconds. Drizzle over spread; fold gently to combine. Serve with pita bread. Thyme-Flecked Pita Crisps
  • Preheat oven to 350°F. Cut each pita round into 8 wedges. Separate wedges. In a large bowl toss pita wedges with olive oil, thyme, and salt until evenly coated. Spread wedges on two baking sheets. Bake 8 minutes or until crisp.

Similar to htipiti, the salty and tangy Mediterranean mezze spread, this feta dip is fabulous with toasted pita or veggies.

Number Of Ingredients 14

1 8-oz block feta cheese
½ cup sour cream
½ cup mayonnaise, best quality such as Hellman's or Duke's
Zest from 1 lemon (about 1 teaspoon, packed)
1 small clove garlic, chopped
¼ teaspoon dried dill
¼ teaspoon dried oregano
¼ teaspoon dried thyme
⅛ teaspoon salt
¼ teaspoon freshly ground black pepper
⅛ teaspoon crushed red pepper flakes, plus more for serving
Toasted sesame seeds
Extra virgin olive, for drizzling
Toasted pita wedges (or pita chips) and/or sliced vegetables

Steps:

  • Combine all of the ingredients in a food processor or blender and process until smooth. Taste and adjust seasoning, if necessary. Transfer to a serving bowl and use a small spoon to create a swirl on the surface of the dip. Drizzle with olive oil and sprinkle with toasted sesame seeds and crushed red pepper flakes, if using.
  • MAKE AHEAD: This dip can be made up to 3 days ahead of time and stored in a covered container in the refrigerator. It will stiffen up in the fridge to a spread-like consistency, so be sure to let it sit at room temperature for about an hour before serving.
  • To make the toasted pita wedges: Preheat the oven to 350°F. Brush the pita bread on both sides with olive oil and sprinkle with a pinch of salt. Cut into wedges, then arrange on a parchment-lined baking sheet. Bake for about 10 minutes until lightly toasted.
  • To make the toasted sesame seeds: In a small pan over medium heat, cook the sesame seeds, stirring frequently, until golden, a few minutes. Watch carefully as they are quick to burn.

1/2 pound feta, crumbled
1 ounce olive oil
2 Calabrian chiles, finely chopped
1 clove garlic, minced
1 teaspoon oregano, finely chopped
Freshly ground black pepper
1 lemon, juiced
Toasted pita, as an accompaniment

Steps:

  • In a food processor, mix together the feta, olive oil, chiles, garlic, oregano, and black pepper. Blend on low speed for about 6 minutes or until the feta is whipped. Pour in lemon juice and pulse the mixture until completely combined, about 2 minutes. Pour into a bowl, cover and refrigerate for at least 1 hour or until ready to use. Serve with toasted pita.

1 tbsp sesame seeds , toasted
200g block feta
2 tbsp honey , plus extra to serve
1 tsp roughly chopped oregano
olive oil , for drizzling
warmed pitta breads , to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the sesame seeds in a shallow dish and brush the block of feta all over with the honey. Carefully press the honey-coated feta into the sesame seeds, turning so that it's well crusted with seeds.
  • Put the feta in a baking dish (it should fit snugly), then sprinkle over the oregano and a pinch of sea salt. Drizzle with some olive oil. Bake for 15-20 mins until the feta is soft, then drizzle with a little extra honey and serve with the pitta breads on the side.

2 1/2 tablespoons olive oil
1 fresh chili pepper, seeded and minced, or 1/2 teaspoon dried red pepper flakes
1 clove garlic, peeled and minced
1 1/2 cups crumbled soft feta cheese
2 grilled or roasted red bell peppers, peeled, cored, seeded and coarsely chopped

Steps:

  • Heat oil in a small skillet over medium heat. Add chili and cook for 1 minute. Stir in garlic and remove from heat. Let cool for about 3 minutes.
  • Place the feta and the red peppers in a food processor and process until smooth. Add the chili-oil mixture and process until well combined. Scrape the spread into a bowl and serve.

Roasted Figs and Feta Spread Toasts image

A delicious sweet and savory summer appetizer of roasted figs with a creamy Feta spread.

Number Of Ingredients 19

6 large slices whole wheat bread (I used my sourdough bread)
For the Figs
8 oz. ripe, fresh figs (about 10 medium)
3 sprigs of fresh thyme
1 TBSP. balsamic vinegar or Grand Marnier
2 TBSP. Greek honey
zest of half lemon
For the whipped feta spread
8 oz. Greek Feta cheese, crumbled
¼ cup plain Greek yogurt
1 TBSP. apple cider (or white wine) vinegar
½ tsp. sea salt
¼ tsp. freshly ground pepper
3-4 TBSP. extra virgin olive oil
Optional Toppings:
-- fresh thyme
-- lemon zest
-- honey or date syrup
-- white & black sesame seeds

Steps:

  • Preheat the oven to 400°F.
  • Wash the figs and remove the tough stem. Cut them in half and place in a small baking dish.
  • Toss the figs with the balsamic vinegar (or orange liqueur), the thyme and the lemon zest. Turn the figs so they are all cut-side-down on the baking dish. They should fit in a single layer.
  • Roast the figs for about 20 minutes and remove them from the oven. They should still have some juices at this point. Let them cool.
  • While the figs are roasting, prepare the Feta spread: place the Feta, Greek yogurt, vinegar, salt and pepper in a small food processor and process until fairly smooth.
  • Add the extra virgin olive oil in a slow, steady stream while continuing to pulse (you may need more or less olive oil, depending on the consistency you desire). Taste and adjust the seasoning. Refrigerate or use right away.
  • Assemble the toasts by slathering a layer of the Feta spread over the toasted bread, top with two or three fig halves (depending on the size of the toast), drizzle with the pan juices and some extra honey (to taste), and sprinkle with fresh thyme, lemon zest, and some sesame seeds (optional).
