EASY SEASONED ROASTED POTATOES



Easy Seasoned Roasted Potatoes image

These Easy Seasoned Roasted Potatoes have big flavor thanks to the yummy combination of seasonings. Perfectly crispy and simple too!

Number Of Ingredients 8

4 medium gold or yellow potatoes (about 5 cups after chopping)
2 tbsp olive oil (If your potatoes are pretty large you can add an extra tbsp of oil.)
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp dried parsley (Can substitute another dried herb.)

Steps:

  • Preheat oven to 425 degrees.
  • Slice your potatoes into chunks. I like to make them about 1/2 inch thick and 1 - 1 1/4 inches in diameter. This is quite a bit larger than I'd cut them for a hash. Place the sliced potatoes into a bowl and add all other ingredients. Stir to fully coat the potatoes.
  • Spread coated potatoes in a single layer on a parchment paper lined baking sheet. Place in the oven. Roast for 20 minutes. Remove from oven and flip potatoes. Place back in the oven and roast for 5 to 10 more minutes (10 minutes is perfect in my oven).

A rub for anything your heart desires. I used the Veggie rub on these potatoes. They are not only full of flavor good, they are healthy as well. - baking potatoes
- olive oil, extra virgin
- kosher salt, coarse to taste (eliminate if on salt free diet or use a lite salt)
- pepper, coarse
- feiny's veggie rub (or seasoning of your choice)
- parmesan cheese, grated

Steps:

  • I zapped 2 large potatoes for 6 minutes on high in the microwave. NOTE: Adjust timing for more or less potatoes.
  • Cut potatoes in half and then cube down to the skin being careful to not cut through the skin. NOTE: you may need a glove to handle hot potatoes. Place skin side down on a foil lined baking dish.
  • Drizzle with olive oil, sprinkle with salt, pepper and a generous sprinkle of Feiny's seasoning. Top with grated parmesan cheese.
  • Place under a "low" broil heat for 5 to 6 minutes until lighly browned. I used 2nd rack from broiler.

"SPECIAL" ROASTED POTATOES



The secret to these deliciously crusty potatoes is the pre-oven boiling in a salted and seasoned liquid. The potatoes not only absorb flavor and salt, but more importantly the surface of the potato cooks, which is what forms the great crunchy texture in the oven.

2 pounds new yellow potatoes, halved
3 sprigs fresh rosemary
3 cloves garlic, whole, peeled, bruised
2 bay leaves
2 tablespoons salt
2 tablespoons olive oil
1 pinch cayenne pepper
1 pinch kosher salt

Steps:

  • Place potatoes in a large pot with water. Bruise the rosemary with the dull side of a knife blade and place in the pot. Add garlic, bay leaves, and salt. Bring to a boil; simmer for 5 minutes. Drain; let potatoes air dry.
  • Preheat oven to 375 degrees F (190 degrees C).
  • When potatoes are thoroughly dry, transfer them back to the pot. Drizzle with olive oil, cayenne pepper, and a pinch of salt. Stir to coat. Transfer potatoes to a rimmed sheet pan. Bake until potatoes are golden brown and crusty, and the flesh is creamy and soft, about 35 to 45 minutes, depending on the size of the potatoes.
