GINGERBREAD LOAF
Enjoy this old-fashioned ginger loaf recipe originally from Holland. This moist spicy bread smells delicious while it's baking...and slices are wonderful spread with cream cheese. Steps:
- In a large bowl, combine the first eight ingredients. In another bowl, combine the eggs, milk, syrup and oil. Stir into the dry ingredients just until moistened (batter will be thin). Pour into two greased 9x5-in. loaf pans. , Bake at 325° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

FAVORITE GINGERBREAD LOAF & GINGERBREAD TOPPING
This is my all time favorite Gingerbread, and my Grams recipe. So moist and flavorful, it's hard not to keep picking at it. The topping I serve on the side is delicious as well... Recipe can be halved as well. Enjoy!

Steps:
- Preheat oven to 325 degree F. Spray 2 - 9 inch glass loaf pans with Bakers Joy or grease and flour. I never used anything but glass with this particular cake, my Gram never said why not to use metal. In a bowl, mix together the flour, baking soda and spices. Set aside.
- In another bowl, whisk together the eggs, sugar, oil and molasses until smooth.
- Alternating flour with buttermilk, combine the flour mixture into the molasses mixture.
- Blend well and pour into prepared dishes. Bake for 55 minutes, not opening door as they bake, can make them fall. Test with a pick in center of cake to see if done.
- I make a gingerbread topping to serve along side of this yummy cake. Can just sprinkle with powdered sugar or glaze if you prefer.
- Here is the topping: In a bowl, whisk milk, pudding mix and spices for 2 minutes or until thickened. Fold in whipped topping. Keep refrigerated between uses. Delish!

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
- In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
- In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
- Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

- In a large bowl, cream shortening and sugar. Beat in egg and molasses. Combine the flour, baking powder, ginger, cinnamon, baking soda, salt and cloves; add to creamed mixture alternately with water., Pour into a greased 13x9-in. baking dish. Bake at 350° for 30 minutes., For topping, in a small bowl, combine the brown sugar, flour, cinnamon and ginger. Cut in butter until mixture resembles coarse crumbs. Stir in pecans and lemon zest. - Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan and dust with flour or line with parchment paper.
- Sift flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg together in a medium mixing bowl. Set aside.
- Combine milk, brown sugar, molasses, oil, applesauce, and eggs in a large bowl; mix together until well blended. Stir into flour mixture until just blended. Pour batter into the prepared loaf pan.

- Heat oven to 325°F. Spray 9x5-inch or 8x4-inch loaf pan with cooking spray. In medium bowl, beat all gingerbread ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 1 to 2 minutes, scraping bowl occasionally, until well mixed. Pour into pan.
- Bake 40 to 45 minutes or until toothpick inserted in center comes out clean.
- Meanwhile, in 1-quart saucepan, mix granulated sugar and cornstarch. Gradually stir in 1 1/4 cups water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Stir in egg yolk. Boil and stir 1 minute; remove from heat. Stir in lemon peel and lemon juice.
- Cool gingerbread 10 minutes; remove from pan. Serve warm or cool gingerbread with warm or cool lemon sauce.

- Preheat oven to 350*F.
- Prepare a bread pan by lining with parchment paper and spraying with cooking spray. This will ensure bread slips right out of your pan with zero sticking.
- Blend sugar and butter together until fluffy.
- Add egg and molasses and beat well, scraping sides as needed.
- Add baking soda, cinnamon, ginger, cloves and salt. Mix well.
- Add flour in 1/2 cup at at time and mixing between each addition.
- While mixing, SLOWLY add water to thin batter out. Now is the time to add the apple sauce if you wish, though I didn't need it.
- If adding the crystallized ginger, add now.
- Pour mixture into prepared bread pan and bake for 55 minutes. Remove from oven and add create a tent over bread to prevent from edges getting to dark.
- Place bread back in oven and bake for 15 - 20 more minutes.
- Remove from oven when a toothpick inserted into the middle of bread comes out clean.
