FARMER'S BREAKFAST STRATA



Farmer's Breakfast Strata image

A heartier version of the old brunch stand-by. Prep time includes overnight refrigeration time.

1 lb sliced bacon, diced
2 c cooked ham, diced
1 small onion, peeled and chopped
1 c diced fresh cremini mushrooms
10 slice white bread, cut into 1-inch pieces
1 c cooked potato, diced into 1/2-inch cubes
3 c shredded cheddar cheese
8 eggs
3 c milk
1 Tbsp worcestershire sauce
1 tsp dry mustard
salt and pepper, to taste

Steps:

  • 1. In a skillet, over medium heat, cook bacon until crisp; add ham, onion and mushrooms. Cook and stir until onion is tender; drain.
  • 2. Coat a 13x9x2-inch baking dish with nonstick cooking spray. Layer half the bread cubes, potatoes and cheese. Top with all of the bacon mixture. Repeat layers of bread, potatoes and cheese.
  • 3. In a bowl, beat the eggs; add milk, Worcestershire sauce, mustard, salt and pepper. Pour over all. Cover and chill overnight. Remove from refrigerate 30 minutes before baking.
  • 4. Preheat oven to 325F.
  • 5. Bake, uncovered at 325 degrees for 65-70 minutes or until a knife inserted near the center comes out clean. Let cool 10 minutes and cut into 12-16 squares to serve.

12 slices OSCAR MAYER Selects Uncured Turkey Bacon, cut into 1/2-inch pieces
1 onion, chopped
10 slices white bread, cubed
1-1/2 cups cubed cooked peeled potatoes
2 cups KRAFT 2% Milk Shredded Cheddar Cheese
3 cups milk
2 cups cholesterol-free egg product
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1 tsp. dry mustard

Steps:

  • Heat oven to 325ºF.
  • Cook bacon and onions in skillet on medium heat 10 min. or until bacon is done, stirring occasionally.
  • Layer half each of the bread, potatoes, bacon and cheese in 13x9-inch baking dish sprayed with cooking spray. Repeat. Beat remaining ingredients with whisk until well blended; pour over ingredients in dish.
  • Bake 1 hour or until knife inserted in center comes out clean.

1 tbsp. Worceshtershire sauce
1 tsp.ground mustard powder
salt & pepper

Steps:

  • In a skillet, cook bacon until crisp. Add ham and onion. Cook and stir until onion is tender; drain. In a greased 13x9x2-inch baking dish, layer half of the bread cubes, potatoes and cheese. Top with all of the bacon mixture. Repeat second layer of bread cubes, potatoes and cheese. In a bowl, beat eggs. Add mik, worcestershire, mustard, salt and pepper. Pour over layered bread mixture. Cover and chill overnight. Remove from the refrigerator 30 minutes before baking. Pre-heat oven to 325 degree F. Bake, uncovered, for 65-70 minutes.

I make Strata often as a way to use up day old or stale bread (its hard for 2 people to finish a loaf of bread!)I've come up with a lot of variations but this one is my favorite. this can definitely be made ahead to serve for brunch or keep in the fridge ready to pop in the oven after Church.
