1 tablespoon olive oil
2 links chorizo sausage, diced
1 medium onion, chopped
3 cups chicken broth
3 cups water
15 ounces great northern beans, drained and rinsed
15 ounces red kidney beans, drained and rinsed
14 ounces diced tomatoes
1 large potato, scrubbed and diced
1 large carrot, peeled and thinly sliced
1/2 teaspoon dried oregano

Steps:

Cook the chorizo and onion in a large pot for 3 minutes stirring occasionally.
Add chicken broth, the beans, water, tomatoes, oregano, carrot, and potato. Cover and bring to a boil. Then simmer uncovered, stirring occasionally, for 10 minutes or until vegetables are tender.

Melt butter and olive oil in a large stock pot over medium-high heat. Add the onion, carrots, celery, zucchini, and 1/2 teaspoon salt. Let cook for 8-10 minutes until tender, stirring occasionally.
Add the diced tomatoes, beans, tomato sauce, vegetable broth, basil, parsley, oregano, salt and pepper. Stir together and let come to a low boil. Once boiling, turn down the heat to low and let simmer for 15 minutes.
Turn heat back up to medium and add the chopped spinach and dry pasta. Let cook until pasta is done, about 10 minutes.* Stir the soup frequently to make sure the pasta is not sticking to the bottom of the pan
Serve with a sprinkle of freshly grated parmesan cheese on top. Leftovers will keep in a covered contaner in the fridge for 3-4 days. You will probably want to add additional water when reheating leftovers.

Heat olive oil over medium high heat in a large soup pot. Add onions, carrots, and celery, and saute until starting to soften – about 5-7 minutes.
Add nutritional yeast, poultry seasoning, 2 teaspoons sea salt, 1/2 teaspoon black pepper, broth, and whole chicken breasts. Bring up to a simmer. Make sure the chicken breasts are submerged beneath the broth and cover the pot. Simmer until chicken is cooked through and veggies are tender – about 15-20 minutes.
Remove chicken to a cutting board and add cauliflower rice to the soup and stir to combine. Simmer 5 minutes or until the cauliflower rice is tender. While the soup continues to simmer shred the chicken using two forks.
