FROTHY HOT WHITE CHOCOLATE

1 1/2 cups whole or skim milk (skim will froth better)
1/2 vanilla bean, seeds scraped
3 ounces best quality white chocolate, such as Valrhona, Lindt or Callebaut, coarsely chopped
Lightly whipped cream
Cocoa powder

Steps:

  • Combine the milk, vanilla bean and vanilla seeds in a saucepan and bring to a simmer. Remove the vanilla bean. Add the hot milk to the blender and carefully blend until frothy. Add the white chocolate to the blender and blend until the chocolate is melted. Divide between 2 mugs, top with a dollop of whipped cream and sprinkle with cocoa powder.

Steps:

  • In a small saucepan, combine the first four ingredients. Cook and stir over medium heat until marshmallows are melted, about 8 minutes. Remove from the heat; stir in vanilla. Ladle into mugs.

4 ounces unsweetened chocolate pieces
4 cups milk
3/4 cup half-and-half
1/2 cup sugar
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 teaspoon vanilla
1/2 teaspoon almond extract
1/2 cup heavy cream, whipped for topping

Steps:

  • Melt chocolate in 1 cup of milk, over low heat, stirring constantly.
  • Gradually add remaining milk and half and half, followed by remaining ingredients, except vanilla and almond extract.
  • Cook over medium heat, stirring constantly, until completely heated.
  • Stir in vanilla and almond extract.
  • Serve with whipped cream and sprinkle with nutmeg if desired.

4 cups half-and-half or 4 cups light cream
4 cups milk
2 cinnamon sticks
1 (12 ounce) package bittersweet chocolate pieces or 1 (12 ounce) package two 6-ounce packages bittersweet chocolate, chopped
1 tablespoon vanilla
marshmallows (optional)

Steps:

  • 1. In a 3- to 4-quart slow cooker, combine half-and-half, milk, and cinnamon sticks. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2-1/2 to 3 hours.
  • 2. Remove and discard cinnamon sticks. If necessary, skim "skin" from surface; discard. Stir in chocolate pieces; whisk until chocolate is melted and smooth. Stir in vanilla. Serve immediately or keep warm, covered, on warm setting or low-heat setting for up to 2 hours. If desired, float marshmallows on top of individual servings. Makes 12 (3/4-cup) servings.

Yummy hot chocolate made without using chocolate. It sounds to good to be true, but it isn't! Just wait till you try it and see for yourself. My five year old sister adores this and she loves to scoop up the yummy froth. You can even add a little bit of coffee (lesser quantity than Milo) to add a mocha hit.

200 ml milk
3 teaspoons milo or 3 teaspoons ovaltine, powder
1 teaspoon sugar, as desired
1/3 teaspoon milo, Ovaltine (extra, for sprinkling on top) or 1/3 teaspoon cocoa powder (extra, for sprinkling on top)

Steps:

  • Pour about 200ml of milk into your microwave safe bowl. Put it in the microwave on high for 2 minutes.
  • Get your favourite mug out. Fill it with the 3 teaspoons Milo & the sugar.
  • Mix it together using a teaspoon.
  • When milk has become warm, whisk it (using the whisk of course!) immediately. You should notice a frothy layer of milk forming at the top.
  • Pour the hot milk (with exception of froth) directly into the mug from the bowl. All the milk that is not frothy should automatically pour into the cup.
  • By this stage, you should have the milk froth left in your bowl. Before you do anything else, mix the Milo and hot milk together in the cup.
  • Using a spoon, scoop out the froth from the bowl and layer it on top of your Milo Hot choccie. The amount of froth and how fluffy it turns out depends on how well you have whisked the hot milk.
  • Now, sprinkle a little bit of extra Milo or cocoa powder on top of the froth, and let it sit for about a minute.
  • Your hot chocolate is ready. Sip it. Spoon it. Lick it. Yum.
  • ENJOY!
