1 lb large raw shrimp (peeled and deveined)
4 oz mozzarella cheese ((1 1/2 cups shredded))
1 large egg
1/4 cup mayonnaise
2 Tbsp parsley (finely chopped, plus more to garnish)
1/2 tsp sea salt (or to taste)
1/8 tsp black pepper
1/4 cup all-purpose flour (or gluten free flour)
2 Tbsp light olive oil (or high heat cooking oil of choice)
1/2 cup mayo
1 tsp lemon zest
2 Tbsp lemon juice
1 garlic clove (pressed or finely minced)

Steps:

  • Pat dry shrimp with paper towels then dice into pea-sized pieces.*
  • Transfer chopped shrimp to a large mixing bowl. Add 4 oz shredded mozzarella, 1 egg, 1/4 cup mayo, 2 Tbsp parsley, 1/2 tsp salt and 1/8 tsp black pepper. Stir together then add 1/4 cup flour and mix until batter is creamy and well combined.
  • Heat a large non-stick pan over medium heat and add 1 Tbsp olive oil. Add 1 heaping Tablespoon at a time (or a level ice cream scoop) and flatten out the tops of your fritters as you go so they are about 1/2" thick patties. Saute about 3 minutes per side or until golden brown on the edges and cooked through.
  • In a small bowl, add mayo and stir to remove any lumps. Add 1 tsp lemon zest, 2 Tbsp lemon juice and pressed garlic clove and stir to combine.

2 pounds mild white fish fillets (such as orange roughy or halibut), cut into 1/2-inch cubes
1 cup finely chopped onion
6 garlic cloves, chopped
3 tablespoons chopped fresh parsley
3 tablespoons chopped fresh cilantro
1 tablespoon ground cumin
2 teaspoons coarse kosher salt
1 teaspoon ground ginger
3/4 teaspoon ground black pepper
6 tablespoons matzo meal
1 large egg
12 tablespoons (about) olive oil (for frying)
Spicy Lemon and Paprika Aioli

Steps:

  • Line large baking sheet with plastic wrap. Coarsely grind fish in processor. Add next 8 ingredients; blend well. Add matzo meal and egg; process until smooth, scraping down sides of bowl occasionally. With moistened hands and using 1 generous tablespoon for each cake, shape mixture into patties about 13/4 inches in diameter and 1/2 inch thick; arrange on sheet.
  • Heat 3 tablespoons oil in heavy large skillet over medium heat. Fry fish cakes in batches until brown and cooked through, adding more oil to skillet by tablespoonfuls as needed, about 3 minutes per side. Transfer cakes to unlined baking sheet. (Can be made 1 day ahead. Refrigerate until cold, then cover with foil and keep refrigerated. Rewarm uncovered in 350°F oven about 10 minutes.)
  • Arrange fish cakes on plates. Spoon aioli alongside and serve

Simple fishcakes made from delicate shellfish and Asian spices - coriander, sesame and chilli add a kick. Serve with a citrus mayonnaise

100g white crabmeat
2 spring onions , finely chopped
1 red chilli , deseeded and finely chopped
small pack coriander , leaves only, finely chopped, plus extra for serving
2 tbsp sesame seed
50g fresh breadcrumb
1 large egg yolk
sunflower oil , for frying
plain flour , for dusting
3 tbsp good mayonnaise
zest ½ lime (after zesting, cut ½ into wedges for serving)
zest ½ lemon , plus a squeeze of juice

Steps:

  • Combine the crab, spring onions, chilli and coriander in a large bowl. Heat a small frying pan and toast the sesame seeds. While they're still hot, use a pestle and mortar to roughly grind, then tip into the bowl with the crab. Add the breadcrumbs, egg yolk and seasoning, and mix lightly. Shape into 6 patties and chill for at least 30 mins.
  • For the aïoli, mix the mayonnaise, zests and a squeeze of lemon juice. Heat 0.5cm depth oil in a non-stick frying pan. Dust the crab cakes with a little flour and fry gently for 3 mins on each side until crisp and golden. Drain on kitchen paper. Serve the crab cakes with the zesty mayonnaise, wedges of lime and a few coriander leaves scattered over the top.

The light, slightly crispy fish cakes can be a welcome change to any Caribbean meal. Use the accompaning curry aioli (lots of garlic flavor there!) with it or use your favorite tartar sauce. Note: if using salt cod, you will have to soak that for several days in water, changing out the water about every 6 hours until the saltiness goes away (refrigerated). Then you will need to remove any bones, skin and cartilage if they are present, before boiling and flaking your fish. Enjoy!

2 cups boiled cleaned and flaked salt cod fish (or may use 2 cups leftover cooked flaked light firm fish)
1 1/2 cups all-purpose flour
3 scallions, chopped
5 cloves garlic, minced
2 large eggs
1 teaspoon curry powder (Jamaican style preferred)
1/2 teaspoon cayenne pepper
1 tablespoon baking powder
1 cup water
oil (for shallow frying; as needed)
lemon slice, for garnish (optional)
1 cup mayonnaise
1/2 teaspoon cayenne pepper

2 teaspoons fresh lemon juice
6 cloves garlic, minced (or more)

Steps:

  • You can prepare the aioli in advance if you wish (just keep it refrigerated).
  • Place all ingredients for the curry aioli in a food processor or blender and puree until smooth and creamy; set aside.
  • Mix all ingredients for fish cakes together (except oil and lemon slices) in a mixing bowl until blended.
  • Adjust water or flour, if necessary, to achieve a consistency similar to pancake batter (or just a tad thicker).
  • Heat 1-2 inches cooking oil in a large skillet until hot.
  • Spoon or drop approximately 1/4 cup fish cake batter into hot oil and cook about 2-3 minutes per side or until golden, puffy, and firm.
  • Do not overcrowd pan.
  • Drain fish cakes on paper toweling.
  • Serve fish cakes hot with curry aioli or tartar sauce, and lemon slices, if desired.

FOR THE AIOLI:
3/4 cup mayonnaise
2 tablespoons fresh lemon juice
1 tablespoon minced garlic
1 teaspoon grated lemon zest
1 teaspoon Dijon style mustard
FOR THE FISH CAKES:
1/2 pound fresh salmon steaks or fillets
1/2 pound fresh halibut steak or fillets
1/2 cup bread crumbs
3 green onions, (white part only), finely chopped
2 tablespoons mayonnaise
1 tablespoon finely chopped Italian parsley
1 teaspoon Dijon style mustard
1/2 teaspoon dried thyme
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
8 to 10 grape leaves
extra-virgin olive oil

Steps:

  • TO MAKE THE AÏOLI: In a small bowl whisk together the aïoli ingredients. Cover with plastic wrap and refrigerate until a few minutes before serving. TO MAKE THE FISH CAKES: Cut the fish fillets into 1/4-inch dice. Place in a medium bowl and add the rest of the fish cake ingredients. Gently mix with a fork, then refrigerate for 1 hour for easier handling. Remove from the refrigerator and shape into four cakes, about 31/2 inches in diameter each. Place a large grape leaf, shiny side down, on a plate. Position a fish cake in the center of the leaf and fold the leaf up around it. Place a second grape leaf on top and fold the edges down to enclose the cake. (If the grape leaves are small, a third leaf may be needed.) Wrap the remaining cakes the same way. Lightly oil the packets. Grill the packets over Direct Medium heat until the grape leaves are well marked and the fish cakes are firm to the touch, about 10 minutes, turning once halfway through grilling time. Before serving, cut an X in the top leaf of each packet and turn back the edges. The grape leaves are edible, if desired. Serve warm with the aïoli.From Weber's Big Book of Grilling. This recipe makes about 7-8 salmon cakes, so you might want to double the recipe and the aioli as well. If you are serving these as a brunch to guests, then serve the salmon cakes on a platter lined with mixed greens and drizzled with the aioli on top or on the side, or just serve them on a plate...which ever way you choose to serve them they are delicious!

2 cups salmon, cooked (can use canned or fresh cooked salmon, I like leftover cooked cold salmon!)
1/2 cup dry breadcrumbs
2 -3 green onions, chopped
1 celery rib, finely chopped
1/4 cup mayonnaise
1/4 teaspoon cayenne pepper (or to taste)
1 teaspoon dried dill
1 teaspoon thyme
1 teaspoon Worcestershire sauce
1 egg, slightly beaten
salt (to taste) or seasoning salt (to taste)
lemon pepper (to taste or use fresh ground black pepper)
4 tablespoons butter
2 tablespoons oil
1/2 cup mayonnaise
2 tablespoons whipping cream, unwhipped
2 tablespoons lemon juice
1 lemon, zested
1 tablespoon prepared horseradish
1 -2 minced fresh garlic clove (or to taste)
1/2-1 teaspoon dried thyme

Steps:

  • In a bowl combine the salmon, dry breadcrumbs, green onions, celery, mayo, cayenne, dill, thyme, Worcestershire sauce and egg; mix well to combine.
  • Season with salt and lemon pepper or black pepper to taste.
  • Shape into 7 or 8 salmon cakes.
  • Melt the butter with the oil in a heavy skillet.
  • Brown salmon cakes on both sides (about 5 minutes per side).
  • Place on a dish or a serving platter lined with mixed greens.
  • To make the lemon aioli: mix all ingredients together.
  • Serve on or with the salmon cakes.
  • Delicious!
