DELICIOUS CHICKEN CASSEROLE
Chicken, soup, rice and sour cream make a meal everyone likes. The first time I made this we had company for dinner. Everyone had second helpings.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring to a boil the chicken breasts, celery, 1/2 teaspoon salt, 1/8 teaspoon pepper, and enough water to cover. Cover, reduce heat to medium low; simmer for 35 minutes. Drain, reserving 1 cup liquid. Cool chicken, remove meat from bones, and cut into bite-size pieces.
- In a large bowl, stir together sour cream, soup, broth, celery salt, onion powder, garlic powder, and salt and pepper to taste. Mix in cooked rice and chicken. Spoon mixture into a 9x13 inch casserole dish. In a resealable bag, shake together crushed crackers and melted butter. Sprinkle crackers over the top.
- Bake in preheated oven for 30 to 35 minutes.

EASY CREAMY CHICKEN CASSEROLE
This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

- Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
- Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. Whisk together the sour cream and cream of chicken soup in a large bowl. Stir in the chicken, then transfer the mixture to a 9x13-inch baking dish. Sprinkle the cracker mixture on top.
- Bake in the preheated oven until bubbly, 25 to 30 minutes.

- Cook the chicken (can microwave or preferred method)- pull apart chicken into bite size pieces.
- Mix both soups with sour cream.
- Crush 1-2 packets of the cracker.
- Grease 9x13 pan.
- Layer crushed crackers to cover bottom of pan.
- Pour 1/3 of butter over crackers.
- Add a layer of chicken, then add 1/2 of soup mix.
- Add another layer of crackers, butter, rest of chicken and soup mix.
- Finish with cracker layer and last of melted butter.
- Cook for 30-40 minutes in 350 degree oven until top brown and warmed through.
