STEAK BITES

- Trim off the excess fat from the meat, and then cut strips less than 1-inch wide. Rotate the meat and cut into small bite-size pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.
- Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
- Next, turn on your ventilation fan-you'll need it! Heat the skillet over medium-high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, and then get very brown, before you add the meat.
- Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30 to 45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.
- Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

- Whisk together the sesame oil, vinegar, green onion, garlic, hoisin sauce, and chile garlic sauce in a large glass or ceramic bowl. Add the beef tenderloin cubes and toss to evenly coat. Cover the bowl with plastic wrap and marinate at room temperature for 10 minutes, or in the refrigerator up to 8 hours.
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a baking sheet with aluminum foil.
- Spread the beef cubes onto the prepared baking sheet. Bake in the preheated oven until cooked to your desired degree of doneness, about 8 minutes for medium-well. Transfer to a bowl and toss with teriyaki sauce. Skewer each piece of beef with a toothpick and place onto a serving platter. Sprinkle with sesame seeds to serve.

I had leftover won ton wraps and I had a steak..nothing on Food.com so I searched the internet and this is what I found. This was a Nasoya Won Ton Wraps Contest Winner by Katherine. Her blog is http://kitchenenchantress.blogspot.com.

- First cut up skirt steak into bite-sized pieces, about 1/2 inch. Combine soy sauce, pineapple juice and pepper in a small saucepan, bring to a boil and add in the chopped skirt steak. Simmer for about 4 minutes, or until steak is fully cooked. Remove from heat and drain.
- To assemble: Place one won ton wrapper on a work surface. Spread about 1 teaspoon of cream cheese in center. Top with a couple of bite sized pieces of the prepared beef, a couple pieces of chopped green onion, about 1/2 teaspoon of chopped green chile, and about 1/4-1/2 teaspoon of crushed pine cuts. Moisten the tips of your finger and rub around the edge of the won ton wrapper. Bring the edge together and pinch together, sealing firmly and creating a small package. Repeat with the remaining won ton wraps.
- When all the wraps are filled bring a 4 inch depth of oil to a high heat in a 4 quart or larger saucepan. Gently drop in the beef bites and fry until crisp and golden, about 1-2 minutes. Remove from oil, drain on paper towels and arrange on platter.

- Trim beef and cut into 3/4 inch cubes.
- In a medium bowl, combine the garlic and all of the liquid ingredients. Add meat and toss to coat. Refrigerate 1-2 hours or overnight.
- Soak bamboo skewers in water for at least 30 minutes.
- Prepare a hot fire. Drain meat, reserving marinade, and pat dry.
- Thread 2-3 chunks of meat per skewer. Grill over hot coals, turning once and brushing with reserved marinade.

DYNAMITE BEEF BITES
These are so good and so easy to make. Great for appetizers! Keeping the title of this recipe in mind (dynomite, as in hot) you may want to use fewer hot peppers. Be sure to wash your hands and don't rub your eyes while preparing this recipe. Times are approximate.

- Slice steak in 1/4 inch-thick-strips, 4" long.
- Cut across the grain holding knife at an angle.
- Marinate strips in Salsa for one hour.
- Fill each jalapeno half with 1/2 teaspoons of the cream cheese.
- Wrap each jalapeno with a steak strip, covering the cream cheese as you wrap.
- Fasten steak ends with toothpicks.
- Grill or broil 4" from the heat for 4 minutes, turning after 2 minutes.
- Do not overccook.
