2 heads elephant garlic
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • preheat oven to 350.
  • seperate garlic into cloves.
  • remove papery outer coating from the garlic.
  • cut 1 inch from top of each clove.
  • place in a 1 quart casserole dish.
  • drizzle with oil and sprinkle with salt and pepper.
  • cover and bake 1 hour 30 minutes.
  • squeeze warm cloves out of skin and smash with a fork.

A simple delish garnish to any grilled dish. Elephant garlic - allium ampeloprasum - is more closely related to the leek than ordinary garlic. It is much less intense and sweeter then regular garlic. Use this as a garnish ,condiment to any soup stew, or add to salads.

1 elephant garlic clove
olive oil
1 pinch salt
1 pinch pepper
1 pinch sugar

Steps:

  • Slice peeled elephant garlic into 1/4 inch sliced.rub with oil and sprinkle with salt, pepper and sugar.
  • Place on a preheated grill for about 3 minutes each side.
  • Remove and cover with foil to continue cooking and keep warm.
  • Place on fresh crisp bread, garnish any grilled meat or veggies.
  • Or if you want eat it straight up!

DH and I made this tasty dip from my "Boy Gets Grill" cookbook. We easily halved the recipe to suit four people. I got lots of compliments from the friends I served it to. It is pretty lemony, so if you are not a fan of lemons, this may not be for you. Also, my feta was Bulgarian and it was extremely salty so I did not add any extra salt to the recipe. Also, we cheated and just used store bought pita chips.

12 scallions, dark green and pale green parts only, chopped
1 scallion, thinly sliced for garnish
1/4 cup extra virgin olive oil, plus extra for brushing the pitas
2 teaspoons grated lemon zest
2 tablespoons fresh lemon juice
1 lb feta, crumbled
salt, to taste
fresh ground black pepper, to taste
6 pocketless pita breads

Steps:

  • Combine the chopped scallions, oil, lemon zest and lemon juice in a food processor and process until smooth. (If you don't have a food processor, you can use an electric mixer or a wooden spoon instead, but the dip will not be as smooth). Add the feta and process until smooth.
  • Scrape the mixture into a serving bowl. (The dip can be made up to this point a few hours in advance, covered and kept refrigerated). Bring to cool room temperature before serving).
  • When ready to serve, season to taste with salt and pepper and garnish with the sliced scallion.
  • Heat your grill to high.
  • Brush the pitas with a little oil and sprinkle with salt and pepper. Grill the pitas for 1 minute on each side, until lightly browned. Remove from the grill and cut each pita into 8 wedges for serving. Serve warm with the dip.

CHARRED SCALLION DIP WITH LEMON AND HERBS



Charred Scallion Dip With Lemon and Herbs image

This creamy scallion dip could be the cooler cousin of ranch dressing or sour cream and onion dip. Grilled scallions add smokiness, while fresh chives and raw scallions lend brightness to the tangy, herb-flecked dip. If you don't have a grill or grill pan, you can broil the scallions in your oven. Once assembled, the dip benefits from chilling to round out the flavors. At least an hour works, but it's better after a day. It needs nothing more than potato chips alongside, but it's also great with crudités, crackers, grilled vegetables, fried chicken or slathered on sandwiches.

3 tablespoons minced fresh chives

1 tablespoon canola oil or other neutral oil
1/2 cup plus 2 tablespoons sour cream or Greek yogurt
4 ounces cream cheese, softened
1/2 teaspoon lemon zest plus 1 teaspoon lemon juice
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon granulated sugar
Extra-virgin olive oil, for drizzling
Potato chips, for serving

Steps:

  • Heat a grill or a grill pan over high.
  • As pan heats up, prepare the scallion-herb mixture: Halve 2 scallions lengthwise, then slice very thinly crosswise. Transfer to a medium bowl. Stir in chives and dill, if using. Season with salt and pepper, and set aside.
  • On a baking sheet, toss remaining 10 scallions with the canola oil. Season generously with salt and pepper, and toss to coat. Working in batches if necessary, grill the scallions over high heat, turning occasionally, until deeply grill-marked and slightly softened, 4 to 5 minutes. Transfer to a cutting board to cool.
  • While the scallions cool, add the sour cream, cream cheese, lemon zest and juice, onion and garlic powders, and sugar to the medium bowl with the scallion-herb mixture.
  • Thinly slice the grilled scallions, then add to the sour cream mixture and stir to combine. Season to taste with salt and pepper. Refrigerate until chilled, at least 1 hour or ideally 1 day. (The flavor will deepen as it sits.) To serve, drizzle with olive oil. Serve with potato chips for dipping.

4 cloves elephant garlic
3 sprigs fresh thyme
salt and freshly cracked black pepper to taste
1 tablespoon olive oil
8 ounces reduced-fat cream cheese, softened

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Trim root end from garlic cloves and remove skin. Place cloves on a large square of aluminum foil. Place thyme sprigs among the garlic, sprinkle with salt and pepper, and drizzle with olive oil. Fold up the sides of the foil to create a packet and place on a baking sheet.
  • Bake in the preheated oven until garlic is soft and golden brown, 45 minutes to 1 hour. Discard thyme and let garlic cool.
  • Place cream cheese into a medium bowl. Add garlic on top and mash cloves with a fork. Season with additional salt and cracked black pepper to taste, and stir mixture until evenly combined. Alternately, you may use a small food processor for a smoother consistency.

1 tablespoon olive oil, plus additional for the grill pan or grill
2 bunches scallions (about 12 scallions)
Kosher salt and freshly ground black pepperOne 8-ounce package cream cheese, at room temperature
1/2 cup mayonnaise
1/4 cup sour cream
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic salt
1/2 teaspoon onion powder

Steps:

  • Heat a grill pan or grill to medium-high heat. Lightly oil the grill grates.
  • Set 2 scallions aside. Drizzle the remaining scallions on a plate with the olive oil and sprinkle with salt and pepper. Add the oiled scallions to the grill pan and cook until slightly charred, 2 to 3 minutes per side. Set aside to cool completely, then finely chop. Thinly slice the whites and light greens of the remaining 2 scallions and set aside for garnish.
  • Combine the cream cheese, mayonnaise, sour cream, Worcestershire, garlic salt, onion powder and 1/4 teaspoon ground pepper in a medium bowl. Beat with an electric mixer until smooth. Stir in the grilled scallions. Transfer to a serving bowl and garnish with the fresh sliced scallions. Serve right away or chill.

4 tablespoons butter
2 scallions, finely chopped
5 garlic cloves, minced
1 -2 tablespoon brown sugar
2 tablespoons soy sauce

Steps:

  • Cook pasta according to package directions. Drain and rinse.
  • In a heavy skillet over medium heat, melt butter.
  • Add scallions and garlic.
  • Stir and cook without browning the garlic.
  • Cook until the garlic smell is fragrant and filling the room (about 5 minutes).
  • Add brown sugar and soy sauce and cook for another minute.
  • Increase the heat a bit and throw in the noodles.
  • Quickly saute the noodles until they are all coated with the garlicky butter mixture.
  • Serve immediately.
  • Garnish with additional scallions if desired.

LABNEH DIP WITH SIZZLED SCALLIONS AND CHILE

In this very high-brow version of ranch dressing, adapted from "Nothing Fancy" by Alison Roman (Clarkson Potter, 2019), scalliony chile oil gets sizzled with cilantro stems (or chives) and swirled into thick, lemony labneh.
