GOULASH
Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

- Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
- Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
- Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
- Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.
BOBBY'S GOULASH
This classic goulash recipe from Paula Deen's son Bobby is a great dish on cold winter weather nights. Ingredients include lean ground beef, elbow macaroni and homemade house seasoning. Prep time is approximately 10 minutes and cooking time takes 45 minutes over low heat on the stove top.

- In a Dutch oven, sauté the ground beef over medium-high heat until no pink remains. Break up the meat while sautéing. Spoon off any grease. Add the onions and garlic to the pot and sauté until they are tender, about 5 minutes. Add 3 cups water, along with the tomato sauce, diced tomatoes, Italian seasoning, bay leaves, soy sauce, House Seasoning and seasoned salt. Stir well. Place a lid on the pot and allow this to cook for 15 to 20 minutes. Add the elbow macaroni, stir well, return the lid to the pot, and simmer for about 30 minutes. Turn off the heat, remove the bay leaves, and allow the mixture to sit about 30 minutes more before serving. Serve with garlic bread and a salad.

I saw a Paula Dean Goulash recipe going around on Facebook. My mom used to make "Beefy Macaroni" when I was a kid. I took the best of both recipes and came up with the best Goulash/Beefy Macaroni I have ever had. I like to make a big pot of this and freeze for a quick dinner during the week. If you do not add the macaroni, this recipe will make 2 quarts and freezes well. Just make 1/2 a box of macaroni for each quart. It is even better when it is reheated. Enjoy!

- Cook ground pork (or ground beef) in skillet with onion, green pepper, garlic, garlic salt, black pepper and Italian seasoning.
- In another skillet cook mushrooms. Set aside when done.
- Once meat is thoroughly cooked, add soy sauce, stewed tomatoes and tomato sauce. Simmer for 20-25 minutes. Cook down to reduce some of the liquid.
- Boil macaroni according to package directions, drain very well.
- Add mushrooms and macaroni. Mix together.
- Top with cheese and serve.
