Easy Turkey Chili Mole from Longmeadow Farm image

Easy to put together, smells great while cooking. The addition of fresh tomatoes makes this simple recipe a real treat, without the heat element. You can however, add the heat element, as I have included this also as an option. Feel free to add or subtract spices as your taste buds allow. Adapted from, "The Vintner's Table Cookbook".

1 lb turkey, ground (or cubed)
1 tablespoon vegetable oil (or any oil that you wish)
1 large onion, finally chopped
1 garlic clove, minced
1 (35 ounce) can whole tomatoes, chopped
1 medium tomatoes, fresh chopped (optional)
1 teaspoon cumin
1 teaspoon coriander
1 -3 tablespoon chili powder (depending on your taste)
1/2 teaspoon dried oregano
1/2 cinnamon stick (or 1/2 teaspoon cinnamon)
1 1/2 ounces unsweetened chocolate
1 tablespoon red wine vinegar
1 (11 ounce) can cannellini beans (optional)
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1/4 teaspoon ground red pepper, to taste (optional)
1/4 teaspoon jalapeno powder (optional)
1 tablespoon low-fat sour cream
1 teaspoon fresh cilantro
1 tablespoon cheese, shredded

Steps:

  • Cook turkey in oil in a heavy bottomed saucepan, stirring until crumbly.
  • Remove turkey from pan, and drain, leaving 1 tablespoon of oil in pan.
  • Add onion, garlic to pan, and cook 3 minutes until soft.
  • Add canned tomatoes, fresh tomato (if using), cumin, coriander, chili powder, oregano, and cinnamon stick to this mixture.
  • Simmer uncovered for 15 minutes.
  • Add turkey to this mixture, and cook for 30 minutes, letting liquid evaporate, stirring occasionally.
  • Stir in chocolate, vinegar, and beans. Cook until chocolate is melted and combined well. Add salt, pepper, red pepper, and jalapeno powder to taste, if using. Remove cinnamon stick.
  • Spoon in to bowls, garnish with cilantro, and sour cream, and cheese.

PAVO MOLE (TURKEY MOLE)

Labor-intensive, messy, involved. Using earthy and ancient 'xocolatl' (chocolate), this mole sauce is equally good with chicken. Working in a well-ventilated kitchen is highly recommended. Mop the kitchen floor after preparing the mole as there is no point in cleaning the kitchen beforehand. Best to prepare this in an "assembly line" manner having your ingredients and utensils ready; reading through the recipe directions thoroughly before starting.

3 small dried pasilla peppers
3 small dried mulato chiles (read *NOTE)
1 1/2 cups boiling water
1/4 cup sesame seeds
4 whole cloves
1 whole cinnamon stick (1-inch piece)
1/4 teaspoon whole coriander seed
1/8 teaspoon anise seed
1/4 cup vegetable oil
1/4 cup whole almond, unblanched
1/4 cup raisins
6 turkey legs (about 3 pounds) or 6 turkey thighs (about 3 pounds)
1/4 teaspoon salt
1/2 cup white onion, coarsely chopped
2 garlic cloves
1 tablespoon tomato paste
1 1/2 ounces mexican chocolate (I use Ibarra brand)
1 cup fresh turkey broth
fresh cilantro, for garnish

Steps:

  • *NOTE: the chilies need to be toasted, seeds, deveined and rinsed.
  • Toasting Dried Chilies: Heat an ungreased heavy skillet (I use cast iron) over medium heat. Place the chilies on the grill in single layer. Cook the chilies 1 to 3 minutes until the color changes slightly (do not burn) and the chilies become fragrant but not harsh smelling. As they toast, press down on them with a spatula, and turn the chilies occasionally. Set aside to cool. When the chilies are cool enough to handle but still pliable, cut each chile open lengthwise with scissors. Carefully remove the seeds and the veins (membrane).
  • Place the prepared dried chilies in a medium bowl and cover with the boiling water. Let stand 1 hour.
  • Toast the sesame seeds in a dry, clean skillet over medium heat. Toast about 2 minutes, stirring constantly. Remove seeds from heat.
  • Combine the whole clove, cinnamon stick, coriander seeds and anise seeds in the same skillet and toast on medium heat about 1 minute. The spices will start to change color and become fragrant. Do not burn. Remove from skillet.
  • Heat the vegetable oil in a 12-inch skillet over medium heat until hot. Add the almonds. Cook and stir about 2-3 minutes until brown. Do not burn. Remove the nuts with a slotted spoon to a paper towel and drain.
  • Next add the raisins to the same skillet. Cook and stir 30 seconds or until puffed up. Remove with slotted spoon.
  • Sprinkle the turkey pieces with salt. Cook the poultry in the same skillet over medium heat for about 10 minutes or until browned, turning once. Remove to plate. Remove all but 2 tablespoons of the oil from the skillet.
  • In a blender place the raisins, processing until finely ground. Coarsely chop the almonds and add to blender. Process until finely ground. Add the onion, garlic and process until finely ground.
  • In an electric spice grinder process 2 tablespoons of the sesame seeds in on/off pulses. Add the sesame seeds to the blender.
  • Process the clove mixture in the electric spice grinder to a fine powder; add to blender.
  • Add the chilies, 1/3 cup of the soaking liquid and the tomato paste to blender. Process until smooth. If too thick, add about 1 teaspoon of the soaking liquid at one time until the blender does not labor and mixture blends easily. **WARNING: Avoid inhaling the ingredients in the blender. Wear a mask, especially if you have a weak respiratory system. Discard the soaking liquid.
  • Coarsely chop the chocolate with a knife or grate.
  • Reheat the oil in skillet over medium heat again until hot. Reduce the heat to medium-low. Add the chile mixture. Cook and stir for 5 minutes. Add the chocolate; cook and stir 2 minutes or until the chocolate is melted. Gradually stir in the stock. Cook and stir the chile mixture for 5 minutes.
  • Return turkey to the skillet. Reduce heat to low. Cover and simmer for 45 minutes or until the turkey is tender and juices run clear. Turn the turkey once or twice during simmering. Sprinkle the remaining sesame seeds over the turkey pieces just before serving. Garnish, if desired with fresh cilantro.

1 ½ teaspoons olive oil
1 pound ground turkey
1 onion, chopped
2 cups water
1 (28 ounce) can canned crushed tomatoes
1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed
1 tablespoon garlic, minced
2 tablespoons chili powder
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
  • Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

Mole is a traditional Mexican sauce infamous for it's laundry list of spices and complex flavor. This recipe takes the traditional route with the inclusion of turkey, pepitas, and pasilla chiles.

4 dried pasilla chiles
1/2 cup pepitas (pumpkin seeds)
1/3 cup dark raisins
1 bay leaf
2/3 cup tomato puree
1 teaspoon dried oregano
1 1/2 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon ground cloves
2 yellow onions, finely chopped
6 cloves garlic, thinly sliced
1 teaspoon ground cumin
1 3/4 cups low-sodium canned or Homemade Chicken Stock, skimmed of fat
1 skinless and boneless turkey-breast half, cut into 4 pieces
Olive-oil cooking spray

Steps:

  • Toast pasilla chiles in a skillet over high heat until darkened on both sides, about 1 1/2 minutes. Transfer to a small bowl, and add 1 cup hot water. Let sit 10 minutes.
  • Toast pepitas in skillet over medium heat, stirring, until golden, about 3 minutes. Transfer to a bowl. Toast raisins, stirring until slightly puffed, about 1 minute; transfer to bowl. Brown bay leaf on both sides, 1 minute.
  • Place chiles, soaking liquid, pepitas, raisins, bay leaf, tomato puree, oregano, cinnamon, salt, pepper, and cloves in the bowl of a food processor. Process 3 minutes.
  • Set a large saucepan over medium-high heat. When hot, coat with cooking spray. Add onions, garlic, and cumin; cover. Cook, stirring occasionally, until onions are slightly golden, 8 minutes. Stir in stock and the chile puree. Add turkey; cover. Simmer 1 1/2 hours.
  • Using a wooden spoon, shred turkey in the pan. Cook 5 minutes more, and serve.

3 cups turkey broth

1/4 cup peanut butter
1/4 cup of baking chocolate chips
2 tablespoons sugar
1 1/2 tablespoons chili powder
1/4 teaspoon ground cinnamon

Steps:

  • Saute onions in hot oil 4 minutes until brown.
  • Deglaze pan with 3 cups turkey broth 2 minute.
  • Add tomatoes, peanut butter, chips,sugar,chili powder and cinnamon.
  • Bring to a boil, lower heat and simmer for 15 minutes uncovered.
  • Remove from heat and puree in blender, or use an immersion blender like braun.
  • return to pan and add turkey meat.
  • Serve over white rice, it is delicous served with eggs like they do in Mexico.

1 teaspoon olive oil
1 small onion, diced medium
1/2 teaspoon red pepper flakes

2 teaspoons ground coriander
2 teaspoons dried oregano
1/2 teaspoon ground cinnamon

1 cup green lentil, washed
4 cups vegetable broth
1 (15 ounce) can diced tomatoes
2 teaspoons agave nectar or 2 teaspoons maple syrup
cilantro, for garnish (optional)

Steps:

  • Preheat a 4-quart soup pot over medium high heat. Saute onions and bell pepper in oil until translucent, 5 to 7 minutes. Add garlic and red pepper flakes and saute for another minute, using cooking spray or a splash of water if it's sticking. Mix in chili powder, cumin, coriander, oregano, salt and cinnamon. Add 1/2 cup of the vegetable broth and the cocoa powder; cook for about 1 more minute, while stirring, to dissolve the cocoa.
  • Add lentils, vegetable broth, diced tomatoes and eggplant. Cover pot and bring to a boil, keeping a close eye. Once it's boiling, lower heat to a simmer and cook for about 40 minutes, until lentils are tender and eggplant is soft. Mix in agave. Taste for salt and seasoning.
  • Let sit for 10 minutes or so for maximum flavor. Serve garnished with cilantro.
