Yield Makes 2 loaves

Number Of Ingredients 6

1 tablespoon plus 1 1/2 teaspoons active dry yeast (two 1/4-ounce envelopes)
2 1/4 cups warm water (110 degrees)
3 tablespoons plus 2 teaspoons honey
4 tablespoons unsalted butter, melted, plus more for bowl, pans, and brushing
7 cups all-purpose flour, plus more for surface and dusting
4 teaspoons coarse salt

Steps:

  • Sprinkle yeast over 1/2 cup water. Add 2 teaspoons honey. Whisk until yeast dissolves. Let stand until foamy, about 5 minutes. Transfer to the bowl of a mixer fitted with the paddle or dough-hook attachment. Add butter and remaining 1 3/4 cups water and 3 tablespoons honey. Whisk flour with salt; add 3 cups to yeast. Mix on low speed until smooth. Add remaining 4 cups flour, 1 cup at a time, mixing until dough comes away from sides of bowl and forms a ragged, slightly sticky ball. Butter a large bowl.
  • Knead dough on a floured surface until smooth and elastic but still slightly tacky, about 5 minutes. Shape into a ball. Transfer to prepared bowl; cover with plastic wrap.
  • Let dough stand in a warm place until it doubles in volume (it should not spring back when pressed), about 1 hour. Butter two 4 1/2-by-8 1/2-inch loaf pans. Punch down dough; divide in half.
  • Shape 1 dough half into an 8 1/2-inch-long rectangle (about 1/2 inch thick). Fold long sides of dough in to middle, overlapping slightly. Press seam to seal. Transfer dough, seam side down, to pan. Repeat with remaining dough. Brush each loaf with butter, or dust with flour for a rustic look. Preheat oven to 450 degrees. Drape loaves with plastic. Let stand until dough rises about 1 inch above tops of pans, 45 minutes to 1 hour. Reduce oven temperature to 400 degrees. Bake, rotating pans after 20 minutes, until tops are golden brown, about 45 minutes. Transfer to wire racks. Let cool slightly; turn out loaves. Let cool completely before slicing.

Classic White Sandwich Bread image

I got this recipe from one of my cookbooks and I would not change a thing. I started baking my own bread to save money but this loaf is worth twice what you pay in stores for its taste. This bread is easy to slice and is perfect for everything you would normally use bread for. If any gets old then use it for bread crumbs or croutons. Recipe is for 2 loaves.

Number Of Ingredients 9

1/4 cup warm water
2 cups warm milk (recipe calls for whole milk but I use 1%)
4 teaspoons active dry yeast
2 tablespoons sugar (I always use the sugar, never tried honey) or 2 tablespoons honey (I always use the sugar, never tried honey)
1 pinch sugar
2 tablespoons unsalted butter, melted (margarine works well, too)
1 tablespoon salt
6 -6 1/4 cups bread flour, plus extra
canola oil, for greasing (I use regular vegetable oil)

Steps:

  • In a small bowl combine water and 1/4 cup of the warm milk. Sprinkle yeast and pinch of sugar over liquid and stir. Let sit until foamy, about 10 minute.
  • Combine remaining milk, butter and 2 tbs sugar, salt and 2 cups flour in large bowl and mix until creamy. I mix everything by hand but you can use a mixer on med-low for about 1 minute.
  • Add yeast mixture and one cup of flour and mix by hand or beat with mixer.
  • Mix or beat in remaining flour 1/2 cup at a time until the dough pulls away then switch to kneading until all the flour is mixed in, until smooth and elastic.
  • Transfer the dough to an oiled deep bowl and turn the dough once to coat it.
  • Cover loosely with plastic wrap and let rise until doubled in bulk, about 1 1/2 hours depending on the temperature of your kitchen.
  • Lightly grease two 9X5 loaf pans.
  • Turn the dough out onto a lightly floured board and divide in half.
  • Pat each half into a long rectangle.
  • Fold one rectangle like a letter, overlapping the short sides into the middle. Press to flatten.
  • Beginning at the narrow end, roll the dough into a log and roll the log until it is the same length as the loaf pan.
  • Pinch the ends and along the seam to seal and place in loaf pan seam side down.
  • Repeat folding with other half of dough.
  • Cover loosely with plastic and let rise until dough is about 1 inch above pan about 1 hour.
  • Bake in oven preheated to 375 degrees F until loaves are golden brown and pull away from the edge of the pans, about 40 minutes.
  • Turn onto racks and let cool completely.

For sandwiches, toast, and French toast, you just can't beat a classic American sandwich loaf, with its creamy-white interior, golden crust, and soft, easily sliceable texture. I found this recipe on kingarthurflour.com. It is a wonderfully easy recipe to make with terrific results!

3 cups unbleached all-purpose flour (use King Arthur Flour if you can)
1/2 cup milk
1/2 cup hot water, to make a soft, smooth dough
4 tablespoons butter, melted
2 tablespoons sugar
1 1/4 teaspoons salt
2 teaspoons instant yeast (or 1 packet active dry yeast dissolved in 1 tablespoon warm water)

Steps:

  • Mixing:
  • In a large bowl, combine all of the ingredients and stir till the dough starts to leave the sides of the bowl.
  • You may need up to 2/3 cup of hot water to make a soft, smooth dough.
  • Transfer the dough to a lightly greased surface, oil your hands, and knead it for 6 to 8 minutes, or until it begins to become smooth and supple. (You may also knead this dough in an electric mixer or food processor, or in a bread machine set to the dough or manual cycle).
  • Transfer the dough to a lightly greased bowl, cover the bowl, and allow the dough to rise till puffy though not necessarily doubled in bulk, about 60 minutes, depending on the warmth of your kitchen.
  • Shaping:
  • Don't punch down the dough. Transfer it to a lightly oiled work surface, and gently shape it into an 8-inch log.
  • Place the log in a lightly greased 8 1/2 x 4 1/2-inch loaf pan, cover the pan loosely with lightly greased plastic wrap, and allow the bread to rise for about 60 minutes, until it's domed about 1 inch above the edge of the pan.
  • A finger pressed into the dough should leave a mark that rebounds slowly.
  • Baking:
  • Bake the bread in a preheated 350°F oven for about 35 minutes, until it's light golden brown.
  • Test it for doneness by removing it from the pan and thumping it on the bottom (it should sound hollow), or by measuring its interior temperature with an instant-read thermometer (it should register 190°F at the center of the loaf).
  • Remove the bread from the oven, and cool it on a wire rack before slicing.
  • Store the bread in a plastic bag at room temperature.

  • In a large bowl (or mixer with dough hook), mix together the water, yeast, honey, and 3 cups of flour. Mix well until combined. Cover with a clean sack cloth towel or sprayed plastic wrap and wait about 20 minutes, or until the mixture has almost doubled in size and looks “sponge-like”.
  • Add 3 more cups of flour, salt, and butter to your sponge. It is normal for your sponge to “deflate” as you mix this together. Slowly incorporate the remaining flour in ½ cup increments. When the dough seems soft, not too sticky, and is gently pulling away from the sides of the bowl, it means you’ve added enough flour. Knead for 10 minutes. If you are kneading by hand: when the dough mixture becomes more difficult to stir and work with in the bowl (usually at about 5 – 5 ½ cups) I like to work in the rest of the flour by hand. Place the dough on a clean, floured work surface. Sprinkle a little flour on top of the dough and begin to knead. The quicker you work your hands, the less likely they are to stick. I like to knead by pulling in the corners of the dough with my fingers and then pressing down with heel of my hand, quickly and gently over and over again. While doing so, I continue to slowly add additional spoonfuls of flour. This will take about 10 minutes depending on how fast you
  • Grease two 9x5 inch pans. Punch down the risen dough to release air bubbles. Dividethe dough in half. Gently work your dough into a thick rectangle (about 12x8) and fold into thirds. Roll it up, pinch the seams together, and gently throw your loaf on the work surface to release any last air bubbles. (There are many ways to form a loaf. Do what's comfortable and what works for you.)
  • Bake for about 25 minutes or until bottoms are golden brown. If the tops are browning too quickly, but still needs time to cook, you can cover tops with aluminum foil to slow down the browning.Transfer loaves to a cooling rack and generously lather the tops with butter while warm.
