MARY BERRY'S TOFFEE PEAR PUDDING
This indulgent dessert recipe, as seen in Mary Berry's BBC2 series Simple Comforts, has all the gooey sweetness of a sticky toffee pudding but with an added hint of freshness from the pears.

- 1. You will need a shallow 2 litre (3½ pint) ovenproof dish, measuring about 30 x 20 x 6cm (12 x 8 x 2½in). Preheat the oven to 180°/160° fan/Gas 4 and lightly grease the dish with butter. 2. Slice one pear half into thin horseshoe shapes and set these aside for decoration. Cut the remaining pears into 1cm (½ in) pieces. 3. To make the pudding, measure the butter and sugar into a mixing bowl. Using an electric hand whisk, beat until light and creamy. Add the remaining ingredients and whisk again to make a smooth, thick batter. Stir in the chopped pears. 4. Pour into the prepared dish. Bake in the oven for about 40 minutes until the pudding is well risen, coming away from the sides of the dish and springy to the touch. 5. To make the sauce, measure all the ingredients into a saucepan and heat gently until the butter has melted. Increase the heat and boil for a couple of minutes, stirring all the time until the sauce has thickened slightly. 6. Arrange the reserved pear slices along the centre of the dish. Pour half the sauce over the pudding, then pour the rest into a warm jug. Serve the pudding warm with the sauce and some ice cream, custard or cream. Prepare ahead: Can be made and cooked, without the sauce, up to 6 hours ahead. Sauce can be made up to 2 days ahead. - In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, milk and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
- Drop by spoonfuls onto prepared baking sheet. Let cool completely.

- Butter a 2-quart casserole dish.
- In a mixing bowl combine first 6 ingredients; add in milk and beat until smooth (about 2 minutes).

SQUIDGY CHOCOLATE PEAR PUDDING
This hot, gooey chocolate pud, with dark chocolate and canned pears, can be made ahead and frozen - a perfect no-fuss dinner party dessert

- Heat oven to 190C/170C fan/gas 5. Lightly grease a roughly 20 x 30cm shallow ovenproof dish. Put the butter in a large saucepan and place over a low heat until just melted. Remove the butter from the heat and stir in the sugar until well combined.
- Whisk the eggs together in a large bowl. Gradually add the eggs to the butter and sugar, beating well with a wooden spoon in between each addition. Sift the flour and cocoa powder on top of the egg mixture, then beat hard with a wooden spoon until thoroughly combined.
- Pour into the prepared tin or dish and nestle the pears into the chocolate batter. Put the chocolate on a board and cut into chunky pieces roughly 1.5cm with a large knife. Scatter the chocolate pieces over the batter and sprinkle with almonds, if you like. Can be frozen at this stage.
- Bake in the centre of the oven for 30 mins or until the mixture is crusty on the surface and lightly cooked inside. Do not allow to overcook, as the cake will become spongy rather than gooey in the centre. Serve warm with cream or ice cream

- Drain and chop the pears, 1/2" chunks, reserve 1 cup of syrup.
- Toss together the nuts, cinnamon, pears& biscuit mix.
- Place this mixture in a shallow baking dish.

- Preheat oven to 325 degrees F (165 degrees C). Coat a 13x9-inch baking dish with 1/4 cup melted butter.
- Pour half and half and milk over bread in a large mixing bowl; let soak for 10 minutes before gently stirring. Stir eggs into the bread mixture until incorporated. Add sugar, vanilla extract, cinnamon, and raisins respectively, stirring each addition into the mixture before adding the next. Spoon bread mixture into prepared baking dish.
- Bake in preheated oven until bread mixture is firm and pudding-like, about 50 minutes.
- Stir 1/2 pound unsalted butter, heavy cream, and brown sugar together in a heavy saucepan; bring to a boil. Reduce heat to low, stir pecans into the cream mixture, and simmer until the sugar is dissolved and the sauce thickens, about 5 minutes; pour over bread pudding to serve.

- Mix butterscotch pudding (not instant) sugar, brown sugar, milk and butter in a heavy 1 1/2 quart pan.
- Cook and stir to a full all over boil.
- Then boil slowly 3-5 minutes.until mixture reaches soft ball stage.
- Remove from heat.stir in pecans.beat until mixture begins to thicken, but still looks shiny.
- Drop tblsful of mixture onto waxed paper to form 3" pralines.
- If mixture thickens and starts to loose its shine, add a few drops of milk before dropping more.
- Let pralines stand till firm.

- Heat the oven to 180°C/160°C fan/ gas 4. For the pastry, sift the flour and a pinch of salt into a large mixing bowl. Grate in the butter and mix with your fingertips to the consistency of fine breadcrumbs. Mix in the sugar, then add the egg yolks. Combine into a dough, adding a splash of ice cold water to bring it together (see tips). Wrap the pastry in cling film, then chill, along with a loose-bottomed 24cm x 5cm deep tin, for 1 hour.
- Meanwhile, put all the nuts on a non-stick baking tray and toast in the oven for 8-10 minutes until golden but not brown. Remove from the oven and leave to cool.
- When the pastry has chilled, dust a work surface with flour. Unwrap the pastry and roll out into a circle the thickness of a pound coin – it must be large enough to fit the tin.
- Take the tart tin out of the fridge and loosely wrap the pastry around a rolling pin. Lift directly on top of the tin, then unroll gently into the tin, making sure it doesn’t tear. Gently press the pastry into all the flutes and edges, leaving an overhang. Chill in the freezer for 15 minutes.

- Preheat oven to 350F. Prepare 4-6 ramekins (4 large or 5-6 smaller) or one large baking pan, such as an 8x8 or 8-inch round or similar size, by lightly buttering or spraying with cooking/baking spray. Set aside.
- In a large bowl, whisk together the flour, sugar, baking powder and salt. Measure out the milk and add the vegetable oil and vanilla to the milk. Pour into bowl with the flour mixture. Add the eggs and stir until smooth. Add the pear and stir to coat.
- Spoon batter into prepared ramekins, dividing evenly between them. Don't over-fill, as these will rise as they bake. Fill no more than about 2/3 full! Place ramekins on a baking sheet and place in preheated oven to bake for 20 minutes.
