Here's what you need: ice cream, chocolate chips, coconut oil, crispy rice cereal

Number Of Ingredients 4

ice cream, any flavor, softened
2 cups chocolate chips
½ cup coconut oil, use refined for a neutral taste
⅓ cup crispy rice cereal

Steps:

  • Spread out softened ice cream on a wax paper lined baking tray. Cover with wax paper and press down to evenly spread and smooth. Freeze overnight.
  • Remove ice cream from tray, peel off the wax paper and cut into bite size squares. Return to the freezer until ready to dip.
  • Microwave 2 cups (350 grams) of chocolate chips with ½ cup (100 grams) coconut oil for 90 seconds, stopping to stir every 30, until melted and smooth. Allow chocolate mixture to come to room temperature.
  • Mix in rice cereal.
  • Working quickly and in small batches, coat ice cream cubes in chocolate mixture and return to the freezer to harden up.
  • Enjoy!

1-1/2 cups sugar
1/2 cup baking cocoa
1 teaspoon vanilla extract
2 cups heavy whipping cream

Steps:

  • Combine half-and-half, sugar, cocoa and vanilla in a blender; process on low until smooth. Stir in heavy cream. Freeze in an ice cream freezer according to manufacturer's directions.

Forget the faff of ice cream makers and custard - this fudgy chocolate ice cream not only tastes divine, it's easy to make at home too

200g dark chocolate (at least 70% cocoa solids), chopped into small pieces
500ml double cream
340g can sweetened condensed milk
1 tsp vanilla extract
3 tbsp organic cocoa powder, sifted
50g milk chocolate chips
sea salt flakes, to serve (optional)

Steps:

  • Melt the chocolate in a heatproof bowl set over a pan of just-simmering water, ensuring the bowl doesn't touch the water, or do this in the microwave in 20-second bursts until smooth and glossy. Leave to cool slightly. Pour the cream, condensed milk and vanilla into a second bowl and beat for 3 mins using an electric whisk until slightly thickened and the beaters leave a trail in the mixture when lifted across the bowl. Be careful not to overwhip, as you don't want the mixture to be too stiff - as soon as the beaters leave a trail, it's ready.
  • Gently fold the melted chocolate and cocoa powder into the cream mixture until thoroughly combined, ensuring the spatula is reaching the bottom of the bowl so all the chocolate gets mixed in. Fold in most of the chocolate chips, reserving a small handful. Scrape the mixture into a 1-litre freezerproof container, then scatter over the reserved chocolate chips. Cover and freeze for at least 6 hrs until firm but scoopable. Will keep frozen for up to a month. To serve, scoop the ice cream into chilled bowls or ice cream cones and sprinkle with a pinch of sea salt, if you like.

3 tablespoons butter
2 1/2 cups sugar
4 tablespoons flour
1/2 teaspoon salt
5 cups milk, scalded
6 eggs, beaten
4 cups heavy cream
4 1/2 teaspoons vanilla

Steps:

  • Saute black walnuts in the 3 Tbs. of butter & let cool.
  • Combine sugar,flour & salt,slowly stir in hot milk.
  • Cook 10 minutes over low heat,stirring constantly.
  • Stir small amount of cooked mixture into beaten eggs,return to milk mixture & cook 1 mniute.
  • Chill in refrigerator,then pour in ice cream freezer & add cream & vanilla.
  • Churn in freezer for about 15 minutes,then add black walnuts & finish freezing.

This was always my father's favorite flavour of ice cream, and there is nothing tastier or better than fresh homemade icecream. This goes great with large wedges of apple walnut pie,a nd if you are feeling really decadent, butterscotch sauce poured over all.

Number Of Ingredients 6

1 cup grade b maple syrup
2 cups heavy cream
1 cup whole milk
1/4 teaspoon salt
2 large eggs
1/3 cup walnuts, toasted and chopped

Steps:

  • Boil syrup in a 2 quart heavy saucepan over moderately high heat until reduced to 3/4 cup, 5 to 10 minutes.
  • Stir in cream, milk and salt and bring to a boil over moderate heat.
  • Whisk eggs in a large bow, then add hot cream in a slow stream, whisking.
  • Transfer to a saucepan and cook over moderately low heat, stirring constantly, until slightly thickened and an instant read thermometer registers 170*F, 1 to 2 minutes (do not let boil!).
  • Pour custard through a fine sieve into a clean metal bowl, then cool, stirring occasionally.
  • Chill, covered, until cold, at least 3 hours.
  • Freeze custard in an ice-cream maker until soft frozen, then with motor running, add nuts.
  • Continue churning ice cream until frozen, then transfer to an airtight container and put in freezer to harden.
