1 TBS Olive Oil
1 Pound Ground Meat (Beef, Turkey or Sausage) ( - at room temperature & gently patted dry (SEE NOTES))
Kosher Salt & Ground Black Pepper
1 small Yellow Onion ( - small dice( about 1 ½ cups))
1 small Bell Pepper ( - small dice (about 1 cup))
2 cloves Garlic ( - minced)
1 TBS Chili Powder
2 tsp EACH: Ground Cumin, Smoked Paprika & Dried Oregano
2 TBS Tomato Paste
1 Cup Beer OR Beef Broth
1 (14 ounce) Can Fire Roasted Diced Tomatoes
1 (8 ounce) Can Tomato Sauce
1 ½ tsp EACH: Dark Brown Sugar & Worcestershire Sauce
1 Bay Leaf

Steps:

  • Brown beef: In a large pot or Dutch oven, heat oil over medium-high heat. Add the beef and cook, undisturbed for 2-3 minutes, or until edges start to brown. Season with a ½ teaspoon of salt and a ¼ teaspoon of pepper. Use a spatula to flip the beef over and use the back of a wooden spoon to break up the beef into large crumbles. Cook, stirring occasionally, until beef is browned, but not completely cooked through, about 3-4 additional minutes. Use a large slotted spoon to transfer the beef to a plate or bowl. Drain off all but 1 tablespoon of oil from the pan, or if the pan seems dry, add a splash of oil (SEE NOTES).
  • Sauté vegetables: Reduce heat to medium. Add the onion and bell pepper. Cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, chili powder, cumin, paprika and oregano. Season to taste with salt and pepper. Cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until the tomato paste is caramelized, about 1-2 minutes.
  • Add the liquids: Add in the beer (or broth), using the back of a spoon to scrape of any brown bits stuck on the bottom of the pan. Let cook for 1-2 minutes. Add the diced tomatoes, tomato sauce, sugar, Worcestershire and bay leaf. Add in the beef along with any accumulated juices. Bring to a gentle boil over medium-high heat. Immediately reduce heat to simmer and cover.
  • Simmer: Cook, uncovering to stir a couple times, for 30 minutes. Uncover and cook for 10 minutes, or until chili is thick and saucy. Use tongs to remove bay leaf and discard. Taste and adjust for seasoning with salt and pepper.
  • Serve: Ladle warm chili into individual bowls and garnish with optional toppings. Enjoy!

1 white onion, diced
1 green pepper, diced
1 jalapeño, seeded and diced
4 cloves garlic, minced
2 teaspoons cumin
1 teaspoon paprika
2 tablespoons mild chili powder
1 teaspoon salt
1 teaspoon black pepper
6 ounces tomato paste
2 tablespoons cornmeal
1 (28-ounce) can chunky tomato puree (or diced tomatoes)
2 cups beef stock
For the toppings:
Sliced scallions
Sour cream
Grated cheddar cheese
Tortilla chips
Diced avocado
Diced onion

Steps:

  • Add the tomatoes and beef stock to the chili: Use the liquid to scrape up any bits stuck to the pan.

My husband won't eat beans but LOVES chili, so I had to come up with this variation on an old favorite. Instead, it contains lots of canned tomatoes and onion. This is great served over rice with some shredded cheese and a dollop of sour cream. Ground turkey may be substituted for ground beef.

1 pound ground beef
2 cloves garlic, minced
1 large onion, chopped
2 tablespoons chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon hot pepper sauce
1 (28 ounce) can crushed tomatoes
¼ cup red wine vinegar

Steps:

  • Crumble the ground beef into a stock pot or large Dutch oven over medium-high heat. Add the onion and garlic, and cook stirring frequently until beef is evenly browned. Drain off excess grease.
  • Season with chili powder, oregano, cumin and hot sauce. Stir in the tomatoes and vinegar. Bring to a boil, then reduce heat to low, and simmer for about 1 hour - or longer if you have time. Stir occasionally to prevent burning on the bottom.

3 lbs coarse grind ground beef
6 cloves garlic, minced
7 tablespoons chili powder
1 tablespoon ground cumin
1 (8 ounce) can tomato sauce
2 cups beef broth
3 tablespoons masa harina
1 teaspoon salt
1 teaspoon cayenne pepper
1 tablespoon paprika

Steps:

  • Brown beef in a large deep pan.
  • Drain fat.
  • Add the garlic, 6 tbsp of the chili powder, and cumin, stirring to coat beef.
  • Add the tomato sauce and the beef broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 1 hour (add some water if your heat is too high and chili gets too thick).
  • Add masa gradually, stirring after each addition, until chili reaches desired thickness.
  • Simmer 15-20 minutes more, then season to taste with salt and add cayenne, paprika, and last tbsp of chili powder.

2 onions
2 lbs ground beef, 90% lean
1 tablespoon chili powder
2 teaspoons salt

2 (15 ounce) cans red kidney beans, undrained
2 (16 ounce) cans chopped tomatoes, undrained

Steps:

  • Saute onions in olive oil until translucent. add minced garlic and continue to saute until fragrant, about 30 seconds.
  • In dutch oven, brown ground beef. Drain and add onions and garlic.
  • Add spices and tomatoes with juice -- DO NOT DRAIN. Heat to boiling and simmer for one hour.
  • Add beans (also DO NOT DRAIN) and heat through, approximately 20 minutes.
  • Top with cheese and serve with hot biscuits or corn bread.
  • If in a hurry, you can cook onions and garlic with the beef, and also add the kidney beans at the beginning and simmer the whole thing for as little as half an hour. It turns out fine, it's just that the flavor is not as developed.
