These potato cakes are great with any meal or as a snack. Simple and quick to make with only a few ingredients. Kids of ALL ages love 'em.

2 cups mashed potatoes
1 cup all-purpose flour
1 onion, diced
1 egg
½ teaspoon ground black pepper
½ teaspoon salt
½ cup vegetable oil, or as needed

Steps:

  • Mix mashed potatoes, flour, onion, egg, black pepper, and salt together in a bowl until batter consistency.
  • Heat vegetable oil in a skillet over medium heat. Drop 4-inch circles of batter into hot oil. Cook until golden brown, about 5 minutes per side. Remove with a slotted spoon and drain on paper towels. Repeat with remaining batter.

One-Pot Kielbasa Cheddar Potatoes image

Turn Betty Crocker™ potatoes into an easy skillet with kielbasa and Cheddar cheese - yum!

1 tablespoon butter
1 package (14 oz) fully cooked kielbasa sausage, cut in half lengthwise, then cut in 1/2-inch slices
1 cup diced onions
1 box (4.7 oz) Betty Crocker™ scalloped potatoes or au gratin potatoes
2 cups water
1/2 cup frozen sweet peas
4 oz (half of 8-oz package) cream cheese, cubed and softened
1 cup shredded Cheddar cheese (4 oz)
2 green onions, thinly sliced

Steps:

  • Heat 12-inch nonstick skillet over medium heat. Melt butter in skillet; add sausage and onions. Cook 7 to 9 minutes, stirring occasionally, until sausage is lightly browned on edges.
  • Add potatoes and sauce mix (from potato box), and 2 cups water; stir well to combine. Heat just to boiling, stirring occasionally. Reduce heat. Cover and simmer 10 minutes, stirring occasionally. Stir in frozen peas; cook 3 to 5 minutes or until potatoes are tender and sauce is thickened.
  • Remove from heat; stir in cream cheese, and continue stirring until cheese is melted. Top with Cheddar cheese and green onions; serve immediately.

If you looking for ways to use your instant potato flakes then here is a really great recipe! feel free to adjust all amounts to taste, this takes only minutes to make and my family loves them, don't try this recipe using regular mashed potatoes, it will not work --- this recipe was tested using Idahoan brand mashed potato flakes but I am sure any brand will work fine, servings is only estimated.

2 cups instant potato flakes
1 cup finely shredded cheddar cheese
2 tablespoons flour
1/4 cup cornmeal cornmeal
1 -2 teaspoon seasoning salt
1 teaspoon garlic powder (or to taste)
2 green onions, finely chopped
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon fresh ground black pepper (to taste)
2 cups milk
1 large egg
1/4 cup melted butter
vegetable oil (for frying)

Steps:

  • In a bowl combine the first 9 ingredients.
  • In another bowl mix the milk with egg and melted butter whisk until well combined; add to the dry mixture; mix well.
  • Let mixture stand for about 10-12 minutes until the liquid is absorbed.
  • Heat oil in a skillet over medium heat.
  • Using slightly wet hands tightly shape into small balls (about 2 tablespoons) place into hot oil then press down lightly with back of a spoon).
  • Cook about 3 minutes on each side or until browned adding in more oil as needed.
  • Remove to paper towels.

This is a really great tater recipe, it's one I have been making for a long time, not only is it easy to make it's so good! You really don't have to have the exact amounts for this recipe, throw in another potato if desired, use as much cheese as as you like!

4 large russet potatoes (peeled or unpeeled)
1/4 cup butter
1 small onion, finely chopped
salt and pepper (I use seasoned salt for this)
1/2 teaspoon dried thyme (or to taste)
1/2-1 teaspoon garlic powder (optional) or 1 tablespoon minced fresh garlic (optional)
1 1/2 cups shredded cheddar cheese (or to taste)
2 tablespoons chopped fresh parsley

Steps:

  • Set oven to 425 degrees.
  • Butter a shallow baking sish.
  • Thinly slice the potatoes, and place in the baking dish.
  • In a small saucepan, heat butter, onion, salt, pepper, garlic powder and thyme until the butter is melted.
  • Drizzle over potatoes.
  • Cover, and bake for 45 minutes, or until potatoes tender.
  • Remove from oven, sprinkle with cheese and parsley.
  • Return to oven and bake for another 10-15 minutes longer, or until cheese is melted.

This is a variation of a potato cake recipe I've made for years. These cakes are not as stiff as regular potato cakes so I make the portions a little smaller when I cook them.

3 cups mashed potatoes (leftovers)
1/4 onions, minced or 1 tablespoon instant minced onion
1 egg
1/3 cup flour
2 ounces cheddar cheese, shredded (I use 50% less fat version)
salt, to taste
pepper, to taste

Steps:

  • Mix all ingredients together.
  • Place spoonfuls of potato mixture in greased fry pan.
  • Cook on medium/medium high heat for approximately 5 minutes or until bottom of cakes are golden brown.
  • Flip, mash down with spatula and cook for another 5 minutes or until golden brown.

2 tablespoons extra virgin olive oil
4 cups cooked mashed potatoes, firm and cold
1 cup smoked cheddar cheese, Tillamook preferred
3/4 cup grated parmesan cheese
1/4 cup flour

Steps:

  • 1. Heat olive oil in a large skillet over medium heat.
  • Stir together the mashed potatoes and smoked cheddar then scoop about ¼ Cup mashed potatoes and form into equal size small patties.
  • Combine parmesan cheese and flour into a shallow dish and press potato patties into mixture.
  • In batches, place patties into hot skillet and cook for 2-4 minutes per side or until golden brown. Transfer to a paper towel lined plate.
  • Serve warm with ranch dressing if desired.

I am always looking for quick and easy dinner ideas to feed my busy family. When I stumbled upon this one, I tried it and my family instantly fell in love with these. I add about a 1/4 to 1/2 cup of real bacon bits to the batter... MMM MMM GOOD!!

2 c instant potato flakes,
1 c cheddar cheese, shredded
2 Tbsp flour
1/4 c cornmeal
1 tsp seasoning salt
1 tsp garlic powder
1/4 c onions
1/2 tsp black pepper
2 c milk
1 large egg
1/4 c butter, melted
vegetable oil (for fying)

Steps:

  • 1. In a bowl combine dry ingredients and onion. In another bowl mix milk, egg, and melted butter. Whisk until well combined; add to the dry mixture; mix well. Let the mixture sit for 10-12 minutes until liquid is absorbed. Heat oil in skillet over medium heat.
