1 cup milk ((250 ml))
1/4 cup thickened cream (heavy cream) ((60 ml))
3 egg yolks
1/2 cup caster sugar
2 teaspoons cornflour
1/2 tablespoon brandy

Steps:

  • Bring milk and cream to the boil in a saucepan.
  • Whisk together egg yolks, sugar and cornflour.
  • Pour milk and cream mixture over egg, sugar and cornflour mixture slowly, whisking to combine.
  • Pour mixture back into the saucepan and heat gently, whisking regularly.
  • Mixture should thicken within 5 minutes. Don't allow mixture to boil.
  • Once thickened, remove from heat.
  • Add brandy and whisk through to combine.
  • Serve immediately or allow to cool a little before covering with plastic food wrap and storing in the fridge.

This sherry- and brandy-infused trifle was inspired by a Victorian recipe.

9 large egg yolks
3/4 cup sugar
4 tablespoons plus 2 teaspoons all-purpose flour
1/8 teaspoon salt
3 cups milk, warmed
1 teaspoon pure vanilla extract
3 tablespoons brandy
1 cup heavy cream
14 ladyfingers, halved lengthwise
3/4 cup raspberry jam (9 ounces)
1 cup cream sherry
1 cup sliced almonds, toasted
16 amaretti (Italian almond cookies), broken (about 1 1/4 cups)

Steps:

  • Put yolks and sugar in the bowl of an electric mixer fitted with the whisk attachment; beat on medium-high speed until mixture is pale and thick, 2 to 3 minutes. On low speed, beat in flour and salt. Gradually beat in half of warm milk.
  • Pour milk-yolk mixture into remaining milk in pan. Bring to a boil over medium heat, whisking. Cook, stirring, until thickened, about 2 minutes. Pour through a fine sieve into a bowl.
  • Transfer to an ice-water bath; let cool, stirring occasionally. Stir in vanilla and brandy. Place plastic wrap on surface. Refrigerate until ready to use, up to 3 days.
  • Beat cream just until stiff peaks form. Fold into pastry cream. Place 7 ladyfinger halves at bottom of a 12-cup trifle dish; spread with one quarter of jam. Pour in one quarter of sherry. Spoon one quarter pastry cream on top. Sprinkle with one-third each almonds and amaretti. Repeat layering 3 more times (last layer does not need almonds and amaretti). Refrigerate 3 hours or overnight.

BRANDIED PEACH CUSTARD PIE

4 whole peaches, peeled and cut into 1/4-inch wedges
3 tablespoons butter
1/2 cup sugar
1/4 cup brandy
2 cup heavy cream
4 eggs
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 unbaked pie crust (recipe follows)
Shaker with powder sugar
Fresh mint
Pastry bag of whipped cream
Pie Crust:
2 cup flour
1/4 teaspoon salt
1 1/2 teaspoon sugar
1 cup solid vegetable shortening
1/2 cup ice water

Steps:

  • Preheat the oven to 450 degrees.
  • For the peaches: Over high heat, in a saute pan, heat the butter. When the butter is hot add the sugar. Stir until the sugar is dissolved. Add the peaches and saute for 5 to 6 minutes, or until the sugar starts to turn dark amber in color. Incorporate the brandy into the peach mixture. Carefully ignite the brandy and flambe the peaches. Remove from heat and allow to cool, about 10 minutes.
  • For the custard: In a mixing bowl, whisk all the ingredients together until fully incorporated. In an unbaked pie crust, spoon the brandied peaches over the pie crust. Place the crust in the oven and pour the custard into the shells. This prevents spilling the custard in the oven. Bake for 1 hour or until the custard sets. Place foil around the crust for the first 30 minutes and then remove. This keeps the crust from getting too brown. Allow to cool for about 30 minutes. Place a slice of the pie on the plate and garnish with powder sugar, whipped cream, and fresh mint.
  • For the crust: In a mixing bowl, combine the flour, salt and sugar. Add the shortening and work it through with your hands until the mixture resembles coarse crumbs. Add the water, 1 tablespoon at a time, and work it in with your hands until you have a smooth ball of dough. Wrap the dough in plastic and refrigerate for at least 30 minutes. Remove the dough from the refrigerator and place it on a lightly floured surface. This recipe will make two pie crusts.
  • For the individual crust: Divide the dough into fourths. Roll out the dough on the floured surface into a circle about 5 inches in diameter and 1/8-thick.
  • For the whole pie crust: Roll out the dough on the floured surface into a circle about 14 inches in diameter and 1/8 inch thick. Gently fold the circles of dough in half and then in half again so that you can lift it without tearing it, and unfold into a 9-inch pie pan.

TIRAMISU WITH BRANDY CUSTARD

6 large eggs
1 1/3 cups sugar
5 tablespoons brandy
1 1/2 pounds mascarpone cheese*
1 1/2 cups water
1/2 cup instant espresso powder
3/4 cup chilled whipping cream
44 (about) crisp Italian ladyfinger cookies (from two 7-ounce packages)**
1/2 cup unsweetened cocoa powder
1/4 cup powdered sugar

Steps:

  • Fill large bowl with ice water. Whisk eggs and 1/3 cup sugar in medium metal bowl set over saucepan of simmering water. Whisk constantly until thermometer registers 160°F, about 10 minutes. Set custard over bowl of ice water and whisk until cool. Mix in brandy. Whisk mascarpone in another large bowl to loosen. Fold in custard. Bring 1 1/2 cups water to simmer in medium saucepan. Add 1 cup sugar and espresso powder; whisk until sugar dissolves. Mix in cream. Refrigerate until cold. Submerge 3 cookies in chilled espresso-cream mixture for 5 seconds. Place cookies on bottom of 13x9x2-inch baking dish. Working in batches, repeat with enough remaining cookies to just cover bottom of dish. Spread half of mascarpone mixture over cookies. Repeat soaking process with remaining cookies, placing them in single layer atop mascarpone mixture. Spread remaining mascarpone mixture over cookies. Refrigerate until set, about 2 hours.
  • Whisk cocoa and powdered sugar in small bowl to blend. Sift sweetened cocoa over top of dessert. Cover and refrigerate at least 2 hours. (Can be made 1 day ahead. Keep refrigerated.)

More than most cocktails, a properly made brandy crusta requires a little effort. Achieving an even sugar rim on a glass and paring a long lemon twist (known as a horse's neck) may take a few tries before you get it right. This recipe, to be used at the new New Orleans bar Jewel of the South, is not very far removed from the one first printed by the bartender Jerry Thomas in his seminal 1862 cocktail manual. Thomas credited the drink's inventor, the New Orleans bartender Joseph Santini, who had his own bar named Jewel of the South. The resulting cocktail may look too beautiful to drink. But that's what iPhones are for. Take a picture and get to drinking.

Lemon juice, for the sugared rim
Sugar, for the rim
Peel of 1 lemon, for garnish
2 ounces Cognac, preferably Pierre Ferrand 1840
1/2 ounce lemon juice
1/2 ounce Curaçao, preferably Pierre Ferrand
1/4 ounce maraschino liqueur
2 dashes Angostura bitters

Steps:

  • Take a small wine glass, wet the rim with lemon juice, then dip in sugar to create an even sugar rim on the glass.
  • Using a Y-peeler. begin at the top of the lemon and peel a long, continuous twist, using as much of the skin as possible. Carefully position this twist inside the prepared glass, creating an internal spiral of lemon peel that reaches the top of the glass.
  • Combine all liquid ingredients in a cocktail shaker filled with ice and shake until cold, about 15 seconds. Strain into the prepared glass.

25ml lemon juice, plus 1 lemon slice to serve
1 maraschino cherry, plus 15ml syrup from the jar
few drops of Angostura bitters
½ egg white
50ml brandy or cognac
ice

Steps:

  • Tip the lemon juice, cherry syrup, bitters, egg white and brandy into a cocktail shaker with a large handful of ice. Shake until the outside of the shaker feels very cold. Double strain into a tumbler filled with ice.
  • Thread the lemon slice and cherry onto a cocktail stick, rest across the rim of the tumbler and serve.
