This casserole is perfect for a special brunch. It combines the spices of the Southwest with the comfort of a hearty breakfast. You can spice it up by adding cayenne and hot peppers, or mellow it by replacing the tomatoes and green chilies with mild salsa. - Preheat oven to 350°. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 4-6 minutes. Stir in tomatoes., Coat a 9-in. deep-dish pie plate with cooking spray. Line pie plate with half the tortillas. Sprinkle with half of each of the following: sausage mixture, cheeses and green onions. Repeat layers. , In a bowl, whisk together eggs, milk, paprika and cumin; pour slowly over layers. Bake, uncovered, until set, 25-30 minutes. Let stand 10 minutes. Cut into wedges. If desired, serve with sour cream, salsa and additional green onions.

Steps:
- Grease a 2-quart square baking dish.
- Tear tortillas into bite-size pieces (pizza cutter works well).
- Arrange HALF the tortillas in the baking dish.
- Top with HALF of the cheese, HALF of the corn, HALF of the green onions.
- Repeat layers with remaining tortillas, cheese, corn and onions.
- Stir together eggs buttermilk, and green chilies.
- Gently pour over tortilla mixture.
- Bake uncovered in a 325 degree oven for about 30 minutes or until a knife inserted near the center comes out clean.
- Serve warm with salsa or picante sauce.

- Crumble beef into a large microwave-safe dish. Stir in onion. Microwave, uncovered, on high for 6-7 minutes or until meat is no longer pink, stirring and draining every 2 minutes. - Preheat oven to 375°. In a large bowl, mix reserved chili, corn and beans. Spread 1 cup chili mixture into a greased 13x9-in. baking dish. Layer with 2 tortillas, 2 cups chili mixture, 1 cup cheese and 1/2 cup enchilada sauce. Repeat layers. Top with the remaining tortillas and chili mixture., Bake, covered, 20-25 minutes or until heated through. Sprinkle with remaining cheese. Bake, uncovered, until cheese is melted, 10-15 minutes longer. Let stand 10 minutes before cutting. If desired, serve with lettuce and tomatoes. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Cover casserole with foil; bake as directed, increasing covered time to 40-45 minutes or until a thermometer inserted in center reads 165°. Serve as directed.

CORN TORTILLA TACO CASSEROLE
Believe me, I've tried a lot of "taco casseroles", but this one really hit the spot at a holiday ladies potluck luncheon. I was one of the many who asked for the recipe, received it and thought I'd pass it on to my "zaar" friends. She said it came from a California elementry school cookbook. Just great with a green salad and a glass of beer or wine!

Steps:
- Brown ground been and onion.
- Add soup, sauce, water, olives and seasoning to meat.
- Mix well in a 9x13" pan.
- Cut 6 tortillas into small pieces (I stack and quarter) and lay in bottom of pan.
- Pour 1/2 of mixture on top.
- Add 1/2 of cheese.
- Cut last 6 tortillas and place on top.
- Add the last of the mixture and finish with remaining cheese.
- Cover and bake at 350F for 1 hour.
