CHEESY HAM AND SWEET POTATO CASSEROLE
Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

Steps:
- Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
- Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
- Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.

- 1.Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. 2.In the prepared dish, make a single layer of sweet potato slices. Place a few onion slices on top, dot with butter, and sprinkle with salt and pepper. Repeat, alternating layers of white and sweet potatoes. 3.In a small bowl, or measuring cup, combine flour and broth. Pour over potatoes. 4.Sprinkle cheese, bread crumbs over the potatoes. Dot with remaining butter. Cover. 5.Bake in preheated oven for 1 hour, or until potatoes and onions are soft.
YAM CASSEROLE
My entire family has always hated yams until I made this dish 15 years ago. Now everyone looks forward to this dish during the holidays. However, I do make it at home during the year, not just during the holidays. I have given this recipe to several people that have requested it, now I'll give it to you.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine yams, melted butter, white sugar, evaporated milk, eggs, nutmeg, cinnamon and vanilla extract. Mix well and transfer to a 9x9 inch casserole dish.
- In a medium bowl cream butter with brown sugar. Stir in walnuts and frosted cereal. Spread on top of yam mixture.
- Bake in preheated oven for 35 minutes.

- Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Combine carrots, potato, yam and raisins in large bowl. Melt butter in heavy medium saucepan over low heat. - Heat oven to 350 degrees F.
- Place Bruce's® Yams Cut Sweet Potatoes in a bowl and cut into slightly smaller pieces.

- Place yams in a large saucepan with enough water to cover. Bring to a boil, and cook 30 minutes, or until tender but firm. Drain, peel, and cut into 1/3 inch thick slices.
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- In a small saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Mix in the apple juice, lemon juice, cinnamon, and allspice.
- Alternate layers of yams and apples in the prepared baking dish. Pour the apple juice mixture over the layers.
- Cover, and bake 1 hour in the preheated oven. Remove cover, and continue baking 30 minutes. Baste frequently with the juices from the pan to prevent drying.

BAKED MASHED POTATOES AND YAMS WITH GARLIC AND PARMESAN

- Preheat oven to 350°F. Place garlic in small ovenproof cup or ramekin. Drizzle 2 tablespoons olive oil over. Bake until garlic is very soft, about 25 minutes. Cool; peel garlic, reserving oil in cup.
- Brush 8x8x2-inch glass baking dish with 1/2 tablespoon olive oil. Cook all potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain, reserving 1 cup cooking liquid. Return all potatoes to same pot.

Cover; let stand at room temperature).
- Preheat oven to 350°F. Bake potatoes uncovered until heated through and golden on top, about 45 minutes.
