My family and I are obsessed with Din Tai Fung, a famous Taiwanese restaurant in California, and their chilled cucumber salad. This was a copycat version I created at home. - Andrea Potischman, Menlo Park, California

5 Persian or small cucumbers, cut into 1/2-inch rounds
4-1/2 teaspoons kosher salt
MARINADE:
3 tablespoons rice vinegar
2 tablespoons mirin (sweet rice wine)
2 tablespoons honey
2 teaspoons canola oil
2 teaspoons sesame oil
1/2 teaspoon chili garlic sauce
1/2 teaspoon kosher salt

Steps:

  • Place cucumbers in a colander over a plate; sprinkle with salt and toss. Let stand 20 minutes. Rinse and blot dry with paper towels., In a large bowl or shallow dish, combine marinade ingredients. Add cucumbers; turn to coat. Refrigerate, covered, at least 4 hours or overnight., Drain cucumbers, reserving 1/4 cup marinade. Arrange cucumbers on a serving plate; drizzle with reserved marinade. Serve cold.

This recipe is best served ice cold out of the fridge.

FOR THE SALT BRINE STEP:
8-10 small persian cucumbers
1 tablespoon(s) salt
FOR THE DRESSING:
3 tablespoon(s) rice vinegar
2 tablespoon(s) mirin
2 tablespoon(s) honey
1 tablespoon(s) white sugar
2 teaspoon(s) canola oil
2 teaspoon(s) sesame oil
1/2 teaspoon(s) salt
1 tablespoon(s) chili oil
1/2 teaspoon(s) vietnamese or chinese chili garlic sauce

Steps:

  • You do want to use Persian cucumbers for this recipe if at all possible. An English cucumber cut in one inch cubes instead of sliced might work as a replacement.
  • Wash and cut off the ends of all the cucumbers and slice them into 1 inch thick rounds with the peel on. Place them in a bowl and cover them with 1 tablespoon of salt. Mix well and cover for 45 minutes to 1 hour.
  • Rinse the cucumbers well. You will want to fill up the bowl with water and drain it off 2 or 3 times. Taste a slice and if it is still too salty, rinse them one more time.
  • Mix the dressing ingredients all together until they are well blended. You can reduce the hot chili oil and the chili sauce a little if you are afraid it will be too spicy for your taste.
  • You can dress the cucumbers up to 2 hours ahead or your can pour the dressing over right before you serve them.
  • The Vietnamese chili garlic sauce can be found with the Asian food in many grocery stores. Often Thai and Pho restaurants carry it as well. Din Tai Fung is a dim sum restaurant found in Washington, Oregon, California and Nevada and this salad is a popular item from their menu.

  • Slice the cucumber into ½ inch thick rounds and put into a small bowl. Lightly sprinkle with Kosher salt and toss them well. Put them in the fridge and allow to sit there for between 45 and 60 minutes.
  • When the time has expired, rinse with water to remove any excess salt. Taste the cucumber, and if it is still a little too salty, rewash it.
  • To make the marinade, take a small bowl and add the canola oil, chili garlic sauce, honey, mirin, rice vinegar, salt, and sesame oil. Mix thoroughly and put to one side.
  • Take the pre-brined slices of cucumber, pat dry with kitchen paper, and tip them into a one-gallon-sized ziplock bag. Pour in the marinade. Carefully seal the bag and shake well to mix the contents. Put the bag on its side in your fridge and allow it to marinate for a minimum of four hours.
