1-1/4 cups cold 2% milk
3/4 cup pineapple yogurt
1 package (3.4 ounces) instant coconut cream pudding mix
1 carton (8 ounces) frozen whipped topping, thawed
Optional: Toasted unsweetened coconut flakes and maraschino cherries
Fresh pineapple wedges
Vanilla wafers

Steps:

  • In a large bowl, whisk milk, yogurt and pudding mix 2 minutes (mixture will be thick). Fold in whipped topping. Refrigerate, covered, at least 2 hours., If desired, top with coconut and cherries before serving. Serve with pineapple and wafers.

1 jar (7 ounces) marshmallow creme
1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
Assorted fresh fruit or cubed pound cake

Steps:

  • In a small bowl, beat cream cheese and marshmallow creme until fluffy. Fold in pineapple and coconut. Cover and chill until serving. Serve with fruit, pound cake or both.

2 (8 ounce) containers sugar-free coconut cream yogurt (Blue Bunny work best)
1/2 cup crushed pineapple in juice, drained
1 teaspoon rum extract
1 (3 1/2 ounce) package jello sugar-free instant vanilla pudding mix
1 cup light whipped topping

Steps:

  • In a medium bowl, mix pudding and yogurt well, making sure there are no pudding lumps.
  • Stir in pineapple and rum extract (or rum if you're in a pinch).
  • Fold in the whipped topping. Cover and refrigerate 2 hours before serving.
  • Serve with fruit, cubed pound cake, angel food cake, or vanilla wafers.
