EASY ORANGE-CARROT CAKE



Easy Orange-Carrot Cake image

A citrusy sour cream frosting is the literal icing on this moist orange-carrot cake recipe. Cinnamon, cloves, nutmeg, and ginger infuse each bite of this orange cake recipe with warm flavors.

0.75 cup vegetable oil, plus a little more for greasing pan
1.75 cup light brown sugar
4 large eggs (preferably free-range or organic)
Grated zest and juice of 1 orange (approximately 1 tsp. zest and 1/3 cup juice)
2 cup all-purpose flour
1 tablespoon baking powder
0.5 teaspoon sea salt
0.5 cup walnuts, roughly chopped
1 teaspoon ground cinnamon, heaped
Pinch of ground cloves
0.5 teaspoon ground nutmeg
0.5 teaspoon ground ginger
10 ounce carrots, peeled and coarsely grated
2 cup low-fat sour cream
2 - 3 tablespoon powdered (icing) sugar
2 oranges

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch square or 10-inch round cake pan with a little vegetable oil. Line the bottom of the pan with a piece of parchment or waxed paper, cut to fit. In a large mixing bowl, use an electric mixer to mix the oil and sugar. Beat in the eggs, orange zest, and juice. Stir in the flour, baking powder, and salt. Add the chopped walnuts, cinnamon, cloves, nutmeg, ginger, and grated carrot. Mix just until combined (don't overmix, because this will affect how the cake rises).
  • Spoon the batter into the prepared cake pan. Bake 50 minutes, or until golden. Check doneness by poking a skewer or toothpick into the center of the cake. If it comes out clean, the cake is cooked; if it's still slightly sticky, put it back in the oven for a few more minutes.
  • Cool the cake in the pan for 10 minutes. Turn it out onto a rack to cool completely before icing.
  • For the icing, place the sour cream in a mixing bowl. Sift in the powdered sugar and grate in the zest of one orange. Halve the orange and squeeze in the juice from one half. Whisk everything together until glossy. It will be a fairly loose consistency. Spread thinly over the top of the cake. Grate a little more orange zest on top of the cake. Slice the remaining orange and serve on the side. Makes 16 servings.

1 cup vegetable oil

1 can (8 oz) crushed pineapple in juice, drained (1/2 cup)
1 cup chopped walnuts or pecans, finely chopped

1/4 cup butter or margarine, softened
2 to 3 teaspoons milk
4 cups powdered sugar

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan or 2 (8- or 9-inch) round cake pans with shortening; lightly flour.
  • In large bowl, beat granulated sugar, oil and eggs with electric mixer on low speed about 30 seconds or until blended. Add flour, cinnamon, baking soda, vanilla and salt; beat on medium speed 1 minute. Stir in carrots, pineapple, nuts and coconut (batter will be thick). Pour into pan(s).
  • Bake 13x9-inch pan 40 to 45 minutes, round pans 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool rectangle in pan on cooling rack. Cool rounds 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.
  • Meanwhile, make Cream Cheese Frosting. In medium bowl, beat cream cheese, butter and milk with electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, until smooth and spreadable.
  • Frost 13x9-inch cake or fill and frost round layers with frosting. Store covered in refrigerator.

1 navel orange
2 cups flour
1-1/2 cups granulated sugar
2-1/2 tsp. baking soda
1 tsp. baking powder
2 tsp. ground cinnamon
1/4 tsp. salt
4 eggs
1 cup oil
2 cups shredded carrots
1 cup chopped pecans, toasted, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3-1/2 cups plus 6 Tbsp. powdered sugar, divided
1/3 cup BAKER'S ANGEL FLAKE Coconut, toasted
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350°F.
  • Line two 15x10x1-inch baking pans with foil; spray with cooking spray. Grate the peel from the orange. Remove the membrane from the orange; discard. Chop orange sections. Sprinkle 2 clean towels with 3 Tbsp. powdered sugar each.
  • Combine flour, granulated sugar, baking soda, baking powder, cinnamon and salt in bowl. Beat eggs and oil in large bowl with mixer until blended. Gradually beat in flour mixture until blended. Stir in carrots, chopped oranges and 1/2 cup nuts. Pour half the batter (about 2 cups) into each prepared pan.
  • Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Immediately invert cake onto prepared towel; remove pan. Carefully peel off foil. Starting at one short side, roll up cake and towel together. Repeat with remaining pan. Cool completely on wire rack.
  • Meanwhile, beat cream cheese and remaining powdered sugar in large bowl with mixer until blended. Stir in remaining nuts, orange peel and coconut. Stir in COOL WHIP. Refrigerate 15 min.
  • Carefully unroll cake; remove towel. Spread half the cream cheese mixture onto each cake. Reroll cakes; wrap in plastic wrap. Refrigerate 1 hour. Unwrap and sprinkle with remaining powdered sugar just before serving.

Steps:

  • Heat oven to 350°F.
  • Combine flour, baking soda and cinnamon. Beat eggs, oil and granulated sugar in large bowl with mixer until blended. Gradually add flour mixture, mixing well after each addition. Stir in carrots and raisins. Pour into 2 greased and floured 9-inch round pans.
  • Bake 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 min.; invert onto wire racks. Gently remove pans; cool cakes completely.
  • Beat cream cheese and butter in large bowl with mixer until creamy. Blend in milk and vanilla. Gradually add powdered sugar, mixing well after each addition.
  • Fill and frost cake layers with cream cheese mixture. Combine nuts and coconut; sprinkle over frosting.
