This is just a recipe I threw together one day when I had some deer round steak to use up! Yum!

Steps:
- Heat the oil in a large skillet. Cook the onion, pepper, and venison in the hot oil until the meat is cooked through. Stir in the soup mix and the water. Continue cooking until the onion and pepper are tender. Add the flour and whisk over the heat until there are no lumps. Cook and stir until sauce has thickened.

DEER HUNTING GOURMET SANDWICH

Steps:
- Spread butter and peanut butter on one slice of the bread.
- On the other slice, spread jam or jelly (preferably home-made).
- Carefully place the two slices together (you don't want to "bruise" the jam).
- Gently slide sandwich into a plastic sandwich baggie; seal baggie; place in back hip pocket of hunting pants; forget about baggie in pants pocket.
- Spend morning hunting and sitting, stalking and sitting, and hiking & sitting.
- Sandwich should be ready to eat--check for doneness (ie., squashed flat, jam & peanut butter oozing out around edges).
- Sit down on a nearby stump, fallen log, stone outcropping and ENJOY!

- Preheat a sauce pan over medium heat. Add butter. Once melted, stir in the flour and allow it to brown for about a minute. Stir in the milk, beer, Worcestershire sauce, mustard, garlic powder, paprika, salt, and cayenne pepper.
- Reduce heat to low and allow the mixture to cook for 5 minutes. You do not want to simmer the sauce. Stir frequently as it cooks. Then remove the pot from the heat and stir in the cheese in batches. Allow the mixture to cool while you cook the patties.
- Bring a large cast iron pan to medium-high heat. Add the ground venison to a mixing bowl. Combine the Worcestershire sauce with the meat. Season the meat to your taste with salt, black pepper, garlic powder, and onion powder. Divide the meat into fourths and form into patties.
- Place each patty in the cast iron pan to cook. Cook for 3 to 5 minutes and then flip. Add whatever beer is left over to deglaze the pan. Cook for another 2 to 3 minutes.
