DEEP DISH PIZZA PIE
Original Bisquick® mix provides a simple addition to this cheesy pizza baked with pepperoni and veggies - perfect for dinner.

Steps:
- Heat oven to 350°F. In 12-inch nonstick skillet, cook sausage over medium heat until no longer pink. Remove sausage to paper towels, reserving drippings. Cook onion and bell pepper in drippings until crisp-tender.
- In medium bowl, stir Bisquick mix, cornmeal and Parmesan cheese. Cut in butter, using pastry blender, until crumbly. Add boiling water; stir vigorously until dough forms. Spray 10-inch ovenproof skillet with cooking spray. Press dough on bottom and up side of skillet. Arrange cheese slices over crust; spread with 1/3 cup of the pizza sauce. Top with sausage and onion mixture. Arrange two-thirds of the pepperoni over onion mixture. Spread remaining 1/3 cup pizza sauce over pepperoni; top with shredded mozzarella cheese and remaining pepperoni.
- Bake 30 to 35 minutes or until crust is golden brown. Let stand 5 minutes. Garnish with basil. Cut into 8 wedges; serve with additional pizza sauce, heated, if desired.

THE BEST DEEP DISH PIZZA PIE
The history of this pizza goes back to a dr. who perfected the recipe after delivering pizza for several months. I only added a few changes.

Steps:
- Grease a 14" deep dish pie pan and sprinkle with cornmeal.
- Mix your yeast, sugar and warm water.
- Let stand 10 min.
- until it becomes bubbly.
- Add flour, salt, and oil.
- Knead until it is smooth.
- A food processor can be used for this using the metal blade.
- If the dough is too sticky add more flour, but only 1 tblsp.
- at a time until it is the right consistency.
- Place the dough into an oiled bowl with a plastic covering it.
- Refrigerate it at this point for 1 to 10 hours.
- To make the Filling: Remove all the meat from the casing and brown, breaking it up into pieces.
- Drain.
- Saute the onion, peppers, and mushrooms.
- Add to the sausage.
- Add the rest of the ingredients except the cheeses.
- Mix.
- grate the cheese.
- A food processor can be used for coarse chop.
- Topping: Mix all the topping ingredints in a bowl.
- Put aside.
- To Put the Pizza Together: Roll out the dough on a floured board until it is elastic.
- Place in a greased pan with cornmeal.
- Leave a high rim all around.
- Place cheese directly on dough, next filling, sauce on top.
- Carefully place this pan into a pre-heated 425* oven for 45-50 min.
- NOTE:A Vegetarian Pizza can be made easily without the meat.

CHICAGO PIZZA POT PIE

Steps:
- Heat a medium pot over medium heat. Add the pepperoni and oil and saute until the fat renders out and the pepperoni is slightly caramelized, about 10 minutes. Add the Italian seasoning and garlic and saute until fragrant, about 10 seconds. Add the crushed tomatoes and salt and pepper to taste; stir and simmer for about 15 minutes. Let cool completely.
- Preheat the oven to 400 degrees F with a rack in a lower position.
- Spray the insides of four ovenproof bowls or crocks with plenty of cooking spray. Shingle 6 to 8 slices cheese inside each bowl so the bottoms touch. This creates the coveted cheese bowl effect. Place 3 to 4 mushrooms on top of the cheese. Then ladle about 1/2 cup COOLED pepperoni sauce over the mushrooms.
- Split the dough into 4 equal portions and roll each portion out on a lightly floured surface into 6- to 8-inch rounds. (You will want a 1-inch overhang over the side of the bowl.)
- Drape a round of dough on top of each bowl. Spray your fingertips with cooking spray and slide them around the outside edges of the bowls so that the pizzas will slide out easily after baking. Gently pull down and press the dough around the edges to create a seal. (There's no need to vent or dock it.) Place the bowls on a sheet pan.
- Bake until the crust is just SLIGHTLY golden, about 15 minutes. Let cool 5 minutes, then brush the tops with melted butter to make that crust shiny! Very gently and carefully turn over a bowl into an individual bowl or plate. Take the handle end of your fork and swipe around the inside of the crust rim to help loosen and separate it from the bowl. Lift the bowl away and witness the miracle of this cheesy behemoth. Top with some giardiniera, if you like. Repeat with the remaining pot pies.
DEEP DISH PIZZA
I got this recipe from Jeff Smith, The Frugal Gourmet back in 1987. He made this recipe and ran it by Pizzeria Uno in Chicago and they smiled and nodded "It's almost as good as ours." This is easy, no roll recipe.

- In the bowl of your electric mixer- KitchenAid is perfect for this- dissolve the yeast in the water.
- Add the oils, cornmeal, and 3 cups of the flour.
- Beat for 10 minutes with the mixer.
- Add the dough hook and mix in the additional 2½ cups flour.
- Knead for several minutes with the machine.
- It is hard to do this by hand since the dough is very rich and moist.
- Pour out the dough on a plastic countertop and cover with a very large metal bowl.
- Allow to rise double in bulk.
- Punch down and allow to rise again.
- Punch down a second time and you are ready to make your pizza.
- Oil round cake pans or deep dish pizza pan.
- Put a bit of dough in each and push it out to the edges, using your fingers.
- Put in enough dough so that you can run the crust right up the side of the pan.
- Try to make it approximately 1/8" thick throughout the pan.
- The filling for 9 or 10 inch pan:.
- Place the cheese in tilelike layers on the bottom of the pie.
- Next put in the tomatoes and the basil, oregano, garlic and salt- reserve the Parmesan cheese for the top.
- Drizzle the olive oil over the top of the pie and bake.
- Additional variations: BEFORE you put on the Parmesan cheese and olive oil drizzle you might like to add any or all of the following:.
- Italian Sausage- hot or mild.
- Yellow Onions- peeled and sliced or diced.
- Pepperoni- sliced thin.
- Mushrooms- sliced.
- Green Sweet Bell Peppers- cored and sliced thin.
- Sliced Black Olives.
- Very Thinly Sliced Ham or Canadian Bacon.
- Put any or all of these on your pie and then top with the Parmesan and the olive oil.
- Bake the pie in 475º oven until the top is golden and gooey and the crust a light golden brown.
- This should take about 35-40 minutes.

Steps:
- In a 10-12 inch frying pan, set over medium high heat, crumble sausage with a spoon; cook, stirring until meat is no longer pink, about 10 minutes.
- Add garlic, fennel, oregano, chilies, pepper and tomatoes. Stir until mixture boils, about 5 minutes.
- Remove from heat and mix in Mozzarella, eggs, and 1/2 cup of the Parmesan cheese. Set aside to cool slightly, or, cool, cover and chill overnight.
- On a lightly floured board (or on layers of plastic wrap), roll half of the pie crust dough into an oval large enough to cover the bottom and sides of an 8x12 inch oval baking dish. Fit pastry into dish, with excess lapped over the rim.
- Spoon sausage mixture enenly into crust; cover with Prosciutto slices. Dot Ricotta over Prosciutto, then spread Ricotta and top with basil leaves.
- Roll remaining dough on a floured board until large enough to cover top of pie. Fit pastry over pie, seal edges, and flute. Pierce a few decorative holes in crust.
- Bake on lowest shelf of a 375* oven until edge of crust is browned. about 1 hour.
- About 10 minutes before pie is done, sprinkle top with remaining Parmesan cheese. Serve hot or at room temperature. Scoop out portions.
- Pie crust:.
- With a pastry blender of 2 knives, cut 2/3 cup solid vegetable shortening into 2 1/4 cups all-purpose flour until mixture resembles coarse bread crumbs. Sprinkle with 4-5 tablespoons cold water and stir with a fork until dough holds together. Pat into a ball.
