RAINBOW S'MOREO COOKIES
Homemade Oreo-style cookies are pretty great on their own, but they're even better when you add graham cracker crumbs to the cookie dough, stuff them with marshmallow creme, and then roll them in sprinkles. You can change the color of the sprinkles depending on the holiday or occasion you're baking them for. -Colleen Delawder, Herndon, Virginia

- Preheat oven to 350°. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. Beat in cocoa. In another bowl, whisk cracker crumbs, flour, baking powder and salt; gradually beat into creamed mixture. Refrigerate until firm, at least 30 minutes., Shape dough into 1-in. balls. Place 2 in. apart on parchment-lined baking sheets. Flatten with bottom of a glass dipped in sugar. Bake until set, 6-8 minutes. Cool on pans 3 minutes. Remove to wire racks to cool completely., Spread marshmallow creme on bottoms of half of the cookies; cover with remaining cookies. Roll sides in sprinkles. Serve immediately, or freeze cookies in freezer containers, separating layers with waxed paper. To use, thaw cookies briefly before serving.

S'MORES
Graham crackers with melted marshmallows and chocolate. Prepared over an open flame, this camping favorite is great for the holidays, too. Not recommended for the stove top.

- Heat the marshmallow over an open flame until it begins to brown and melt.
- Break the graham cracker in half. Sandwich the chocolate between the cracker and the hot marshmallow. Allow the marshmallow to cool a moment before eating.

Do try to be humble as your family and friends give you a standing ovation for this camp fire master piece. You will NEVER have another camp fire with out these. I got this recipe from a tv show years ago. I changed one thing and ta-dah the marshmallowless s'more was born!

- Twist apart the Oreo's. If you break one, have a near by child eat it and twist apart another one until you have 6 perfectly halved oreo's. Spread about 1 teaspoons of peanut butter on one side of your oreo pairs. Slap a dark chocolate square on top of the peanut butter then set aside. I make a bunch of these up in advance and place them on a tray. Later at the camp fire. Use a foil lined,sprayed mountain pie maker to cook sliced bananas. Flip the mountain pie maker to be sure boths sides are cooked- about 2 minutes. Use a fork to place hot bananas on top of dark chocolate, then top with other half of oreo.
- Every year we have a contest- every year this is still the champ.

- Twist the tops off the cookies. Arrange the cookie bottoms, cream-side up, on a baking sheet. Put a piece of chocolate on the cream filling and then top with a marshmallow, laying on its side (not upright.)
