DECADENT MEDITERRANEAN HONEYED OLIVE OIL TOASTS
I'm not just an 80's fanatic, I'm also a bigtime gaming dork! I was playing the Quest For Glory 2 VGA remake and there's different foods you can buy. One of them is bread, which is described as being slowly toasted with olive oil, honey, and spices. That sounded delicious so I decided to make my own! This is a nice appetizer that would be a perfect accompaniment to falafel, cucumber salad, and/or stuffed grape leaves. A nice breakfast toast with a cup of mint tea! I used a Whole Foods 12" baguette that I cut into "sandwich size" pieces. The honey is approximated; I just sqooshed some on. The trick in making this bread taste great and come out the right way is all in the method rather than the ingredients :)

Steps:
- Mix the dry spices together in a small dish.
- Cut the bread into 4 pieces as if you were making two 6" sandwiches.
- Measure out the olive oil into another small dish-- with a pastry or BBQ brush, brush all the olive oil onto the pieces of bread right side up (about 1 tablespoon for each slice.).
- Squoosh some honey generously onto each piece of bread in a horizontal line, roughly 1 teaspoon. Use the BBQ brush to spread and mix the honey into the breads.
- With your thumb and forefingers, pinch the spice mix and spread onto all the pieces of bread.
- Put the breads on a cookie sheet and toast for 3-4 minutes or until golden brown on top-- I use my toaster/convection oven.

OLIVE-OIL TOASTS
Once you try them, you'll be making these two-ingredient toasts all the time. They're the perfect snack for your next apertivo hour or anytime you want a crispy, crunchy base for toppings savory or sweet, from creamy spreadable cheeses like ricotta with honey to salami and firm, salty cheeses like Manchego. Simply fry slices of rustic sourdough or ciabatta in olive oil, then season with flaky salt.

Steps:
- Fill a large heavy skillet with about 1/2 inch of oil. Heat over medium until a breadcrumb sizzles when you drop it in. Working in batches, fry slices of bread, flipping once, until golden brown and crisp on both sides, 1 to 2 minutes a side. Transfer to paper towels to drain, then season with flaky sea salt.
PUMPKIN WHEAT BREAD (A YEAST BREAD, NOT SWEET!)
Inspired by both the fall and my favorite Quest for Glory game that had garlic and avocado sandwiches made on pumpkin wheat bread, I wanted to make my own pumpkin wheat bread in my bread machine...that's an actual yeast bread made with pumpkin, not a quickbread or sweet type of tea loaf. Hence, the coriander for savory flavor instead of cinnamon or the other traditional pumpkin pie spices. Sage or thyme would make nice additions to this bread too that go with pumpkin. I use my own homemade bread flour that's AP flour and vital wheat gluten, and I always have lots of canned pumpkin on hand no matter what time of year it is! Prep time is the dough cycle, mine takes about 90 minutes.

DECADENT GARLIC BREAD
I got the basis of this from a Jamie Oliver episode. He put herbs, feta cheese and olive oil in a French canning jar for a present. It looked so good, but I thought to myself, I can go one better. (You can mix and match what you think would go well with this, like roasted bell pepper, or carmelized onion instead of the garlic... the sky's the limit) Let this sit for a week in the fridge and get some crusty bread and a spoon and it's really the most decadent garlic bread you could ever have.

Steps:
- This is all subject to your taste. On your clean cupboard sprinkle the black pepper, crushed red pepper, rosemary, thyme, fennel, and parsley.
- Make sure your feta is dry, pat it with a few paper towels if needed.
- Sprinkle the cheese over the herbs on the cupboard and gently press them all over the cheese.
- Get a clean canning jar, I like the French canning jars, they seal tight and they're very pretty.
- Take a third of your cheese and put it in the bottom of the jar and spread it out. Do not pack it down, you need little nooks and crannies. Then layer on a third of your roasted garlic (I'm sure you've removed it from the skin), then a third of the olives and repeat until it's all inches
- Take your olive oil and slowly drizzle it in so it takes up all the space between the cheese, garlic and olives and fill just to the top so everything is covered.
- Let it sit in the fridge for a week so the flavors can blend (I only lasted four days before I tried it). Serve on french bread, sliced baguettes, with a salad.
- Serving size varies on how much you like on your bread. I say about 10 people could have 5-6 appetizers from this amount.
