WHIPPED SWEET POTATOES



Whipped Sweet Potatoes image

4 large sweet potatoes
2 tablespoons butter
1/4 cup heavy cream
1 teaspoon vanilla extract
1/2 teaspoon pepper
1/2 teaspoon sea salt
pinch of nutmeg

Steps:

  • Slice sweet potatoes into chunks. Place them in a large pot with cold water and let it come to a boil. Once the water is boiling, reduce the heat to medium-high. Cook for 20-30 more minutes, or until the sweet potatoes are fork-tender.
  • Drain the water and return the potatoes back the pot. Add the butter, heavy cream, salt, pepper, vanilla, and nutmeg. Whip the mixture with a food processor, hand mixer, stand mixer, immersion blender, masher, or a fork.
  • Serve and enjoy!

Steps:

  • Heat oven to 350°F.
  • Beat potatoes, butter and spices with mixer until blended.
  • Spoon into 1-1/2-qt. casserole sprayed with cooking spray; top with marshmallows.
  • Bake 15 to 20 min. or until potato mixture is heated through and marshmallows are lightly browned.

6 sweet potatoes, peeled and cut into cubes
⅓ cup brown sugar
¼ teaspoon ground allspice
¼ teaspoon ground cinnamon
½ (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain. Transfer drained sweet potatoes to a baking sheet.
  • Bake sweet potatoes in the preheated oven until dried, 3 to 4 minutes; transfer to a mixing bowl.
  • Mash sweet potatoes with a potato masher until no large lumps remain; add sugar, allspice, and cinnamon. Continue mashing potatoes until evenly seasoned; spoon into a casserole dish. Spread miniature marshmallows in an even layer over the sweet potato mixture.
  • Bake in oven until marshmallows just begin to brown, 10 to 15 minutes.
  • Switch oven to broil; cook under broiler for 1 minute.

5 sweet potatoes, sliced
¼ cup reduced fat margarine
½ cup packed brown sugar
3 tablespoons orange juice
1 pinch ground cinnamon
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash.
  • Place mashed sweet potatoes in large bowl, and use an electric mixer to blend with the margarine, brown sugar, orange juice, and cinnamon. Spread evenly into a 9x13 inch baking dish. Top with miniature marshmallows.
  • Bake for 25 to 30 minutes in the preheated oven, or until heated through, and marshmallows are puffed and golden brown.

2 (23 ounce) cans sweet potatoes, well drained (or yams)
4 tablespoons butter, melted
3 tablespoons brown sugar, firmly packed (I use the Splenda blend)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 cups miniature marshmallows

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly coat a 10 x 6 x 2 inch (1 1/2 quart) glass baking dish with nonstick cooking spray and set aside.
  • Combine the sweet potatoes with 1/4 cup of the melted butter along with the brown sugar, cinnamon, nutmeg and salt in a mixing bowl and beat until very well blended.
  • Add 1 cup of the marshmallows and blend.
  • Transfer the mixture to the baking dish smoothing out the top with a spatula.
  • Put the remaining marshmallows over the top.
  • Bake for about 20 minutes or until the potatoes are very hot and the topping is golden brown.
  • Remove from oven and serve immediately.

  • Whisk 1⅔ cups (208 g) all-purpose flour, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and ¼ tsp. baking powder in a large bowl. Add 2 oz. (56 g) chilled cream cheese, cut into 1" pieces, and rub into dry ingredients with your fingers until fully incorporated (mixture will look very shaggy).
  • Make a well in the center and pour in ¼ cup (60 g) ice water. Toss mixture with a fork or your hands to distribute, then knead in bowl a couple times to bring dough together (some dry bits may remain).
  • Turn out dough onto a surface lightly dusted with rice flour or all-purpose flour; dust top of dough with flour. Roll out to a ½"-thick rectangle.
  • Place a rack in middle of oven; preheat to 425°. Remove dough from refrigerator and let sit at room temperature 5 minutes. Unwrap and roll out on a lightly floured surface to about a 12" round about ⅛" thick.
  • Line crust (including crimped edges) with foil and fill with pie weights or dried beans. Bake until edges start to brown, 15–20 minutes. Lift out foil and weights and brush bottom of crust with 1 large egg white (this will create a barrier between crust and filling that prevents crust from getting soggy).
  • While the crust is baking, place 1½ lb. sweet potatoes (about 2 large or 3 medium), peeled, cut into 2" pieces, and one 2" piece ginger, peeled, lightly smashed, in a medium pot and pour in water to cover by 2".
  • Transfer sweet potatoes and ginger to a food processor and process until mostly smooth. Add 3 large eggs, ½ cup heavy cream, ½ cup granulated sugar, ½ cup (packed) light brown sugar, 2 tsp.
  • Pour filling into crust and smooth top. Bake pie until filling is just set but still jiggles slightly in the center, 50–60 minutes. Transfer to a wire rack and let cool.
  • Meanwhile, using an electric mixer on medium-high speed, beat remaining 1 cup heavy cream in a medium bowl until stiff peaks form, about 3 minutes.
