SWEET POTATO HUMMUS

Steps:
- Preheat the oven to 400 degrees F.
- Place the sweet potato on a rimmed baking sheet and pierce it a few times with the tip of a knife. Bake the sweet potato until tender all the way through, about 1 hour. Allow to cool slightly.
- In a small skillet over low heat, warm the oil and garlic until the garlic is lightly browned and soft, about 10 minutes. Set aside to cool.
- In the bowl of a food processor, add the cooled oil and garlic, chickpeas, almond butter, lemon juice and salt and puree until smooth. Scoop the flesh of the sweet potato into the processor and puree again until combined and smooth, adding 1 to 2 tablespoons water if needed. Remove the hummus to a bowl and stir in the za'atar, leaving a little swirl. Serve drizzled with olive oil alongside pita chips as desired.
DANIEL HUMM'S SWEET POTATO PUREE

- Melt butter in a medium saucepan over medium heat. Cook sweet potatoes, stirring, until tender, 10 to 15 minutes; season with salt. Add half-and-half; cover. Let simmer for 10 minutes.
- Transfer sweet potatoes and liquid to the jar of a blender; blend until smooth. Strain mixture and use immediately or cool completely in an ice-water bath. Transfer to an airtight container and keep refrigerated until ready to use.
SWEET POTATO HUMMUS
I wanted something easy and fitting for an autumn gathering. I found this recipe and altered it to make it even easier to make. It is a nice combination of naturally sweet and typically savory. Serve with pita wedges, crackers, or cut veggies.

- Preheat oven to 400 degrees F (200 degrees C).
- Poke holes all over sweet potatoes with a fork.
- Roast sweet potatoes in the preheated oven until soft, about 45 minutes; let cool. Cut sweet potatoes in half lengthwise.
- Combine garbanzo beans and olive oil in a blender and pulse several times to mash. Scoop flesh out of sweet potato peels and add to the blender; pulse to combine. Add tahini, lemon juice, lemon zest, cumin, coriander, white pepper, and sea salt to mixture; blend until smooth, adding reserved garbanzo bean liquid as needed to make a smooth, creamy hummus.

- Adjust oven rack to upper-middle position; heat to 425 degrees. Place potatoes on a foil-lined pan; bake 45 to 60 minutes, until tender. Peel when cool enough to handle.
- Puree with salt and pepper in a food processor. With motor running, gradually add milks through feeder tube, then butter. Process until silken. (Can make up to 2 days ahead; store in an airtight container.) Reheat and serve.

- Set a steamer basket in a large pot. Fill with enough water to come just below basket; bring to a boil. Add potatoes; reduce to a simmer, cover, and cook until tender, 10 to 12 minutes. Transfer to a food processor.
- Combine chickpeas, lemon juice, tahini, oil, cumin, and garlic in the food processor. Puree, about 1 minute; thin with water if necessary. Season with salt and pepper and let cool; refrigerate, in an airtight container, up to 1 week. Serve with pita and crudites.

- Heat the oven to 200C/180C fan/gas 6. Tip the sweet potatoes onto a baking tray and drizzle over 1 tbsp olive oil. Sprinkle over the chilli flakes, if using, and the paprika, then toss to coat in the spiced oil. Spread out to a single layer. Trim away the root of the garlic cloves, then nestle these among the sweet potatoes. Roast for 30-35 mins until the potatoes have softened, tossing halfway through.
- Remove the tray from the oven and leave to cool completely. Tip the sweet potatoes into a food processor and squeeze in the garlic from its skin. Add the tahini and lemon juice, then blitz for 1 min until the potatoes have broken down.
- With the motor running, gradually pour in the remaining olive oil. Continue to blitz for up to 4 mins, or until you have a smooth paste. Pour in 50-60ml cold water to loosen, blitz again to combine, then season to taste. Spoon the hummus into a bowl and swirl with the back of a teaspoon, then drizzle over a little more olive oil and scatter with extra chili flakes, if you like. Serve with your choice of veg crudités, breadsticks or crackers and olives for dunking.

- Poach the dried figs: Place port in a small saucepan over medium heat; reduce to 1 cup. Add star anise, thyme, and black peppercorns; remove from heat and let stand 20 minutes to infuse. Strain into a medium bowl; discard spices. Add figs to port reduction and let stand until tender, about 30 minutes.
- Heat chicken stock in a medium skillet over medium heat. Drain figs and add to skillet along with butter and cook until figs are glazed, 1 to 2 minutes.
- Roast the figs: Preheat oven to 350 degrees. Place sugar in a shallow dish. Press cut sides of figs into sugar. Heat canola oil in a medium ovenproof skillet over high heat. Using a paper towel, blot any excess oil from skillet. Place figs in skillet, cut-side down; cook until sugar caramelizes, about 1 minute. Turn figs and transfer skillet to oven. Roast for 1 minute.
- Roast the white mushrooms: Heat oil in a skillet over medium-high heat. Place mushrooms in skillet, cut-side down, and cook for 1 minute. Add butter, thyme, and salt to skillet; cook until butter is melted. Continue cooking, basting mushrooms with melted butter, until mushrooms are tender, 1 to 2 minutes.
- Make the fig jus: Heat canola oil in a large, straight-sided skillet over high heat. Add bones and sear until golden on all sides, 1 to 2 minutes. Remove bones from pan and set aside. Drain excess oil from skillet and discard.
- Place skillet over medium heat; add figs, star anise, shallots, and guanciale; cook, stirring, until shallots are translucent and fat is rendered from guanciale, 4 to 5 minutes. Add vinegar to skillet to deglaze. Return bones to skillet along with chicken jus; bring to a simmer. Let simmer for 20 minutes. Strain and season with salt.
- Make the loup de mer: Heat oil in a large skillet over medium-high heat until hot. Season fish with salt and place skin-side down in skillet, making sure skillet is hot or fish will stick. Reduce heat to medium-low and press fillets down with a metal spatula to keep flat as they begin to curl; let cook until skin is crisp, 3 to 4 minutes. Turn fillets and cook until flesh side is just warmed, 2 to 3 seconds. Transfer fish to a rack, skin-side up.
- Serve: Drizzle raw mushroom slices with olive oil; set aside. Spoon 2 tablespoons sweet potato puree onto a plate and pull down center with a small spoon. Place 2 fish fillets in center of plate. Arrange 4 roasted fig halves, 2 glazed poached dried figs, 4 pickled porcini mushroom slices, 4 roasted porcini mushroom halves, 2 raw mushroom slices, and 2 slices Iberico ham around fish. Finish plate with fig jus and garnish with 4 lamb's-quarter leaves. Repeat three more times with remaining ingredients.
