The Best Tuna Casserole is SO easy to make! Made with a simple from scratch sauce, egg noodles, tuna, peas and a crunchy Panko-Parmesan topping, this comfort food classic is sure to be a new family favorite! Serve with homemade dinner rolls and broccoli salad for a simply delicious dinner!

3 cups wide egg noodles (about 5 oz)
1/4 cup unsalted butter
1 cup celery (chopped)
1 red bell pepper (chopped)
1/2 onion (diced)
1/4 cup all purpose flour
1/2 tsp salt
1/2 tsp ground black pepper
2 1/4 cups whole milk
2 tbsp Dijon mustard
12 oz water packed chunk tuna (drained)
1/2 cup frozen peas (thawed)
4 oz cheddar cheese (shredded)
1/2 cup panko bread crumbs
1/4 cup grated Parmesan cheese
1 tsp smoked paprika
1 tbsp parsley (chopped)
1 tbsp butter (melted)

Steps:

  • Preheat oven to 375 degrees. Lightly grease a 2 quart baking dish and set aside.
  • Cook noodles according to package directions, removing when al dente. Drain, and set aside.
  • Melt butter in a large skillet over medium heat. Add celery, bell pepper, and onion and cook until onion is translucent, stirring frequently.
  • Stir in flour, salt and pepper. Slowly add milk and cook, stirring constantly until thick and bubbly. Stir in Dijon mustard.
  • Add tuna, peas, noodles, and cheddar cheese and fold into the sauce.
  • Pour mixture into the prepared dish.
  • Combine Panko, Parmesan cheese, smoked paprika parsley and melted butter in a small bowl and sprinkle over the top.
  • Bake casserole for 25 to 30 minutes, uncovered, or until heated through and golden brown on top. Let stand for a few minutes before serving.

10.5 oz. can Cream of Chicken soup
1/3 cup milk
2 5 oz. cans, chunk light tuna, drained and flaked
1 cup peas (frozen)
1/2 teaspoon salt
2 cups egg noodles (par-cooked and drained)
1 cup potato chips (crumbled)

Steps:

  • Bring a pot of water to boil, and cook egg noodles for about 6 minutes. Drain. These will finish cooking in the oven.
  • Spray a 1- 2 quart casserole dish or an 8x8 inch dish with cooking spray.
  • Mix together soup, milk, tuna, peas, salt, and drained noodles.
  • Pour into casserole dish and top with potato chips.
  • Cook in a 350 degree F oven for 30 minutes.

1 6 oz can tuna - drained
1 can(s) cream of mushroom soup
1 soup can of milk
1/2 c frozen peas
1/2 c frozen corn
1 small can black olives - chopped or sliced
1 approx 10 oz bag plain potato chips
1/4 c shredded cheddar cheese
extra olives for garnish if desired
sour cream for garnish if desired

Steps:

  • 1. Preheat oven to 375. Grease small casserole, 8x8 baking dish or 9" pie plate.
  • 2. In medium saucepan warm the soup. Mix in the milk and warm through. Add the peas and the corn. Remove from heat and add tuna.
  • 3. Crush entire bag of potato chips. Mix about 3/4 of the chips into the soup mixture. Stir olives into mixture.
  • 4. Put mixture into prepared baking dish and spread evenly. Top with remaining potato chips and the cheese.
  • 5. Bake - uncovered - at 375* for about 35 minutes or until bubbly and cheese is melted. Remove from oven and let it sit for 5 minutes.
  • 6. If desired top with extra olives and a dab of sour cream.

Is there anyone out there who actually admits that they like tuna noodle casserole? My own mother teased me when I was first married about making the standard Tuna Noodle Casserole. I then went about inventing my own. It is a much beloved casserole and comfort food at our house.

2 can(s) cream of celery soup
1 cup(s) sour ceam
1 cup(s) milk
3 can(s) white albacore tuna, drained
1 clove(s) garlic, finely minced
1 large onion, finely chopped
1/2 large green bell pepper finely chopped
2 - celery ribs, finely diced
1 small jar diced pimentos
- kosher salt and freshly ground black pepper to taste if needed
12 ounce(s) colby-jack cheese, shredded
1-2 tablespoon(s) olive oil, extra virgin
1/2 teaspoon(s) paprika, sweet mild
2 cup(s) crushed potato chips

Steps:

  • Preheat oven to 350°. Spray a 9"x13" casserole dish with non-stick spray. Cook the egg noodles in boiling, salted water until al dente; drain well.
  • Saute` onions, bell pepper and celery in oil until tender but not brown.
  • Then, mix the soup, sour cream, milk, tuna, garlic, onion, bell pepper, pimentos, salt and pepper to taste, and 3/4 cup of the cheese. Carefully fold in egg noodles. Place in prepared casserole dish.
  • Top with the remaining cheese, sprinkle with paprika and potato chips. Bake the casserole about 30 minutes or until bubbly.

I remember the first time Mother made this casserole, back in 1949. She and I really loved it. So we made it often. Even the leftovers are good. In this version, I have doubled her recipe to feed a larger family.

1/4 cup chopped onion
2 cups shredded cheddar cheese
1 cup frozen green peas or 1 cup canned green peas, drained
2 (6 ounce) cans chunk tuna, drained
2 (10 3/4 ounce) cans cream of mushroom soup, undiluted
2 1/4 ounces cans sliced mushrooms, drained (optional)
1 1/2 cups crushed potato chips

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Cook pasta in boiling water for 8 minutes, or until al dente; drain.
  • Preheat oven to 425 degrees F.
  • In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms.
  • Transfer to a 9" x 13" inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
  • Bake, uncovered, for 15 to 25 minutes in the preheated oven, or until cheese is bubbly.

This updated tuna noodle casserole recipe stays true to the classic 1950s dish, but substitutes a rich, homemade sauce for the can of cream of mushroom soup. The addition of cremini mushrooms - along with celery, onions, peas and parsley - makes this casserole surprisingly vegetable-packed, while briny capers complement the tuna and balance out the creamy sauce. Like any good tuna noodle casserole, this recipe's pièce de résistance is the potato chip topping.

4 tablespoons unsalted butter, plus more for greasing the pan
Kosher salt and black pepper
1 (12-ounce) bag dried egg noodles or other shaped pasta
1 1/2 cups finely chopped celery (about 4 ribs)
1 large yellow or white onion, chopped
1 pound mushrooms (preferably cremini), trimmed and sliced 1/4-inch thick
2 tablespoons drained capers, roughly chopped (optional)
2 large garlic cloves, minced
1/3 cup all-purpose flour
2 cups chicken or vegetable stock
1 cup half-and-half or heavy cream
1/4 cup dry sherry or dry white wine
2 (5- to 6-ounce) jars or cans tuna packed in olive oil, drained and flaked with a fork
1 cup frozen or fresh peas
1/4 cup minced fresh parsley, plus more for serving (optional)
2 cups plain, salted potato chips, crushed

Steps:

  • Heat the oven to 375 degrees and grease a 9-by-13 or other 3-quart casserole dish with butter.
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until just al dente. (Do not overcook.) Drain and set aside.
  • Meanwhile, in a medium Dutch oven or other heavy pot, melt the butter over medium heat. Add the celery and onion, season with salt and cook over medium, stirring occasionally, until the onions are translucent, 6 to 8 minutes. Add the mushrooms and cook, stirring occasionally, until they are tender, about 5 minutes. Add the capers and garlic and cook until the garlic is fragrant, about 1 minute.
  • Sprinkle the flour over the vegetables and cook, stirring constantly, until no streaks of flour remain, about 1 minute, reducing the heat as necessary to keep from scorching. Add the stock, half-and-half, sherry, 2 teaspoons salt and 1/2 teaspoon pepper and bring to a boil.
  • Reduce the heat to low and simmer, stirring occasionally and scraping the bottom of the pan, until the sauce has thickened slightly, 5 to 7 minutes. Off the heat, stir in the tuna, peas and parsley, if using; season to taste.
  • Add the cooked noodles and toss well. Transfer the mixture to the prepared pan and smooth into an even layer. Sprinkle the crushed potato chips on top and bake, uncovered, until hot and bubbling, about 25 minutes. Garnish with additional parsley, if using, and serve hot.
