BEEF WONTONS



Beef Wontons image

Wontons with a juicy beef and cheese filling. Serve with sweet and sour sauce.

1 tablespoon olive oil
½ small onion, minced
1 clove garlic, minced
½ pound ground beef
1 tablespoon ground cumin
salt and ground black pepper to taste
⅓ cup sour cream
¼ cup shredded Monterey Jack cheese
1 (16 ounce) package wonton wrappers
oil for frying

Steps:

  • Heat 1 tablespoon olive oil in a pan over medium-high heat. Add onion and garlic; saute for 5 to 7 minutes. Add beef, cumin, salt, and pepper; cook and stir until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Pour beef mixture into a large bowl and add sour cream and Monterey Jack cheese. Mix well.
  • Lay out wonton wrappers and add 1 teaspoon of filling to each. Wet your fingertips and seal wraps, folding ends diagonally and folding and pinching corners.
  • Heat 1/2 inch of oil in a frying pan over medium heat. Deep-fry wontons in the hot oil, 2 to 3 minutes each. Drain on paper towels.

Crispy rolled wonton wrappers filled with an Oriental spiced beef and sausage filling, fried to perfection. Delicious dipped in Oriental sweet chile sauce.

1 egg white
1 tablespoon water
1 pound lean ground beef
1 pound bulk hot Italian sausage
1 tablespoon Asian sweet chili sauce, or to taste
1 tablespoon Chinese five-spice powder
1 teaspoon garlic powder
1 green onion, finely chopped
salt and pepper to taste
1 (16 ounce) package wonton wrappers
3 cups vegetable oil for frying
½ cup Asian sweet chili sauce, for dipping

Steps:

  • Beat the egg white and water together in a small bowl; set aside. Lightly mix the ground beef, sausage, 1 tablespoon sweet chile sauce, five-spice powder, garlic powder, green onion, and salt and pepper. Place about 1 teaspoonful of the meat mixture onto a wonton wrapper with one corner facing you. Fold in the left and right corners of the wrapper to slightly overlap the filling, then tightly roll the lower corner up to create a pocket around the filling. Continue rolling until just the tip of the remaining corner is visible; brush the corner with the egg white mixture to seal.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Fry the egg rolls in the hot oil in batches until golden brown, 3 to 5 minutes. Drain on a paper towel-lined plate. Serve with 1/2 cup of sweet chili sauce.

CURRIED BEEF DUMPLINGS



Curried Beef Dumplings image

From Carla Hall's Cooking With Love. Be sure to buy thin wonton wrappers made with an egg-based dough, not the thicker dumpling wrappers made from an eggless flour-based dough.

1 tablespoon minced peeled fresh ginger
1 garlic clove, minced
1 tablespoon curry powder
2 tablespoons cornstarch
1 teaspoon kosher salt
1/2 teaspoon sesame oil
2 large eggs
3/4 lb lean ground sirloin
1 red bell pepper, stemmed, seeded and finely diced
1/4 cup thinly sliced scallion (green onions)
1 tablespoon water, plus more for cooking
inch-diameter wonton wrapper

Steps:

  • In a small bowl, whisk together the ginger, garlic, curry powder, cornstarch, salt, sesame oil, and 1 of the eggs. In a large bowl, combine the beef, bell pepper, and scallions, then stir in the ginger mixture until well combined. Cover and refrigerate for 1 hour.
  • In a clean small bowl, whisk the remaining egg with the water. Lightly brush a thin layer of the egg wash on a wonton wrapper. Use a measuring tablespoon to scoop 1 tablespoon of the beef filling into the center of the wrapper. Hold the filled wrapper in the palm of one hand and pull the sides of the wrapper up around beef with the other hand while slowly spinning the dumpling in your palm. You should be gently squeezing the wrapper around the beef and pushing the beef up so that it's flush with the top of the wrapper; you're not really pressing the filling, just gently shaping it. The beef should be exposed on top and the whole dumpling should be in the shape of a wide cylinder.
  • Place wrapped dumplings on a wax paper- or plastic wrap- lined half sheet pan. Repeat with the remaining wrappers, egg wash, and beef filling. If you don't want to cook them immediately, cover tightly with plastic wrap and freeze for up to 1 month.
  • Heat a large nonstick skillet over medium heat. Add just enough dumplings so that you can space them 1 inch apart in a single layer. Cook until the bottoms are lightly browned, about 2 minutes.
  • Add enough water to come 1/4 inch up the sides of the pan. Cover and cook until the water evaporates, about 2 minutes. Again add enough water to come 1/4 inch up the sides of the pan. Cover and cook until the beef is cooked through, about 2 minutes more. You can tell when the beef is done when the dumpling feels very firm. If you want to be sure, cut one in half to check.

  • Add the ground beef in a large bowl with a smaller egg. Mix until the egg is well absorbed. Penetrate the chicken stock with beef by three batches. Each time after adding the stock, use a chopstick to stir it in one direction until all the liquid is absorbed. Continue stirring for couple of minutes after mixing all of the chicken stock until the beef becomes quite sticky and fluffy. Add ginger, scallion white, light soy sauce, salt, sugar, five spice powder and sesame oil. Combine well and keep stirring for couple of minutes. Set aside for 15 minutes to 30 minutes.
  • To boil the wontons, bring a large pot of water to a boiling and then add wonton to cook 2-3 minutes until they floats on the surface. Then add several leafy vegetables, I use asparagus lettuce leaves this time.

  • Heat the oil over high heat in a large heavy bottomed pot. When the oil is hot, add beef and sear on all sides until it is dark brown. Make sure not to crowd the pan; you will probably need to work in batches. Keep a close eye on the beef as you sear it, you want it to be dark brown but not to burn. If you think it is getting too close to burning remove the pot from the element for a minute before continuing.
  • Remove each piece of beef from the pot when it is dark brown and seared on all sides. Once all pieces are finished remove the pot from the element.
  • Add the coconut milk all at once and stir to remove any brown bits from the bottom of the pan. Add all other coconut beef ingredients and stir well.
