Lamb Burgers With Garlic Spinach image

NOTE: HAVE GRILL PREHEATING WHILE PREPARING PATTIES. A "chopped steak" type burger, served open-face on a bed of wilted spinach and goat cheese. Can be done on outdoor grill or indoor stove-top grill.

1/2 lb fresh spinach (stems removed and leaves rinsed)
3 Tbsp olive oil (plus more for brushing)
1 small red onion, peeled and finely diced
1 1/2 lb ground lamb
2 Tbsp dry red wine
1/2 tsp ground cumin
1/4 tsp ground cinnamon
salt and pepper, to taste
1 clove garlic, peeled and minced
4 slice rustic peasant bread
4 oz goat cheese (chevre), cut into 4 pieces

Steps:

  • 1. Heat a medium skillet over moderately high heat. Add a large handful of spinach and cook, stirring, until the leaves are wilted. Transfer the wilted spinach to a colander and repeat with the remaining leaves. Gently squeeze the spinach dry, coarsely chop and reserve.
  • 2. In the same skillet, heat 1 tablespoon of olive oil. Add the red onion and cook over moderate heat until softened, about 7 minutes. Transfer the onion to a large bowl and let cool.
  • 3. Add the ground lamb to the bowl with the onions and break it up slightly. Add the red wine, cumin, cinnamon, 1/2 teaspoon of salt and 1/2 teaspoon of black pepper and blend well. Gently form the mixture into four 4-inch patties.
  • 4. In the same skillet, heat the remaining 2 tablespoons of olive oil. Add the minced garlic and cook over moderate heat until fragrant, about 40 seconds. Add the wilted spinach and cook, stirring, until hot. Season the spinach with salt and pepper, cover and keep warm.
  • 5. Lightly brush the bread with olive oil and cook on prepared grill, turning once, until lightly browned, about 1 minute per side. Spread the fresh goat cheese on the bread and top with the garlic-spinach mix.
  • 6. Brush the lamb patties with olive oil and season lightly with salt and pepper. Grill over moderately high heat, turning once, until the patties are nicely charred outside and medium-rare within, about 4 minutes per side. Transfer the chopped lamb steaks to the bread, and serve with a fork and knife.

1/3 cup chopped fresh mint
2 teaspoons paprika
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
3 tablespoons olive oil, divided
1 1/3 pounds ground lamb
4 hamburger buns or small ciabatta rolls
1 1/2 cups baby spinach leaves
1 1/3 cups crumbled feta cheese
4 1/4-inch-thick red onion slices
1 1/2 teaspoons balsamic vinegar

Steps:

  • Mix first 4 ingredients and 1 1/2 tablespoons oil in medium bowl; mix in lamb. Shape into four 3/4-inch-thick patties. Cook patties in large nonstick skillet over medium-high heat 4 minutes per side for medium.
  • Meanwhile, preheat broiler. Broil buns until golden, about 2 minutes. Top each bun bottom with burger. Toss spinach, feta, onion, vinegar, and 11/2 tablespoons oil in bowl. Place salad atop burgers. Cover with bun tops, pressing firmly to compact.

LAMB, SPINACH & RICOTTA BURGERS

2 tbsp olive oil , plus 2 tsp
4 small onions , 2 halved and finely sliced, 2 grated
1 tbsp cumin seeds
200g baby spinach leaves
300g lamb mince
3 tbsp ricotta
6 tbsp Greek-style yogurt
½small pack mint leaves , finely chopped
4 seeded buns (or gluten-free alternative), split in half
1-2 large tomatoes , sliced

Steps:

  • Heat 2 tbsp olive oil in a frying pan. Tip in the sliced onions and cumin seeds, plus seasoning. Cook gently for 20 mins until golden and caramelised.
  • Meanwhile, put the spinach in a colander and pour over a kettle or two of boiling water to wilt. Squeeze the spinach as dry as possible, chop roughly and put in a large bowl. Add the mince, grated onion, ricotta and seasoning. Mix thoroughly, then shape into 4 burgers. Heat 2 tsp of oil in a non-stick frying pan and cook the burgers for 8-9 mins each side, or until cooked through.
  • Mix the yogurt, mint and seasoning in a bowl. Spread a little onto each bun, add the tomatoes and burgers, and put the onions on top. Add an extra dollop of yogurt and serve.

½ tsp cumin seeds
2 tsp sunflower oil
200g lean lamb steak, cubed
1 red pepper , deseeded and sliced
1 green chilli , deseeded and sliced
2 tbsp mild curry paste
225g can chopped tomato
160ml can coconut cream
100g bag baby spinach
½ a 20g pack coriander , chopped (about 1 tbsp)

Steps:

  • Dry-fry the cumin seeds for about 20 secs in a wok, then add half the oil and stir-fry the lamb for about 1 min until browned, but not cooked all the way through. Tip onto a plate.
  • Add the rest of the oil to the wok, then stir-fry the pepper and chilli for a couple of mins until softened. Stir in the curry paste, tomatoes and coconut cream with half a can (from the tomatoes) of water, then simmer for about 5 mins until saucy. Add the lamb, spinach and coriander, stir until the spinach has wilted, then serve with basmati rice.

1 tbsp oil
500g lean lamb stewing cubes
1 red onion , sliced into half moons
1 cm piece ginger , peeled and finely chopped
2 garlic cloves , crushed
1 tbsp ground cumin
1 tbsp ground coriander
400g can tomato
200g can chickpeas , washed and drained
1 tsp garam masala
100g spinach , roughly chopped
700g potato , peeled and quartered
1 tbsp korma curry paste (we used Patak's)
100ml thick yogurt

Steps:

  • Heat the oil in a large frying pan, cook the lamb until browned all over for about 10 mins, then remove from the pan. Cook the onion in the same pan until golden brown, about 5 mins. Stir through the ginger, garlic, cumin and coriander, then cook for 2 mins more until you smell the spices. Return the lamb to the pan, pour over the tomatoes, bring to the boil, then leave to simmer over a gentle heat for 11⁄2 hrs until the meat is really tender. Top up with a little boiling water if the sauce becomes too dry. Add in the chickpeas and garam masala, then simmer for 5 mins more. Stir through spinach and cook until wilted slightly then season to taste.
  • Meanwhile, bring a large pan of lightly salted water to the boil and cook the potatoes until softened, about 15 mins. Drain and mash. Stir through the curry paste and yogurt, and serve alongside the curry.

3 garlic cloves, peeled
thumb-sized piece of ginger (about 25g), peeled and roughly chopped
2 green chillies, roughly chopped
1 large onion, roughly chopped
2 tbsp oil for frying
750g lamb shoulder, trimmed and cut into 3cm chunks
2 tsp coriander seeds, toasted and ground
2 tsp cumin seeds, toasted and ground
1 tsp turmeric
2 cardamom pods, squashed
4 large tomatoes, quartered
500ml lamb stock
200g baby spinach, roughly chopped
small pack coriander, roughly chopped
naan breads or rice, to serve

Steps:

  • Put the garlic, ginger, chillies and onion into a small food processor and whizz to a purée adding 1 tbsp water if you need to.
  • Heat 1½ tbsp oil in a large flameproof casserole or sauté pan. Brown the lamb all over in two batches, then lift onto a plate and put to one side.
  • Add the remaining oil and fry the spices in the same pan for 2 mins, adding a splash of water if they start to catch. Then add the onion purée and cook for 2 mins.
  • Add the lamb, tomatoes and stock. Stir, cover and cook for 45 mins.
  • Stir in the spinach then cook for another 45 mins or until the lamb is tender. If the sauce is looking thin, take the lid off for the last 20 mins of cooking to reduce it.
  • Scatter over the coriander. Serve with naan or rice.
