CEVAPI - EASY BALKAN BEEF SAUSAGES
Ready for a Balkan BBQ feast? It's time to make your own super easy beef sausages. These Cevapi are stuffed full of garlic, parsley and paprika for a huge flavour kick. Pair with shopska salad for the ultimate Mediterranean lunch.

- In a large bowl, pop in the minced beef, garlic, parsley, sweet paprika, salt and pepper. Mix by hand until roughly combined.
- Next grab a small dish and mix the water and baking soda together until it dissolves a little bit (it won't mix entirely, this is fine).
- Add the baking soda mixture into the meat mix and massage together for a good 5 minutes until it's all combined.
- Get out a large plate - it's time to make the sausages! Get a small handful of the mixture and first roll it into a ball then into a small sausage shape. Pat each end to flatten and pop it on the plate. The length should be around the width of your hand.
- Set a large grill pan or frying pan on medium heat and drizzle in the olive oil. Once heated, cook the sausages in batches (don't overfill the pan). Let them cook a few minutes each side, until they're browned. Chop one in half to check if they're cooked in the middle. A slight pink is okay for beef sausages.
- Once cooked, we recommend serving with hot with fresh lapinja bread, chopped raw onion and ajvar spread.

KOHLRABI NOODLES WITH BACON AND PARMESAN
These flavorful low-carb kohlrabi noodles topped with bacon, onion, and Parmesan will turn anybody into a kohlrabi lover! The natural sweetness of the kohlrabi marries perfectly with the other ingredients, for a side dish that's a change from the usual.

Steps:
- Cut kohlrabi into thin noodles using a spiralizer.
- Heat a large skillet over medium heat. Brown bacon and onion, until bacon is beginning to crisp and onion is caramelized but not burning, 10 to 12 minutes. Transfer bacon and onion to a small bowl, reserving 1 tablespoon bacon grease in the skillet.
- Add kohlrabi noodles to the skillet and season with salt. Cook noodles over medium heat, stirring occasionally, until they begin to wilt down and soften, 12 to 14 minutes. Stir in butter until melted. Add in bacon and onion mixture and stir in 1/2 the Parmesan cheese.
- Serve immediately topped with remaining cheese and parsley.

Best Korean BBQ. Traditionally galbi is cooked over wood charcoal but can be cooked by grill, oven, or using a non-stick frying pan. Instead of Asian pears, you can use rice wine or kiwis. You can also add green onions, sesame seeds or fresh ginger.

Steps:
- Place the ribs in a large stockpot and cover with cold water. Soak ribs, refrigerated, for 1 hour to pull out any blood. Drain.
- Combine garlic, onion, and Asian pear in a blender and puree. Pour into a large bowl and stir in the soy sauce, brown sugar, honey, sesame oil, and black pepper. Marinate ribs in the soy mixture, covered, overnight.
- Preheat an outdoor grill for high heat, and lightly oil the grate.
- Grill ribs until the meat is tender and the outside is crusty, 5 to 10 minutes per side.
