Steps:
- Take your tofu and cut it into 1/2-inch thick slabs across the short side of the tofu block and set them aside.
- In a shallow, non-reactive bowl, combine your buttermilk and herbs and add the tofu to that bowl and turn it to coat well.
- Let stand 20 minutes in this mixture.
- Meanwhile, mix the cornflakes with the salt and cayenne and place it in a flat, wide dish.
- Heat your olive oil in a large nonstick skillet over medium heat, and coat your tofu slabs in the cornflake mixture, making sure to press the cornflakes gently into the tofu to cover.
- Place the coated tofu slabs in the heated pan and allow them to cook for 4 minutes until golden brown.
- Turn the tofu and cook on the other side 3 minutes, or until golden brown.
- Serve immediately or place on a baking pan in a 200-degree oven to keep warm until ready to serve.

SESAME CRUSTED TOFU STEAKS WITH TERIYAKI SAUCE
Recipe video above. Sesame seeds add excellent flavour and give tofu a crispy crust crust that stays crispy even when doused with Teriyaki Sauce. Great quick and easy recipe to convert tofu haters - so far from bland, we're in a different stratosphere!

- Season tofu: Pat tofu dry with paper towels. Sprinkle with salt and pepper.
- Prepare crust coating: Place flour, egg and sesame in separate bowls (medium shallow bowls or tupperware best).
- Sesame crust: Press tofu into flour, shake off excess. Dip in egg, then let excess drip off before coat in sesame seeds, pressing to adhere all over. Repeat with remaining tofu.
- Crispy garlic: Heat oil in a non stick skillet over medium heat. Add garlic and cook until golden and crisp. Remove and drain on paper towels.
- Cook tofu: Turn heat up to medium-high. Place tofu in skillet and cook for 1 1/2 minutes until the sesame smells nutty and becomes crisp. Turn carefully and cook the other side for 1 1/2 minutes. Then use tongs to prop the tofu steaks up on its sides to sear the edges until crisp - about 30 seconds each side should do it (see video for my technique).
- Drain: Remove tofu to paper towel lined plate.
- Teriyaki Sauce: Lower heat to medium then add Teriyaki Sauce ingredients. Simmer for 1 minute until it reduces to a syrupy consistency, then remove skillet from stove.
- Serve: Place tofu steak on plate. Spoon over Teriyaki Sauce (it clings to sesame, don't worry, crust stays crispy). Sprinkle with garlic and green onion. Devour, then declare, "I LOVE TOFU!!".

CORNMEAL-CRUSTED TOFU

- For a terrific tofu side dish, follow the first three steps in Tofu Rancheros (page 58) to make cornmeal-crusted tofu. Serve with salsa, teriyaki sauce, or ketchup, depending on what will work best with your meal.
CASHEW NUT CRUSTED TOFU

Steps:
- Process bread crumbs and nuts in food processor until fine. Add nutritional yeast flakes, chicken style, parsley, salt and margarine. Process until mixed.
- Spread olive oil on tofu slices, place on a foil or parchment lined baking sheet, and bake at 350 degrees for 15-25 minutes. Cool.
- Dip prepared tofu slices in coconut milk, oil or water and then dip into crumb mixture, coating on both sides.
- Bake at 350*F. degrees for 20-30 minutes, or until browned.
- Serve with tartar sauce and garnish with green onions and sliced almonds.

PANKO AND HERB CRUSTED BAKED TOFU

- Drain tofu well. pre heat oven to 400 degrees.
- cut tofu into 1/4 inch slices.
- in mixing bowl combine Spike seasoning with Panko crumbs.
- Dredge each slice of tofu into Panko mixture , coating both sides.
- place tofu onto lightly oiled baking sheet and bake for 30 minutes at 400 degrees. Flipping over after cooking for 15 minute Serve with steam rice and vegetables.
