CRUNCHY ZUCCHINI STRIPS !
This time of year we are blessed to be having garden fresh veggies!!! Well we can sure make alot of things from our zucchini, this one is easy and yummy. 8/9/12 Picture is from Mr. Food~

Steps:
- 1. Cut each zucchini in half crosswise than cut each half lengthwise into french fry like strips. Place zucchini in a medium bowl and sprinkle with salt: toss to evenly coat.
- 2. Place flour and bread crumbs each in a separate dish. In another shallow dish, whisk together the eggs and milk. Coat each zucchini strip in flour then dip in egg mixture and coat completely with bread crumbs: set aside on a platter.
- 3. In a large skillet, heat oil over medium high heat until hot but not smoking. Fry zucchini strips a few at a time for 3-4 minutes, until golden on all sides, turning frequently. Drain on paper towels and serve immediately.
- 4. Note; If you cook your zucchini strips in a tabletop deep fryer they come out really crisp and golden !
FRIED ZUCCHINI STICKS
Our garden always produces a ton of zucchini in the summer. This is one of our favorite ways to cook it. Serve with ranch dressing for dipping.

Steps:
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Whisk buttermilk and eggs together in a shallow dish.
- Mix flour, bread crumbs, Parmesan cheese, baking powder, and salt together in a separate shallow dish.
- Dip zucchini sticks into the egg mixture; roll in bread crumbs to coat. Dip in the egg mixture again; reroll in bread crumbs.
- Cook breaded zucchini sticks in batches in the hot oil until golden brown, about 3 minutes per batch. Drain on a large plate lined with paper towels.
