4 chicken thighs
2 chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
1 ( 28-ounce) can diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons drained capers
1 1/2 teaspoons dried oregano leaves
1/4 cup coarsely chopped fresh basil leaves

Steps:

  • Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
  • In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.
  • Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.

6 chicken thighs (bone in, skin on, trimmed of excess fat)
Kosher salt and black pepper
Extra virgin olive oil
1 small yellow onion (chopped)
2 celery ribs (chopped)
½ red bell pepper (chopped)
½ green bell pepper (chopped)
8 ounces mushrooms (white or baby bella) (cleaned and sliced)
3 garlic cloves (minced)
1 tsp oregano
3 sprigs fresh thyme
2 tbsp fresh chopped parsley (more for later)
Pinch red pepper flakes
1 cup red wine
28 ounce can crushed tomatoes

Steps:

  • Pat the chicken dry and season with salt and pepper on both sides and underneath the sikn.
  • In a large pan or braiser (with a lid), heat 2 tbsp extra virgin olive oil over medium-high until shimmering but not smoking. Add the chicken, skin side down first. Cook until golden brown, then turn over to brown on the other side (about 8 minutes total). Remove the chicken and set aside on a plate.
  • In the same braiser, add the onions, celery, peppers, mushrooms, and garlic. Cook over medium heat, tossing regularly. Add koserh salt, pepper, oregano, fresh thyme, parsley and red pepper flakes. Allow the vegetables to cook for 5 to 6 minutes or until tender.
  • Add the red wine and cook for a few minutes until the wine has reduced by about 1/2, then add the tomatoes. Cook 5 to 10 minutes over medium heat, stirring occasionally.
  • Now add the chicken pieces back to the pan. Reduce the heat to medium-low. Cover and allow the chicken to cook for 30 minutes or until cooked through.
  • Garnish with parsley.

1/2 cup all-purpose flour
2 tablespoons olive oil
1 small onion, finely chopped
1/2 pound sliced cremini mushrooms
4 cloves garlic, minced
1 red bell pepper, thinly sliced
1/2 cup dry white wine
1 teaspoon finely chopped fresh oregano
1 teaspoon finely chopped fresh rosemary
One 28-ounce can whole tomatoes, cut up with kitchen shears
3/4 cup halved black olives
2 tablespoons drained capers
1/4 cup torn fresh basil leaves

Steps:

  • Sprinkle the chicken thighs with salt and pepper, then toss them in a bowl with the flour to lightly coat.
  • Heat the olive oil in a large, wide pot over medium-high heat until shimmering. Add the thighs and cook, turning once, until golden brown on both sides, about 3 minutes per side. Remove the thighs to a plate.
  • Add the onion and mushrooms to the pot and cook, stirring, until the onion is softened and the mushrooms are lightly golden, about 5 minutes. Add the garlic and bell peppers and cook, stirring, until the peppers are just starting to soften, about 1 minute. Add the wine and bring to a boil, then cook, scraping up any brown bits, until reduced by about half. Add the oregano and rosemary. Add the tomatoes and their juice and bring to a simmer. Add the olives and capers. Return the chicken to the pot, nestling in the sauce. Reduce the heat to keep the sauce at a gentle simmer and cook until the chicken is cooked through, about 25 minutes.
  • Sprinkle with the basil. Serve immediately.

4 boneless skinless chicken breast halves (1-1/2 pounds), cut into 1-inch cubes
1/2 teaspoon salt, divided
1/4 teaspoon pepper
1 tablespoon vegetable oil
1 cup finely chopped onion

1/2 cup diced green pepper
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained

Steps:

  • Sprinkle chicken with 1/4 teaspoon salt and pepper. In a large skillet over medium heat, brown chicken in oil; remove and set aside. In the same skillet, saute onion, celery, green pepper and garlic until tender. Stir in tomatoes, water, paprika, remaining 1/4 teaspoon salt, cayenne pepper and bay leaf; bring to a boil. 8 skin-on, bone-in chicken thighs (about 2 1/2 pounds)
Kosher salt and freshly ground pepper

3 slices bacon, chopped
1/4 medium onion
4 ounces cremini mushrooms (about 2 cups)
1 teaspoon fresh rosemary leaves
1 tablespoon extra-virgin olive oil
1 28-ounce can whole San Marzano tomatoes
1/4 cup dry red wine
1/3 cup pitted nioise or kalamata olives, plus 1 tablespoon brine from the jar

Steps:

  • Position a rack in the upper third of the oven and preheat to 475 degrees F. Pat the chicken dry and season with salt and pepper. Place skin-side up in a shallow baking pan and roast until the skin is golden brown and the chicken is cooked through, about 35 minutes.
  • Meanwhile, pulse the bacon, onion, mushrooms and rosemary in a food processor until finely chopped. Heat the olive oil in a large skillet over medium-high heat. Add the vegetable mixture and 1/4 teaspoon salt; cover and cook, stirring occasionally, until softened, about 8 minutes.
  • Puree the tomatoes in the food processor. Add the wine to the skillet and boil, uncovered, until almost completely reduced, 2 to 3 minutes. Add the pureed tomatoes and return to a boil. 3 - boneless skinless chicken breasts
1 medium white onion
1 medium green bell pepper
1 medium red or yellow bell pepper
2 - ribs celery
1 tablespoon(s) homemade creole seasoning (https://www.justapinch.com/recipes/main-course/other-main-course/sallyes-homemade-creole-seasoning.html
1 can(s) hunts pasta sauce with garlic & herbs
1 can(s) petite diced tomatoes (14-16 ounce size)
1 teaspoon(s) each salt & ground black pepper
1 large bay leaf
2 tablespoon(s) olive oil
16 ounce(s) penne or other pasta
- water (see instructions for amount)

Steps:

  • Place the following in food processor and pulse until diced: onion, peeled & quartered green and red or yellow pepper, seeded and deveined cut into quarters celery, cut into 2" lengths
  • Cut chicken into bite size chunks and rub well with salt and pepper Set aside
  • Heat oil on medium high heat in cast iron or other heavy large skillet. If you don't have a large skillet, use a heavy dutch oven. When oil is hot, place onions, peppers, and celery in oil. Cook for about 3 minutes, stirring frequently to avoid burning
  • Add chicken cubes to vegetables and continue cooking, stirring frequently until chicken is lightly browned on all sides
  • Add pasta sauce and tomatoes to mixture in skillet. Also add 1 pasta can of water and 1 tomato can of water Then add creole seasoning, bay leaf and mix well. Turn heat down to simmer
  • Cook at barely simmering for 20 minutes, stirring occasionally. Taste and add more creole seasoning if not spicy enough
  • Continue cooking for 15 more minutes; add more water if needed During last 15 minutes, cook pasta according to package directions except for 3 minutes less
  • Drain pasta, add to chicken and mix well. Turn off heat and allow to stand for 5 minutes Pasta will continue to cook and absorb some of the sauce.

1 cup purchased marinara sauce
2/3 cup canned low-salt chicken broth
1/2 cup dry Marsala
3 tablespoons drained capers
Grated Parmesan cheese (optional)

Steps:

  • Season chicken with salt and pepper. Place flour in plastic bag. Add chicken pieces and toss to coat completely.
  • Heat 3 tablespoons olive oil in heavy large skillet over medium-high heat. Add chicken pieces to skillet and sauté until brown, about 4 minutes per side. Transfer chicken to plate. Pour fat from skillet. Add remaining 3 tablespoons olive oil to skillet. Add halved mushrooms, diced green bell peppers, chopped onion, chopped garlic and oregano and sauté until onion is tender, about 10 minutes. Mix in marinara sauce, chicken broth, Marsala and capers. Return chicken pieces to skillet, spooning sauce over. Bring sauce to boil. Reduce heat to medium-low. Cover skillet and simmer until chicken is tender, about 20 minutes.
  • Using tongs, transfer chicken to large platter. Boil sauce until slightly thickened, about 3 minutes; spoon off fat. Spoon sauce over chicken. Serve, passing Parmesan separately, if desired.

1 teaspoon(s) sea salt
1 teaspoon(s) black pepper
2 tablespoon(s) homemade creole seasoning (link in comments below) or a commercial brand
3 - ribs celery
1 medium green bell pepper
1 medium onion
3 clove(s) garlic
1 medium jalapeno papper
1 large can stewed tomatoes
1 dash(es) franks hot sauce (or your favorite brand)
1 cup(s) mushrooms, sliced
1 small can hunts tomato sauce
2 cup(s) water (approximately)

Steps:

  • You can use a commercial brand of creole seasoning such as Tony Chachere or Zatarain's
  • Pound salt, pepper and creole seasoning into chicken breasts on both sides. Set aside
  • Cut jalapeno pepper in half and remove seeds and veins Peel onion and cut into quarters Cut celery ribs into about 1" pieces Cut bell pepper into quarters, remove seeds and veins Place all of these veggies into food processor and pulse until coarsely chopped (do not overprocess)
  • Place chicken breasts into crockpot and spread veggies over the top. Add stewed tomatoes, tomato sauce, hot sauce, sliced mushrooms and 2 cups water (or enough to cover chicken and veggies.
  • Place lid on crockpot and Cook on low for 6-8 hours.
  • This is delicious served on a bed of wild rice or mashed potatoes.

1/2 pound sliced fresh mushrooms

Steps:

  • Dust chicken with flour. Season with salt and pepper. In a large skillet, brown chicken on all sides in oil and butter over medium-high heat. Remove chicken to platter. , In the same skillet, cook and stir the onion, celery, pepper and mushrooms for 5 minutes. Stir in the tomatoes, tomato sauce, tomato paste, wine, herbs, garlic and sugar. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., Return chicken to skillet. Cover and simmer for 45-60 minutes or until chicken is tender. Serve over pasta and sprinkle with Parmesan cheese. Freeze option: Cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally.
