Homemade Ciabatta Garlic Bread Recipe image

Easy garlic bread recipe with my no-fail technique for getting a perfectly crunchy outside and chewy inside! This lighter garlic bread uses olive oil instead of butter, and loads of herbs for bold flavor. I use a 1-pound ciabatta loaf, but any rustic Italian bread or French baguette would work well. For vegan garlic bread, omit the cheese or substitute it with nutritional yeast.

1 pound loaf ciabatta bread
1/2 cup Italian parsley
1 teaspoon dried rosemary
1 teaspoon dried oregano
Kosher salt and pepper
4-5 cloves garlic, (peeled)
1/3 cup extra virgin olive oil
½ cup grated or shredded parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the garlic, rosemary, oregano, and parsley to a small food processor and blend. Drizzle in the olive oil from the top opening of the food processor while everything is blending. Season with kosher salt and black pepper.
  • Place the bread flat on a cutting board. Place your non-dominant hand on top of the bread. Take a knife and slice the bread in half horizontally.
  • Spoon the herb and garlic oil equally onto both halves of the bread and spread it all over. Put the bread halves back together.
  • Line a large sheet pan with foil. Place the bread flat on the pan and cover with another piece of foil. Crimp the foil sides to close tightly.
  • Bake the foil-wrapped bread on the center rack of the heated oven for 10 minutes.
  • Remove the bread from the oven and uncover it. Separate the two halves of bread and place them side by side on the sheet pan.
  • Sprinkle grated parmesan onto the bread.
  • Return the sheet pan with the bread to the oven for another 10 minutes, until the bread crisps with golden edges and some of the cheese is slightly golden.
  • Cut into 1-inch slices and serve immediately.

6 large garlic cloves, chopped
1/4 cup chopped flat-leaf parsley
1/4 cup chopped fresh oregano leaves
1/2 teaspoon kosher salt
Freshly ground black pepper
1/2 cup good olive oil
1 loaf ciabatta bread
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the garlic in the bowl of a food processor and process until minced. Add the parsley, oregano, salt and pepper and pulse twice.
  • Heat the olive oil in a medium saute pan and add the garlic mixture. Remove the pan from the heat.
  • Slice the ciabatta bread in half horizontally, and spread the butter on 1 half. Spread the garlic mixture on the other half of the bread, and put the halves together. Wrap the bread in aluminum foil.
  • Place the bread in the oven and bake for 5 minutes. Open the foil, and continue baking for an additional 5 minutes.

6 ounces King Arthur unbleached all-purpose flour (1 1/4 cups)
1/4 teaspoon active dry yeast
4 ounces cool water (75 degrees to 78 degrees; 1/2 cup)
8 ounces King Arthur unbleached all-purpose flour (1 1/2 cups plus 2 tablespoons), plus more for dusting
1/2 teaspoon active dry yeast
6 ounces cool water (75 degrees to 78 degrees; 3/4 cup)
1 1/2 teaspoons fine sea salt
2 tablespoons extra-virgin olive oil
Vegetable-oil cooking spray

Steps:

  • Make the starter: Using your hands, combine flour, yeast, and water in a bowl. Gently work to form a ball. Cover with plastic wrap, and let stand at cool room temperature until it has risen slightly and is bubbling, 12 to 15 hours.
  • Make the dough: Whisk together flour and yeast in a large bowl. Add water and starter, and stir with a rubber spatula until mixture comes together in a slightly sticky, loosely formed ball of dough. Cover with plastic wrap, and let rest for 20 minutes.
  • Gently turn dough onto an unfloured work surface. Sprinkle with salt, and drizzle with oil. To incorporate oil into bread, use the heel of one hand to stretch half of the dough away from you at the same time your other hand is stretching the other half toward you. Fold in half, and repeat until oil has been completely incorporated (dough will no longer have a sheen to it and there should be no oil on work surface).
  • To knead: Gather dough, lifting it above work surface. Hold one end of dough close to you while you cast the other end in front of you, onto the surface. Pull the end of dough in your hands toward you, stretching it gently, then fold the dough in half on top of itself. Repeat: Lift, cast, stretch, and fold. Knead the dough until it is smooth, supple, and elastic, 8 to 10 minutes. Use a dough scraper to clean the surface as needed, adding the scraps to the dough. (Dough will be very sticky, but avoid adding more flour until the end, when it may be necessary to add a very small amount. Add the flour to your fingers, not the dough.) Form into a ball.
  • Place dough in a lightly oiled bowl. Cover with oiled plastic wrap. Let rise at cool room temperature for 45 minutes.
  • Gently turn dough onto a lightly floured surface. (Do not punch dough to deflate.) Fold into thirds, as you would a business letter. Then fold it in half crosswise. Return to bowl, cover, and let rise at cool room temperature until it has almost doubled, at least 75 minutes.
  • Gently turn dough onto a lightly floured surface. Using a dough scraper or a knife, divide dough into 2 equal portions. Cover with oiled plastic wrap, and let rest for 20 minutes.
  • On a lightly floured surface, spread each portion of dough into a rectangle that's roughly 6 by 4 inches. (Be careful not to deflate bubbles.) Fold dough into thirds again, as you would a business letter, pressing seams with lightly floured fingers. Place dough, seam side down, on a generously floured linen towel or a baking sheet lined with floured parchment. Cover loosely with oiled plastic wrap, and let rise at cool room temperature until it has almost doubled and a floured finger pressed into side leaves a slight indentation, 40 to 50 minutes.
  • Place a skillet on oven rack adjusted to lowest position and a baking stone on middle oven rack. Preheat oven to 500 degrees. If using a linen towel, gently transfer dough to a parchment-lined baking sheet. Just before baking, stretch each portion into a 10-by-4-inch rectangle. Immediately dimple entire surface with lightly floured fingers. Pour 1/2 cup hot water into skillet in oven. Slide bread and parchment onto baking stone.
  • Immediately reduce oven to 450 degrees. Bake, rotating once, until bread is golden brown, sounds hollow when bottom is thumped, and interior registers 205 degrees on an instant-read thermometer, 15 to 20 minutes. Let cool on wire racks. Bread is best the day you make it.

6 large garlic cloves, chopped
1/4 cup fresh parsley
2 tablespoons fresh oregano leaves
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 cup good quality olive oil
1 large loaf ciabatta
2 tablespoons unsalted butter, at room temperature

Steps:

  • Preheat oven to 350 degrees.
  • Place the first five ingredients in a food processor and chop until finely minced. In a medium saute pan heat the olive oil over low heat and then add the garlic mixture. Cook on low for 3-5 minutes until garlic is tender - do not let the garlic brown. Remove from heat and set aside.
  • Cut the bread in half, horizontally and spoon the oil-garlic mixture on the bottom half. Butter the top half of bread and then place the two halves together again. Wrap in tin foil and put on sheet pan.
  • Bake at 350 for 5 minutes. Carefully remove the tin foil and discard and bake for an additional 5 minutes. slice crosswise and serve warm.

  • Heat the grill to high. Beat together the mayonnaise, butter and garlic cloves until smooth. Chop basil, stir through and season with salt and pepper. Put the halves of the ciabatta, sliced lengthways, on a baking tray and spread with the butter. Sprinkle with grated Parmesan, then grill for 2-3 mins.
