Recipe video above. Pasta in a pink tomato cream sauce! You'll love how creamy this sauce is, how there's plenty of it and yet you don't need gallons of cream. Slurp-worthy as it is, or use it as a base for add ins of your choice - suggestions in the recipe notes.

300g/10 oz spaghetti
2 tbsp / 30g unsalted butter
3 garlic cloves (, minced)
½ onion (, finely chopped)
1 cup / 250 ml tomato passata (/ tomato puree (Note 1))
3/4 cup / 185 ml heavy / thickened cream ((Note 2 for subs))
1/2 cup / 125 ml milk (, low fat)
3/4 cup / 30g parmesan (, finely freshly grated (Note 3))
1 tsp dried basil, or other herb of choice
1 tsp chicken or vegetable stock powder (, or 1 bouillon cube, crumbled (Note 4))
Finely ground pepper + salt

Steps:

  • Cook pasta in a big pot of boiling water for time per packet MINUS 2 minutes. Just before draining, scoop out a mugful of pasta cooking water.
  • Melt butter in large skillet over medium heat. Add garlic and onion, cook until translucent - about 2 minutes.
  • Add remaining ingredients. Stir until parmesan is melted. Turn heat up slightly and simmer for 2 minutes. Adjust salt to taste.
  • Add pasta. Toss for 1 to 2 minutes or until sauce thickens and is clinging to pasta instead of swimming on the base of the skillet (video shows this well). Use reserved pasta cooking water if required to thin the sauce out if it gets too thick.
  • Serve immediately, garnished with more parmesan and parsley if desired.

After being unable to find a suitable creamy tomato pasta sauce recipe, I came up with my own, and by golly it's good. Easy to make too :)

1 (400 g) can chopped tomatoes with juice
1/2 cup cream
1/4 cup parmesan cheese
1 garlic clove
100 g shredded bacon
1 tablespoon olive oil
500 g fettuccine pasta

Steps:

  • 1. Cook fettucine as directed
  • 2. Crush and chop garlic clove finely.
  • 3. Heat oil in a frying pan on medium-high, add garlic and bacon and cook until they start to brown.
  • 4. Add tin of tomatoes to the frying pan and stir.
  • 5. Reduce heat to medium and simmer for 15 minutes.
  • 6. Reduce to low heat and add cream.
  • 7. Stir until cream is fully mixed inches.
  • 8. Stir parmesan cheeses into the sauce.
  • 9. Add fettucine and stir until heated through and covered with sauce.
  • 10. Serve, sprinkling a little parmesan cheese over the top of each serve if you wish.

This is not spicy! For a main dish I have added the Imitation crabmeat to this before and served over linguini. You can add any kind of seafood or even chicken and serve over pasta. Or for a side dish you can serve without meat and mix the sauce over the pasta. Try adding a variety of veggies! Possibilites are plenty!

3 tablespoons butter
3 tablespoons olive oil
1/2 cup diced onion
3 teaspoons garlic, minced
1/2 teaspoon savory
3/4 teaspoon rosemary
1 bay leaf
3/4-1 teaspoon blackened fish seasoning
salt and pepper
1/4 cup white wine
1 can tomato sauce (1 cup)
2 cups half-and-half
1/2 cup parmesan cheese
1/2-1 cup frozen green pea (cooked and drained)

Steps:

  • Saute onions and garlic and seasonings (savory, rosemary, salt, pepper, bay leaf, Blackened Redfish Seas) in butter and olive oil.
  • Add wine and cook 1 minute.
  • Add tomato sauce and half and half; simmer for 5-7 mintes, stirring frequently.
  • Add peas and Parmesan, simmer until cheese is melted, 3-5 minutes.
  • Serve tossed with your favorite pasta.
