Creamy poblano queso dip, studded with flavorful roasted poblano peppers, is pleasantly spicy but not fiery. Enjoy it as a dip or a topping for tacos or nachos.

2 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
½ cup diced yellow onion ( (about one small onion))
3 poblano peppers, (roasted and diced (see note))
1 clove garlic, minced
3 tablespoons all-purpose flour
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
2 cups 2% or whole milk
8 ounces sharp cheddar cheese, (shredded)
4 ounces cream cheese, (softened)
2 tablespoons minced fresh cilantro
Tortilla chips for serving

Steps:

  • Roast the poblano peppers, if you haven't already done that.
  • In a medium sized skillet, heat butter and oil over medium heat. When butter is melted, add onions and cook for 3-4 minutes or until translucent. Add peppers and garlic and cook, stirring, for 2 minutes or until fragrant.
  • Add flour, chili powder, and cumin, and cook for 2-3 minutes while stirring constantly.
  • Slowly add milk while stirring constantly. Add chili powder and cumin. Cook for 4-5 minutes, stirring frequently, until thickened.
  • Reduce heat to low and stir in cheddar and cream cheese until melted. Stir in cilantro.
  • Serve warm with chips.

A recipe for the easiest roasted poblano cream sauce, using only 4 ingredients, with big roasted poblano flavor. Perfect for tacos or any Mexican dish, and even as a dip.

1 pound poblano peppers
4 cloves garlic
¼ cup Mexican crema or sour cream
1 teaspoon salt

Steps:

  • Slice the poblano peppers in half lengthwise and scoop out the insides. Remove the stems. Set them onto a baking sheet and bake them at 350 degrees 20-30 minutes, or until the skins char and bubble. You can also broil them about 12-15 minutes to the same effect.
  • Remove from heat and place them into a paper bag or plastic baggie. The heat will steam them and loosen the skins.
  • Peel away the skins and place the roasted peppers into a food processor with the remaining ingredients.
  • Process until nice and smooth.
  • Adjust for salt and serve as desired.

2 poblano peppers (halved length-wise)
1 medium sweet onion (coarsely chopped)
5 medium garlic cloves (divided)
2 tablespoons olive oil
1 cup sour cream
Salt & pepper to taste

Steps:

  • Preheat oven to 400°
  • Set aside 1 garlic clove. Place poblano peppers, onion, and the remaining garlic cloves on a large baking sheet.
  • Brush the peppers with 1 tablespoon olive oil, and toss onions and garlic in the remaining tablespoon.
  • Place in the oven to roast for 20-25 minutes, until all vegetables are tender and cooked through.
  • Once the roasted vegetables are cooled down enough to touch, place all in a food processor, along with the reserved fresh garlic clove.
  • Pulse a few times to combine.
  • Add sour cream and salt and pepper to taste. Process until fully combined.
  • Serve dip warm or cold. It's delicious warm with or on tacos or taquitos, and excellent cold as a tasty guac alternative with chips.

I came up with recipe to give my sister something that was close to the green sauce they serve at CasaOle after she developed an allergy to her favorite food...avocado. This is a flexible recipe and can be adjusted easily to your own taste. I LOVE cilantro so i put a lot...some don't like it so you can omit or use parsley instead. Enjoy! This is the first recipe Ive ever posted, so im a bit nervous. I welcome your feedback

5-6 large poblanos- whole
2 tablespoon(s) vegetable oil
1 teaspoon(s) salt
1 bunch(es) cilantro, fresh
1 - jalapenos, fresh whole (optional for your desired heat level)
1/2 - limes, juiced
1 1/2 cup(s) sour cream
1 teaspoon(s) garlic crushed
- salt and pepper to taste
1/4 cup(s) water, as needed

Steps:

  • Preheat oven to 400. Rub poblano and jalapenos with oil and sprinkle with the salt. Roast in oven 30-40 min until very soft and skin is blistered & peeling away from flesh (but not black). Allow to cool so they can be handled and remove stem, seeds and any skin that is loose. ( This will be pureed later so if some skin remains, its ok. LINE YOUR COOKIE SHEET WITH FOIL TO MAKE IT MUCH EASIER TO CLEAN AFTERWARDS.
  • In blender, put all the peppers and the water a little bit at a time (until the mixture is easy to blend)and puree. Add all the remaining ingedients and puree til smooth. Add salt and pepper to taste. Serve with tortilla chips or chunks of french bread to dip.
  • More or less sour cream can be added to suit your taste. My sister prefers it a lighter color and adds more sour cream, but i prefer it a little darker and use a bit less.

Number Of Ingredients 8

4 whole poblano peppers
12 ounces cream cheese
1 lb Velveeta cheese
1 bunch green onion
1 bunch cilantro
3 cups fresh tomatoes
2 whole serrano peppers
1 teaspoon lime juice

Steps:

  • Roast, peel and dice Poblano peppers.
  • In a stock pot, combine cream cheese and velvetta on a low heat.
  • Stir occasionally until completely melted and smooth.
  • Chop green onions and tomatoes.
  • Small dice Serrano peppers, remove seeds.
  • Thoroughly clean and chop cilantro (removing sprigs from the main stem).
  • Combine all veggies together and add lime juice.
  • When cheese is melted and smooth, stir in all veggies.
  • Simmer until hot throughout.
