SHREDDED HAM AND CHICKEN IN MUSTARD SAUCE

2 cups cooked chicken, cut into matchstick-size shreds
1 1/2 cups cooked ham, cut into matchstick-size shreds
2 cups shredded carrots
1 cup shredded celery
2 cups fresh bean sprouts, rinsed lightly and drained
1 tablespoon mustard powder
2 tablespoons hot water
1/2 cup plum or duck sauce
3 tablespoons clear rice vinegar
2 tablespoons sesame oil
1 tablespoon soy sauce
1 teaspoon salt
1 tablesspoon sugar
18 steamed spring roll wrappers or Mandarin pancakes

Steps:

  • Arrange the shredded chicken, ham, carrots, celery and bean sprouts in separate concentric circles or any decorative pattern on a large platter.
  • Prepare the mustard sauce by blending the powdered mustard and hot water to a smooth paste. Cover and let sit 10 minutes to bring out the mustard's flavor. Add the remaining ingredients and mix to a smooth sauce. Transfer it to a decorative serving dish. Before serving, add the sauce to the salad and toss lightly to coat. Spoon some of the chicken and ham mixture into a steamed spring roll wrapper or a Mandarin pancake, roll up and eat. The salad may also be served without the pancakes by pouring the sauce on each serving.

Creamy Honey Mustard Chicken or Ham Casserole image

Yummy comfort food and super easy to put together! Mix up using just one bowl. Uses frozen hash browns, cubed chicken or ham (or a combination of both), and gets a little tang from honey mustard. The honey mustard is very subtle in this recipe, so sometimes I like to add a little more than what the recipe calls for.

2 (10 3/4 ounce) cans cream of chicken soup
3/4 cup mayonnaise
1/2 cup milk
1/3 cup honey mustard
1 (26 ounce) package frozen shredded hash browns
4 cups cubed cooked chicken or 4 cups cooked ham
1 (4 ounce) can mushroom stems and pieces (optional)

Steps:

  • In a large bowl, combine the soups, mayonnaise, milk and honey mustard.
  • Stir in the hash browns, chicken or ham and mushrooms. Transfer mixture to a greased 13x9x2 baking dish.
  • Cover and bake at 350 degrees for 45-50 minutes.
  • Uncover and bake 15-20 minutes longer or until bubbly.
  • Turn on the broiler for 2-3 minutes to brown the top if desired.
