BANANA COFFEE CAKE
A delicious banana coffee cake made with ripe mashed bananas and a crisp, crumbly, streusel topping!

Steps:
- Preheat oven to 350F and lightly grease and flour a 9x13 baking pan. Set aside.
- Combine butter and sugar in the bowl of a stand mixer (or in a large bowl and use an electric mixer). Beat until well-combined, then stir in mashed bananas.
- Add eggs, stirring well after each addition, and then add sour cream and vanilla extract and stir well.
- In a separate, medium-sized bowl, whisk together your flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to wet, stirring until completely combined (be sure to scrape down the sides and bottom of the bowl). I prefer to do this with a spatula to avoid over-mixing the batter.
- Pour batter evenly into prepared 9x13 pan. Prepare Streusel.

CRAZY MOIST BANANA COFFEE CAKE
My husband loves bananas and I wanted to make him a banana bread or cake. I have recipes for both and ended up taking ingredients from both to make this crazy moist cake loaded w/ mashed bananas. It's so good, I think I ended up eating most of it.!

- 1. Heat oven to 325. Lightly spray a 10-cup bundt pan w/ cooking spray. In small bowl mix pecans, brown sugar, cinnamon and nutmeg. Set aside.
- 2. In large bowl beat bananas, cake mix, pudding mix, oil, eggs and vanilla until combined. Sprinkle 1/2 of the cinnamon-nut mix into bottom of pan evenly.
- 3. Pour 1/2 of the batter over the cinnamon mix. Sprinkle remaining cinnamon-nut mix over batter. Pour remaining batter over cinnamon mix. Using a butter knife, swirl the batter. bake 45-55 mins. ( my oven it took 48 mins.) Let cool. Microwave the frosting for just a few seconds to make it drizzle consistency. Drizzle frosting over the cake. You may only need 1/2 the can of frosting. Slice and serve.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Sift flour, baking powder, and baking soda together in a large bowl. Mix brown sugar and cinnamon together in a small bowl until well combined.
- Combine sugar and butter in a large mixing bowl; beat with an electric mixer until creamy. Add banana and vanilla extract; mix until smooth. Mix in beaten eggs. Add flour mixture alternately with sour cream.
- Pour 1/2 of the batter into the prepared baking pan, sprinkle with 1/2 of the brown sugar mixture, and 1/2 of the chocolate chips; repeat layers once more.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 50 minutes.

- In a large bowl, beat the cream cheese, butter and sugar until blended. Add eggs, one at a time, beating well after each addition. Add the bananas and vanilla. Combine flour, baking powder and baking soda; gradually add to the creamed mixture. Combine topping ingredients; add half to batter. , Transfer to a greased 13x9-in. baking pan. Sprinkle with the remaining topping. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
