A simple and easy teriyaki salmon recipe that will be on repeat during grilling season.

1/2 cup brown sugar
3 garlic cloves (minced)
1 tsp ginger (minced)
1/2 tsp red pepper flakes
1 cup low sodium soy sauce
2 tbsp rice wine (sake)
2 tbsp olive oil
1/4 cup green onion (chopped)
2 lb king salmon fillets
2 tsp corn starch

Steps:

  • In a bowl, combine brown sugar, garlic, ginger, soy sauce, red pepper flakes, and rice wine. Reserve 1/2 cup and set aside into a small saucepan.
  • In the bowl with the larger amount of the marinade add olive oil and chopped green onion.
  • Place the salmon fillets in a large zip-lock bag and pour the marinade into the bag. Close tightly and refrigerate for at least 1 hour.
  • Mix 2 tsp corn starch with 1 tsp water. Add the dissolved corn starch to the reserved 1/2 cup of the soy sauce mixture. cook on medium high heat until it begins to thicken into a glaze (about 10 minutes).
  • Fire up the grill on medium heat and spray generously with nonstick spray. Cook the marinated salmon fillets about 6 minutes on each side. Cook time may vary depending on the thickness of your salmon fillets.
  • Once the salmon is cooked through completely, remove from the grill and brush the glaze on top. Serve hot.

½ cup teriyaki sauce
½ cup apple juice
2 tablespoons brown sugar, or more to taste
2 tablespoons balsamic vinegar
½ teaspoon freshly cracked black pepper
3 cloves garlic, minced
2 (6 ounce) fillets salmon

Steps:

  • Whisk teriyaki sauce, apple juice, brown sugar, vinegar, pepper, and garlic together in a small bowl.
  • Place salmon fillets in a glass baking dish. Pour marinade over top, cover, and refrigerate for 4 to 6 hours.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove salmon fillets from the marinade and shake off excess. Pour marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and simmer until reduced, about 5 minutes.
  • At the same time, grill salmon fillets on the preheated grill until fish flakes easily with a fork, 3 to 4 minutes per side.
  • Serve fillets with reduced marinade drizzled over top.

3 lbs fresh salmon fillets (skin removed)
2/3 cup soy sauce
2/3 cup brown sugar, packed (use only brown sugar)
2/3 cup water
2 tablespoons Worcestershire sauce
3/4 cup vegetable oil
1 -2 teaspoon grated fresh ginger
2 green onions (chopped into large pieces)
5 -6 fresh garlic cloves (sliced in half or use as much as desired)
1 1/2 teaspoons lemon pepper (more for seasoning)

Steps:

  • In a bowl mix together together soy sauce, brown sugar, water, Worcestershire sauce, oil, ginger and lemon pepper; whisk until no sugar granules remain (this might take a couple of minutes) add in garlic halves and green onion.
  • Wash the salmon under cold water then pat dry using paper towels.
  • Place the salmon into a long deep glass dish (or use a large resealable plastic freeze bag) then pour the marinade over; turn salmon to coat in the marinade.
  • Refrigerate for 3-6 hours (turning occasionally).
  • Set grill to medium heat, then grease the grill glates.
  • Place the salmon on the grill, then discard marinade.
  • Season with salt and more lemon pepper if desired.
  • Grill for 6-8 minutes per side or until the fish flakes easily (do not overcook!.

3/4 cup reduced-sodium teriyaki sauce
1/2 cup maple syrup
4 salmon fillets (6 ounces each)

Steps:

  • In a small bowl, whisk teriyaki sauce and syrup. Pour 1 cup marinade into a large resealable plastic bag. Add salmon; seal bag and turn to coat. Refrigerate 15 minutes. 1 cup soy sauce
3 tablespoons brown sugar
1 tablespoon mustard powder

Steps:

  • In a bowl mix/whisk together soy sauce, brown sugar and mustard powder.
  • Place the salmon steaks in a glass dish (I use an 8x8-inch glass baking dish).
  • Pour the marinade over the salmon.
  • Cover with plastic wrap, and refrigerate for minimum 1-1/2 hours, turning the steaks occasionally.

  • Set up a charcoal grill for direct heat over three-quarters of the grill or heat three-quarters of the burners of a gas grill on medium-high. Keep the remaining quarter of the grill unheated. (Alternatively, heat a large skillet or grill pan on a stove-top over medium-high heat.)
  • Put the sake, soy sauce and mirin in a heavy-duty, small saucepan. Put the saucepan on the hot part of the grill and bring the mixture to a boil. Wearing an oven mitt, move the saucepan to the part of the grill that will keep the mixture at a steady simmer, either over the unheated part of the grill or between the heated and unheated parts. If working on a stove-top, bring the mixture to a boil over high heat, then reduce the heat to maintain a simmer. In either setup, simmer until syrupy, about 10 minutes.
  • While the sauce simmers, rub the salmon all over with 1 tablespoon olive oil, sprinkle with salt and place flesh-side down on the hot part of the grill. Toss the broccoli rabe with the remaining 1 tablespoon olive oil, sprinkle with salt and arrange on the hot grill grate in a single layer. Cook everything together, turning the broccoli rabe once, until the salmon releases easily from the grill grate and the broccoli rabe is charred and tender, about 5 minutes. Transfer the broccoli rabe to serving plates and carefully flip the salmon. Brush some teriyaki sauce on the salmon and continue grilling, brushing on more sauce once more, until the fish is almost cooked through, 3 to 5 minutes longer. A thin-bladed knife or metal cake tester should slide through the thickest part of the fish with little resistance.
  • Transfer the salmon to the plates with the broccoli rabe. Drizzle the teriyaki sauce all over, sprinkle with togarashi and sesame seeds, and serve with lemon wedges.
