Make this delicious, beautiful and very simple stovetop dessert well in advance or right before serving. You can get fine results from frozen cherries (they come pitted and unsweetened in sealed plastic bags), if fresh are unavailable. No need to defrost before using.

4 cups pitted cherries
1 1/2 tablespoons cornstarch
3 to 4 tablespoons sugar
1/4 cup lemon juice
1/2 teaspoon grated lemon rind
3/4 teaspoon almond extract
Optional: 1/2 cup blanched, slivered almonds
Toppings: whipped cream or whipped ricotta cheese or plain yogurt with a few blanched almonds folded in

Steps:

  • 1) Place cherries in a heavy medium-sized saucepan, and cook over medium heat, covered, for 10 minutes.
  • 2) Meanwhile, combine cornstarch and sugar in a small bowl. Add lemon juice and whisk until smooth. Stir this into the hot cherries, and cook over medium heat, stirring frequently, until thick (5 to 8 minutes).
  • 3) Remove from heat and stir in lemon rind, almond extract and slivered almonds. Serve hot, warm, room, temperature, or cold, top with whipped cream, whipped ricotta or yogurt.

KRINGLE

3/4 cup butter
1 package dry yeast
1/4 cup lukewarm water
1/4 cup lukewarm milk
1/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon lemon extract
1 egg
2 cups sifted all-purpose flour
1 cup brown sugar
1/3 cup butter
Pinch salt
Pinch cinnamon
1 to 2 egg whites
Fruit, nuts, raisins or jam, of choice

Steps:

  • Soften butter with a potato masher or something similar. Spread the butter on waxed paper to an 8 by 16-inch rectangle. Chill.
  • Dissolve yeast in the warm water. Add milk, sugar, salt, lemon extract, and egg and mix well. Add flour and mix smooth by hand. A nice dough should be formed Wrap with plastic wrap and chill.
  • Roll the dough on well-floured board to an 8 by 12-inch rectangle. Divide the prepared butter layer into 2 equal parts. Place 1 piece of the butter on 2/3 of the dough. Fold the uncovered third of dough over the middle third (on top 1/2 of the butter layer), then fold the remaining third over the top. Chill.
  • Roll dough again to an 8 by 12-inch rectangle. Place the remaining piece of chilled butter on 2/3 of the dough. Fold in the same method as the first piece of butter.
  • Gently roll dough to an 8 by 16-inch rectangle being careful not to break the layering of butter. Fold like above in thirds. This make 24 layers of butter. Chill.
  • Cut the dough into 2 equal pieces. Lightly and patiently roll 1 piece at a time, until piece is about 6 by 20 inches.
  • To prepare filling mix ingredient until smooth. Spread center third of dough with butterscotch filling, then add fruit, nuts, raisins or jam. Fold 1 of the long edges to the middle, moisten other edge and fold over top to cover filling. Seal well.
  • Put kringle on lightly greased baking sheet and form into oval shape, pressing ends of kringle together to form a continuous oval. Flatten entire oval with hands. Cover kringle for 1 hour at room temperature.
  • Preheat the oven to 350 degrees F.
  • Bake for about 20 to 25 minutes, until golden brown color. Cool, then ice with mixture of powder sugar and water.
  • Please note that the best quality kringle require patience. This process is most successful when spread out over three days. Day 1, roll in first piece of butter. Day 2, roll in second piece of butter and additional fold. Day 3, create your kringle or other fine Danish pastries. A quality Danish pastry should be light, tender, flaky, and full of flavor. With patience and pride this recipe will yield just that.

8 ounces cream cheese, at room temperature
1/3 cup sugar
2 extra-large egg yolks, at room temperature
2 tablespoons ricotta cheese
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1 tablespoon grated lemon zest (2 lemons)
2 sheets (1 box) frozen puff pastry, defrosted
1 egg beaten with 1 tablespoon water, for egg wash

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  • Place the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment and cream them together on low speed until smooth. With the mixer still on low, add the egg yolks, ricotta, vanilla, salt, and lemon zest and mix until just combined. Don't whip!
  • Unfold 1 sheet of puff pastry onto a lightly floured board and roll it slightly with a floured rolling pin until it's a 10 by 10-inch square. Cut the sheet into quarters with a sharp knife. Place a heaping tablespoon of cheese filling into the middle of each of the 4 squares. Brush the border of each pastry with egg wash and fold 2 opposite corners to the center, brushing and overlapping the corners of each pastry so they firmly stick together. Brush the top of the pastries with egg wash. Place the pastries on the prepared sheet pan. Repeat with the second sheet of puff pastry and refrigerate the filled Danish for 15 minutes.
  • Bake the pastries for about 20 minutes, rotating the pan once during baking, until puffed and brown. Serve warm.

GIANT CINNAMON-CHEESE DANISH

1 can (17.5 oz) Pillsbury® Grands!® refrigerated cinnamon rolls with icing
1 package (8 oz) cream cheese, softened
1/2 cup sugar
2 teaspoons sour cream
1 teaspoon lemon juice
1 teaspoon vanilla

Steps:

  • Heat oven to 350 degrees F. Lightly grease 9-inch glass pie plate with shortening, or spray with CRISCO® Original No-Stick Cooking Spray. Separate dough into 5 rolls; set icing aside. Unroll 1 roll into long strip of dough; reroll loosely and place in center of pie plate. Unroll second roll; loosely wrap around first roll, cinnamon side in. Replace any cinnamon that falls off. Repeat with remaining rolls, coiling dough in pie plate into spiral shape.
  • In small bowl, beat remaining ingredients except icing with electric mixer on medium speed until smooth. Spoon cream cheese mixture into decorating bag with tip or gallon-size resealable food-storage plastic bag with 1/2-inch hole cut in bottom corner. With tip or corner of bag about halfway down into rolls, pipe mixture between strips of dough, starting at center and working to edge of pan, using all of mixture.
  • Bake 25 to 35 minutes or until center is thoroughly baked and edges are deep golden brown. Cool 5 minutes. Meanwhile, remove cover from icing; microwave on Medium (50%) 10 to 15 seconds or until thin enough to drizzle.
  • Drizzle icing over warm coffee cake. Cut into wedges. Serve warm.

1 (8 ounce) package Pillsbury Crescent Recipe Creations refrigerated flaky dough sheet, not sure of the size of the package
4 ounces fat free cream cheese, room temperature
1 cup dark sweet cherry, frozen, thawed
1/4 cup oats (regular oats not instant)
2 tablespoons Splenda granular
1 tablespoon light vanilla soymilk (or skim milk)
1/4 teaspoon almond extract
1 tablespoon marshmallow creme
1 tablespoon Cool Whip Free, thawed
1/2 tablespoon Splenda granular
1 teaspoon powdered sugar
1 teaspoon cornstarch
1 drop vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • To make the icing, combine Splenda, powdered sugar, and cornstarch in a small microwave-safe bowl. Add 1/2 tablespoons cold water and the vanilla extract, and mix until ingredients have dissolved. Add Marshmallow Creme and microwave for 5 seconds, or until creme is soft enough to fold into mixture. Stir until smooth. Add Cool Whip and stir again, until evenly combined. Refrigerate icing until you're ready to ice the Danish.
  • In a medium bowl, combine cream cheese, oats, Splenda, soymilk (or skim milk), and almond extract, and stir until thoroughly mixed. Fold in cherries and set aside. This is your filling.
  • Spray a large baking sheet with nonstick spray. Lay out your dough on the sheet and (using a rolling pin, a can, or your hands) lightly roll it out into a long rectangle of even thickness. Arrange baking sheet in front of you so that the short sides are on the left and right and the long sides are on the top and bottom. Spoon cherry filling lengthwise across the middle third of the dough, leaving 1-inch borders on the left and right of the filling.
  • Along the top third of the dough, cut slits down from the top of the dough toward the filling, stopping about 1/2 inch away from the filling -- space slits about 1 inch apart from each other. Repeat on the bottom part of the rectangle, cutting upward toward the filling. This will create 1-inch-wide strips of dough on both the top and bottom of the filling.
  • Starting at one side, alternate folding the 1-inch strips from the top and the bottom over the filling, covering filling completely and creating a criss-crossed, "braided" appearance. After all the strips have been folded, fold the short sides of the dough in toward the filling, so filling cannot escape, and pat firmly to seal.
  • Bake in the oven for about 20 minutes, until pastry is crispy and golden brown. Allow to cool for at least 15 minutes.
  • Just before serving, drizzle entire Danish with icing. Cut into 9 slices and indulge! (P.S. Refrigerate leftovers.).
