VANILLA BERRY YOGURT PARFAITS



Vanilla Berry Yogurt Parfaits image

5 ounces blueberries
5 ounces blackberries
5 ounces strawberries, chopped
3 tablespoons honey
1 teaspoon vanilla extract
2 cups plain Greek yogurt
3 tablespoons honey
1 vanilla bean, split and "caviar" scraped out

Steps:

  • For the fruit: Combine the blueberries, blackberries, strawberries, honey and vanilla extract in a bowl and stir. Let sit for at least 10 minutes.
  • For the yogurt: Mix up the yogurt, honey and vanilla in a bowl.
  • Layer some of the syrupy fruit on the bottom of 4 small mason jars, then top with a layer of yogurt. Repeat the layers. Serve immediately or chill until ready to serve.

CRANBERRY ORANGE PARFAIT

2 cups plain yogurt
3 tablespoons orange marmalade
3/4 cup heavy cream
1 teaspoon vanilla extract
1 tablespoon sugar
1 (10-ounce) can whole cranberry sauce
2 tablespoons fresh orange juice
2 teaspoons orange zest
2 tablespoons chopped pecans, toasted

Steps:

  • Add the yogurt to a coffee filter or doubled paper towels lined in a fine sieve. Let drain over a bowl for at least 1 hour or up to overnight in the refrigerator. Discard the accumulated liquid on the bottom of the bowl. Add the drained yogurt to the bowl and stir in the marmalade. In a separate bowl, whip the cream with a beater until it begins to thicken. Add the vanilla and sugar and continue to whip until soft peaks just begin to form. Add the cranberry sauce to a medium bowl. Stir half of the cream into the cranberry sauce along with the orange juice and orange zest and mix gently. Add the other half of the cream to the bowl with the yogurt mixture. Layer the yogurt and the cranberry mixtures in 4 parfait glasses or wine glasses, and top with a sprinkle of chopped pecans. Chill before serving.

2 1/2 cups rolled oats
1/3 cup pumpkin seeds
1/3 cup chopped pecans, almonds or walnuts
1/3 cup pumpkin puree
1/3 cup light brown muscovado sugar
1/4 cup maple syrup
1 tablespoon canola oil
2 teaspoons pumpkin pie spice
1/2 teaspoon vanilla extract
1/2 cup dried cranberries, optional
Zest of 1 orange, grated
1 cup orange juice
1 cup sugar
One 12-ounce bag fresh cranberries
2 1/4 cups Greek yogurt
1/4 cup grade B pure maple syrup
1/4 cup Pumpkin Spice Syrup, recipe follows, optional
1/3 cup pumpkin puree
1 tablespoon pumpkin pie spice
1 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon vanilla extract

Steps:

  • Special equipment: 4 parfait glasses
  • For the pumpkin granola: Preheat the oven to 325 degrees F. Line a half sheet pan with parchment paper and lightly spray with nonstick spray; set aside.
  • Put the oats, seeds and nuts in a large bowl. Combine the pumpkin puree, sugar, maple syrup, oil and pumpkin pie spice in a medium saucepan and bring to a boil over medium heat and let it cook for 1 minute longer, whisking occasionally. Remove from the heat and stir in the vanilla extract.
  • Pour the wet ingredients over the oat mixture and stir until the oats are fully coated. The mixture will be pretty wet. Evenly spread the mixture, in a single layer, onto the prepared baking sheet. Bake for 20 minutes, then stir and bake for an additional 15-20 minutes or until the granola is golden brown and crisp. Cool on a baking rack. Transfer to a bowl and stir in the cranberries, if using. Store leftovers in an airtight container in a cool, dark, place, for up to 1 week.
  • For the orange cranberry jam: Combine the orange juice and zest, and the sugar in a medium saucepan and bring to a boil over high heat. Cook until the sugar has melted. Add the cranberries, reduce the heat so the mixture simmers, and cook until the cranberries pop and the mixture thickens slightly (it will thicken much more as it cools), about 10 minutes. Transfer to a bowl and let cool. Makes about 2 cups; store leftovers in the refrigerator, covered, for 2 weeks.
  • For the maple yogurt: Whisk together the yogurt and 2 tablespoons maple syrup until smooth; taste, and add more maple syrup if you'd like it sweeter. Chill.
  • To assemble the parfaits: Dollop 1/4 cup maple yogurt in the bottoms of 4 parfait glasses. Follow that with about 1/4 cup of pumpkin granola, another 1/4 cup of yogurt, about 2 tablespoons of orange cranberry jam, then a little more yogurt and a few more tablespoons of granola. Drizzle over some Pumpkin Spice Syrup, if using. Serve.
  • Combine the pumpkin puree and pumpkin pie spice in a small saucepan over medium heat and cook until the mixture thickens slightly and the spices become fragrant, about 3 minutes.
  • Combine 2 cups cold water and the granulated and brown sugars in a medium saucepan, bring to a boil over high heat and cook, whisking occasionally, until the mixture thickens and reduces slightly, about 5 minutes.
  • Reduce the heat to low, whisk in the spiced pumpkin puree and cook, stirring occasionally for 10 minutes. Do not allow the mixture to boil after you add the pumpkin or the syrup will become cloudy (even after straining.) Remove from the heat and let the mixture cool for 10 minutes.
  • Place a mesh strainer over a medium bowl and line the strainer with several layers of cheesecloth. Pour the mixture through the strainer and let it strain slowly into the bowl. Add the vanilla extract to the syrup and transfer to a container with a tight fitting lid. The syrup will last 1 month stored in the refrigerator. Makes about 1 1/2 cups; leftovers can be refrigerated for 1 week.

1 1/2 cups cranberries (about 6 ounces)
1/3 cup water
3 tablespoons sugar
1 1/2 cups chunky-style applesauce
4 to 5 kiwis, peeled, cut into 1/4-inch-thick rounds
4 to 6 tangerines, peeled, segmented, seeded if desired
3 cups 1/2-inch cubes fresh pineapple (from 1/2 large pineapple)
3 cups vanilla yogurt
1/4 teaspoon ground cinnamon
Tangerine peel strips (optional)

Steps:

  • Combine cranberries, 1/3 cup water and sugar in heavy small saucepan. Bring to boil over medium-high heat, stirring until sugar dissolves. Boil until berries are soft, about 3 minutes; transfer to medium bowl and cool. Transfer 2 tablespoons cranberry mixture to small bowl and reserve for topping. Mix applesauce into remaining cranberry mixture. Cover and refrigerate until cold, at least 1 hour.
  • Arrange enough kiwi rounds in single layer on bottom of 8x41/2-inch trifle bowl or glass soufflé dish to cover. Stand remaining kiwis around bottom edge of bowl, pressing to adhere to sides. Spoon cranberry mixture over kiwis on bottom. Top with layer of tangerine segments, then pineapple cubes. Stir yogurt in medium bowl until smooth; mix in cinnamon. Spread yogurt evenly over fruit. Spoon reserved 2 tablespoons cranberry mixture atop center of yogurt; garnish with tangerine strips, if desired. Cover; chill at least 1 hour and up to 1 day.

Remove from heat; stir in vanilla. Pour over oat mixture; stir to coat., Spread evenly into a greased 15x10x1-in. baking pan. Bake until crisp and dark golden brown, 35-40 minutes, stirring every 10 minutes. Cool completely on a wire rack. Stir in dried fruit., In a small bowl, combine berries. Layer 1/4 cup of the berries, yogurt and granola into 8 parfait glasses. Repeat layers. Top with remaining berries.

I found a recipe for lime parfaits online. This recipe has gotten me a lot of praise. I was racking my brain for a Thanksgiving dessert and tried several different ways to create a variation of the lime parfait. I tried pomegranate and cranberry juice first, both 100%. They were too wet. So, I had a light in my head go off and thought I should try cranberry sauce instead. It worked so well! I even added it to the real whipped cream I whipped up and it was delicious.

3 tablespoons unsalted butter
3 tablespoons sugar
½ cup graham cracker crumbs
1 (14 ounce) can low-fat sweetened condensed milk
½ cup cranberry sauce
1 cup cold whipping cream

Steps:

  • Melt the butter in a skillet over medium heat. Stir in the sugar and cook until bubbling, about 1 minute. Add the graham cracker crumbs; stir until the color deepens, about 3 minutes. Turn out onto a plate to cool.
  • Combine the condensed milk and cranberry sauce in a mixing bowl, blend together with a hand mixer until the mixture thickens. Place the whipping cream in a separate bowl and beat with an electric mixer until firm peaks form; fold into the cranberry mixture.

1 (14.5 ounce) can whole berry cranberry sauce
1 (14 ounce) can jellied cranberry sauce
½ (14.4 ounce) package graham crackers
8 ounces heavy whipping cream
2 teaspoons white sugar
½ teaspoon vanilla extract

Steps:

  • Chill a large metal bowl in the refrigerator or freezer, about 15 minutes.
  • Mix whole berry cranberry sauce and jellied cranberry sauce together in a bowl.
  • Place graham crackers in a large resealable plastic bag and crush with a rolling pin into crumbs.
  • Pour heavy cream into the chilled bowl and whip with an electric mixer on high speed until soft peaks form, about 2 minutes. Add sugar and vanilla extract; whip until medium peaks form, about 2 minutes more.
