TURKEY SANDWICH
Easy way to turn Thanksgiving leftovers into a quick and tasty meal.

Steps:
- Lightly toast the bread.
- Spread 2 of the slices with mayonnaise.
- Top with cheese, turkey, lettuce, and tomatoes (optional). Season with salt & pepper if desired.
- Spread remaining slices of bread with cranberry sauce and top sandwich.
- Cut in half and serve.

TURKEY SANDWICHES WITH CRANBERRY SAUCE

Steps:
- Preheat the oven broiler.
- Cut the bread into four pieces, and split lengthwise almost all the way through for four sandwiches. Spread margarine on the inside of each piece. Place on a baking sheet, cut side up.
- Toast bread under preheated broiler until lightly browned, 1 to 2 minutes. Remove pan from the oven.
- Layer 4 pieces of bread with 2 slices each of the turkey, cheese, and bacon. Remove the remaining 4 slices of bread from the baking sheet and reserve for sandwich tops. Cool bread slightly, and spread mayonnaise onto the cut side of each of the 4 top slices.
- Place the bread with turkey and cheese under the broiler just until the cheese melts, about 1 minute. Remove from the broiler, and spread 1 tablespoon cranberry sauce over each sandwich. Layer with the tomatoes and lettuce. Place a top bread slice over each half, and serve.

TURKEY CRANBERRY SANDWICH
I think that my three favorite things about Thanksgiving are family time, the meal and LEFTOVERS! This is the perfect sandwich to refuel after shopping. I really liked the cream cheese addition. It really complements the turkey and cranberry.

Steps:
- 1. Lightly toast both slices of bread. Spread cream cheese on both halves while bread is still hot, so the cream cheese melts justly slightly. Add mayonnaise, if you wish.
- 2. Spread cranberry sauce on both slices of toasted bread with cranberry sauce (or cranberry relish).
- 3. Top one toasted slice with cooked turkey meat and season with salt and pepper. Then top with Romaine lettuce leaf. Place the other slice of bread over the Romaine lettuce. Cut the sandwich in half diagonally.
- 4. Serve with re-heated leftover Thanksgiving stuffing or re-heated mashed potatoes and gravy.
CHEDDAR, TURKEY AND CRANBERRY ON SOURDOUGH
Steps:
- Spread 1 1/2 tablespoons of cranberry sauce on each of 4 slices of bread. Add 2 ounces of cheddar onto each piece, followed by two ounces of roasted turkey.
- Cover each prepared bread slice and evenly butter the top of each sandwich. Place each sandwich butter side down in a frying pan over medium heat. While the first side is grilling, butter the second side of bread. Cook until golden and crusty, about 3-4 minutes. Carefully turn and cook until second side is golden, about 2-3 minutes more.
GRILLED TURKEY, CHEDDAR & CRANBERRY ON SOURDOUGH
This isn't really a "recipe" per se, just a great way to use up some of the Thanksgiving leftovers! This IS good grilled, but I also do this non-grilled on sourdough bread or a croissant with mayo and lettuce. Yummm!!

- Spread 1 1/2 tablespoons of cranberry sauce on each of 4 slices of bread. Add 2 ounces of cheddar onto each piece, followed by two ounces of roasted turkey. Be sure to mash down the cranberry sauce and the cheese.

TURKEY CRANBERRY SANDWICH
JUST AWESOME!!! This sandwich is similar to the one on the menu at Applebee's Restaurant and is absolutely delicious! Bread of your choice can be used, but it must be grilled to get the true flavor and the goodness of melted cheese.

- Chop red onion very fine and mix with whole cranberry sauce.
- Smear mayonnaise on one side of sliced bread. Smear cranberry-onion mixture on the other slice of bread.
- Layer turkey slices, bacon and provolone on one side of bread and top with other slice of bread.
- Using a skillet or grill pan, grill sandwich with butter and remove from heat when cheese has melted. Cut sandwich into 2 halves and serve.
