OVEN-BAKED GROUPER RECIPE - EASY CRISPY PANKO COATED FILLETS
Crispy Oven Baked Grouper checks all of the boxes; it's quick, it's easy, it's foolproof, and every last bite of the fish is pure crunchy, flaky, deliciousness!

Steps:
- Preheat the oven to 300 degrees F.
- Melt butter in a small skillet over medium heat. Add garlic and thyme and cook for about 30 seconds. Stir in panko and pepper and cook until the panko is golden brown, which should take about 6 minutes. Remove from the heat and set aside.
- Combine mayonnaise and lemon zest in a small bowl.
- Use a paper towel to pat dry the fish fillets and season to taste with salt and pepper.
- Set a wire baking rack inside a rimmed baking sheet and spray with non-stick cooking spray.
- Use a pastry brush and coat the tops and sides of the fish fillets evenly with a thin layer of the mayonnaise mixture.
- Dredge the fillets in the panko breadcrumb mixture and make sure the top and sides are evenly coated. Do not coat the bottom.
- Place the fillet, panko side up, on the baking rack and repeat with the remaining fillets.
- Bake the fillets for about 30-35 minutes, or until a meat thermometer inserted in the thickest part of the fillet registers 140 degrees and the fish flakes easily when a fork is inserted.

CORNMEAL-CRUSTED GROUPER
Steps:
- Preheat the oven to 500°F. Position an oven rack in the upper third of the oven.
- Combine the breadcrumbs, cornmeal, cayenne, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper in a large sealable plastic bag, and shake to mix. Place the beaten eggs in a shallow dish.
- Season the fish with salt and pepper on both sides. Working with one fillet at a time, place the fish in the bag and shake to coat well with crumbs. Dip the fish into the eggs, then shake in the crumbs again to coat. Transfer the fish to a plate.
- In a large, heavy-bottomed, ovenproof skillet (preferably cast iron), heat 3 tablespoons of the oil over high heat until hot, but not smoking. Fry the fillets until the undersides are golden brown, about 1 minute. Turn, add the remaining 3 tablespoons oil, and cook 1 minute more. Put the skillet in the upper third of the oven and bake until the fish are just cooked through, about 5 minutes. Remove from the oven and serve immediately with lemon wedges.
CORNMEAL-CRUSTED FLOUNDER WITH TARTAR SAUCE

- Make tartar sauce:
- Pulse all sauce ingredients in a blender until parsley is finely chopped.
- Cook fish:
- Stir together cornmeal, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon cayenne in a shallow bowl. Stir together flour, 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper and 1/4 teaspoon cayenne in another shallow bowl. Lightly beat together eggs, milk, and remaining 1/4 teaspoon salt in a third shallow bowl.
- Pat fish dry and dip fillets, 1 at a time, in flour, shaking off excess, then dip in egg mixture, letting excess drip off, and dredge in cornmeal until evenly coated. Arrange fish in 1 layer on a sheet of wax paper.
- Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then fry fillets, 2 at a time, turning over once, until golden and just cooked through, 3 to 4 minutes per batch. Transfer to a paper-towel-lined plate to drain. Serve fish with sauce.
GROUPER WITH TOMATO AND BASIL
Steps:
- Working off heat, put 1 tablespoon oil in a 10-inch nonstick skillet and add fish, turning to coat with oil on both sides. Arrange fish skinned sides down and sprinkle with salt and pepper.
- Toss together tomato, garlic (if using), basil, remaining tablespoon oil, and salt and pepper to taste in a small bowl, then mound on top of fish. Cover skillet with a tight-fitting lid and cook fish over moderately high heat until just cooked through, about 8 minutes.
PESTO-CRUSTED GROUPER
These grouper fillets are quick to make, and take minimal ingredients. Enough to serve 2 people unless you're super hungry.

Steps:
- Season grouper fillet with salt and pepper. Mix bread crumbs and Greek seasoning in a small bowl. Rub pesto over the grouper and top with bread crumbs.
- Melt butter in a skillet over medium heat. Place fillet in the skillet and cook for 3 to 4 minutes. Carefully turn over and cook until fillet is cooked through, 3 to 4 minutes. Turn over once more, being careful to leave the panko breading in place. Split fillet in half for 2 servings.
